This is my husbands recipe they taste almost like a chocolate covered cherry, really good and they don't last long so make a double batch.

Number Of Ingredients 8

2 cups sugar
1/4 cup butter
3 cups quick-cooking oats
1/2 cup milk
1/3 cup cocoa
1 teaspoon vanilla
1/2 cup peanut butter
1 (10 ounce) jar maraschino cherries, DRAINED AND CHOPPED

Steps:

  • Mix together in large saucepan: Sugar, Milk, Butter and Cocoa.
  • Heat on high until boiling. Hard boil exactly one (1) minute.
  • Remove from heat and in the same saucepan add peanut butter, MIX TILL DISSOLVED, ADD CHERRIES THEN VANILLA AND OATS.
  • Do not let cool off. Spoon immediately onto wax paper and let cool.
  • Eat and enjoy!

Made entirely on the stovetop, these no-bake chocolate chip oatmeal cookies get a rich flavor boost from peanut butter, coconut, and creamy Nutella.

2 c. firmly packed light brown sugar
1 stick butter
1/2 c. whole milk
2 tbsp. unsweetened cocoa powder
2 1/2 c. old-fashioned oats
1/2 c. sweetened flaked coconut, plus more for garnish
1/2 c. creamy peanut butter
1/2 c. chocolate-hazelnut spread (such as Nutella)
1 tbsp. vanilla extract
1 tsp. salt

Steps:

  • Line two rimmed baking sheets with parchment or wax paper, and set aside.
  • Bring the sugar, butter, milk, and cocoa powder to a rolling boil in a medium saucepan over medium-high heat. Let boil for 1 to 2 minutes, stirring often, until mixture measures 230° on an instant read thermometer. Remove from the heat.
  • Stir in the oats, coconut, peanut butter, chocolate-hazelnut spread, vanilla, and salt until everything is combined.
  • Working quickly before the mixture sets up, drop tablespoons of the mixture onto the prepared pans, flattening slightly, if you like. Immediately sprinkle with more coconut; press gently to help the coconut stick to the cookies. Let stand at room temperature until firm, about 30 minutes. Store in an airtight container in a cool, dry place for up to 1 week-if they last that long!

2 cups sugar
1/2 cup butter, cubed
6 tablespoons 2% milk
3 tablespoons baking cocoa
1 cup peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups quick-cooking oats
1 jar (10 ounces) maraschino cherries, well drained and finely chopped

Steps:

  • In a large saucepan, combine sugar, butter, milk and cocoa. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and extracts until blended. Stir in oats and cherries. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.

I've been experimenting with several versions of this recipe and I think I've found the best variation. The others I've tried are either too juicy and you have to keep them cool to keep their shape, or they're just too crumbly and don't stay together well. This combination has (in MY opinion) the best consistency.

1 cup sugar
1/2 cup whole milk
3 tablespoons cocoa powder
1/2 cup butter (I prefer salted)
1 teaspoon vanilla extract
2 cups rolled oats
1 cup flaked coconut
1 cup mini marshmallows

Steps:

  • Add milk and butter to a medium or large sauce pan and heat over medium heat until butter is melted.
  • Add sugar and cocoa powder and stir until well blended.
  • Turn heat to high and boil for 3 minutes.
  • Take off of heat and add marshmallows.
  • Once marshmallows are well blended, add vanilla.
  • Add coconut and oats and mix well.
