This White Chocolate Silk Pie recipe is a creamy white chocolate version of a classic chocolate French silk pie. Dress it up with peppermint or cranberries for the holidays or eat it as is. It's heavenly either way!

1 baked 9-inch pie shell
12 tablespoons butter (1½ sticks, softened)
1 cup granulated sugar
4 ounces white baking chocolate (melted and cooled)
1½ teaspoons vanilla
3 large eggs
Whipped cream

Steps:

  • In a large mixing bowl, cream together butter and sugar until light and fluffy.
  • Add vanilla and chocolate, and beat again on high until combined.
  • Add one egg at a time, beating on high for 3 minutes after adding each egg.
  • Continue whisking the mixture until it's completely smooth and creamy.
  • Scoop chocolate filling into the pie shell, and smooth out.
  • Refrigerate for at least 2 hours. Top with whipped cream (I use Dream Whip because it's yummy and easy, and unlike canned whipped cream, it won't turn to liquid on you)

1 ½ cups graham cracker crumbs
¼ cup white sugar
½ cup butter, melted
3 cups whole milk
1 cup white sugar
2 eggs
3 tablespoons cornstarch
⅓ cup unsweetened cocoa powder
⅛ teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Combine graham cracker crumbs and sugar in a 9-inch glass pie dish. Add melted butter and mix together. Press mixture firmly across pie dish and up sides. Set aside.
  • Combine milk, sugar, eggs, cornstarch, cocoa powder, and salt in a bowl and mix using an electric mixer until well combined. Pour into a saucepan and bring to a boil over medium-high heat, stirring constantly. Boil for 1 minute. Remove from heat and stir in vanilla extract.
  • Pour filling into crust and immediately cover with plastic wrap. Cool on counter to room temperature. Refrigerate 8 hours to overnight.

This recipe was found in Parade magazine (with the local newspaper) this past weekend. Preparation time does not include the 2 hours needed for the pie to chill.

4 ounces white chocolate, finely chopped
8 ounces cream cheese, room temperature
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/3 cup sour cream
1/2 cup heavy cream, chilled
2 bananas, sliced
1 (9 inch) graham cracker crust
1 cup dark chocolate, grated (optional)

Steps:

  • In a bowl set over a pot of lightly simmering water, warm & partially melt the chocolate, then remove from heat & stir to melt completely.
  • In another bowl, beat together the cream cheese, sugar & vanilla until smooth.
  • Add the chocolate to this mixture & combine thoroughly, before adding the sour cream & blending completely.
  • In a 3rd mixing bowl, whip the heavy cream until firm, then gently fold it into the chocolate filling.
  • Place the banana slices evenly over the crust, then carefully pour the chocolate filling over the bananas, before chilling the pie for at least 2 hours.
  • Although it's optional, the pie looks great when sprinkled with grated or shaved dark chocolate before serving.

1 (8 ounce) container frozen whipped topping, thawed
1 9-inch graham cracker crust
1/3 cup toffee pieces (or other topping of your choice)

Steps:

  • Melt the chocolate chips slowly in microwave, stirring often until smooth.
  • Stir in cream cheese until smooth.
  • Fold in whipped topping.
  • Pour into crust.
  • Cover and chill until set (about 4-5 hours).
  • Sprinkle with topping.
