1 cup pitted dates
½ cup almonds
½ cup pecans
3 tablespoons cocoa powder
1 tablespoon chia seeds
1 pinch salt
2 tablespoons coconut oil
2 tablespoons unsweetened cocoa powder
1 teaspoon honey

Steps:

  • Place dates in a bowl and cover with hot water until fully submerged. Let dates soak until softened, about 10 minutes. Transfer to a colander to drain.
  • Line a baking pan with parchment paper.
  • Combine almonds, pecans, cocoa powder, and chia seeds in the bowl of a food processor; pulse until blended. Add dates and salt and process until smooth. Transfer to the prepared baking pan.
  • Mix together coconut oil, cocoa powder, and honey for the icing. Spread on top of brownies.

1/2 cup semisweet chocolate chips
1/4 cup plus 1/2 teaspoon evaporated milk, divided
3/4 cup crushed vanilla wafers (about 20 wafers)
1/2 cup miniature marshmallows
1/4 cup confectioners' sugar
1/4 cup chopped pecans or walnuts

Steps:

  • In a microwave-safe bowl, melt chocolate chips with 1/4 cup milk; stir until smooth. Transfer 2 tablespoons to another bowl; stir in remaining milk and set aside for topping. , In a small bowl, combine the crushed vanilla wafers, marshmallows, confectioners' sugar and pecans; beat in remaining chocolate mixture. Press into a 5-3/4x3x2-in. loaf pan coated with cooking spray. Spread with reserved chocolate mixture. Cover and refrigerate for 1-2 hours or until firm. Cut into bars.

12 ounces semi-sweet chocolate chips
1 cup evaporated milk
2 teaspoons evaporated milk
3 cups vanilla wafer crumbs
2 cups miniature marshmallows
1 cup chopped pecans
1 cup sifted powdered sugar
1/2 teaspoon salt

Steps:

  • Combine chocolate chips and 1 cup evaporated milk in a heavy saucepan; cook over low heat until chips melt, stirring occasionally.
  • Set chocolate mixture aside.
  • Combine wafer crumbs and next 4 ingredients in a large bowl; stir until blended.
  • Set 1/2 cup chocolate mixture aside.
  • Stir remaining chocolate mixture into crumb mixture.
  • Press into a well greased 9-inch square pan.
  • Combine reserved 1/2 cup chocolate mixture and 2 teaspoons evaporated milk; spread over crumb mixture.
  • Chill.
  • Cut into squares.

300 ml sweetened condensed milk
1/4 cup unsweetened chocolate (I used 2 oz of unsweetened chocolate bars instead)
1 teaspoon vanilla extract
2 cups chocolate cookie crumbs (I used the Oreo baking crumbs)
2 tablespoons chocolate cookie crumbs (I used the Oreo baking crumbs)
1/4 cup candy sprinkles or 1/4 cup nuts

Steps:

  • 1 Grease 8-inch square baking pan or line with foil.
  • 2 In a medium saucepan over low heat, combine the sweetened milk and chocolate; cook and stir just until boiling. Reduce heat; cook and stir for 2-3 minutes or until mixture thickens.
  • 3 Remove from heat and stir in vanilla.
  • 4 Stir in 2 cups of cookie crumbs. Spread evenly in prepared pan. Sprinkle with remaining cookie crumbs and sprinkles or nuts; press down gently with a spatula.
  • 5 Cover and chill 4 hours or until firm. Cut into squares. Store covered in refrigerator.
