East 2 ingredient cookie crust made with shortbread cookies and melted butter.

10.6 Ounces Walkers Shortbread Cookies (about 2 3/4 cups once crushed)
1 tablespoon sugar
6 tablespoons (85g) unsalted butter (melted)

Steps:

  • Place cookies in a large gallon size ziploc bag. Seal all but 1" of the bag (so air can escape) and roll with a rolling pin until the cookies are a fine crumb. You can also use a food processor, if you have one.
  • Place cookie crumbs, sugar, and butter in a large bowl and stir with a fork until the mixture looks like wet sand. Place in a 9" pie plate and press until it's very compact.
  • Chill crust for 1 hour before filling.
  • Note: The crust is perfect no-bake: it's crunchy and slices just fine. If you really want to bake it, you can do so for 8 minutes at 350° and then fill as desired.

Oatmeal, peanut butter, and chocolate no bake cookies.

3 tablespoons unsweetened cocoa powder
2 cups white sugar
½ cup milk
½ cup butter
3 cups quick cooking oats
½ cup crunchy peanut butter
1 tablespoon vanilla extract

Steps:

  • Heat cocoa, sugar, milk and butter over medium heat. Boil these verrrrry slowly (they will turn out better) when they reach the boiling point boil them for no longer than 90-120 seconds.
  • Stir together oats, peanut butter and vanilla with a big wooden spoon or Kitchen Aid. Pour the hot mix over the oatmeal mix and drop on wax paper.

This yummy treat came from my mother's babysitter in the 40's. I grew up eating it and make it any time I need something yummy in a hurry, or when it's too hot or too late to bake up a batch of real cookies -or when I'd rather have this than a cookie! ;)

1 slice white bread (flavorful bread such as buttermilk or brioche is better)
1 teaspoon butter
2 teaspoons sugar

Steps:

  • Pretty self explanatory: spread butter on bread, sprinkle with sugar.
  • You can press the sugar into the butter if you like, to keep it from being messy (for kids). Adjust the ingredients to your taste, more butter is always better! The variations are endless, you can mimic many cookie flavors. I also added my peanut butter and chocolate version to 'zaar.
