This kid-pleasing confection has a sweet secret: chocolate-marshmallow icing inside. Cereal bits give it a festive trim. Prepare the Basic Crisp-Rice Treats, then follow the molding instructions below to make the cake.

Vegetable-oil cooking spray
Crispy Cake Basic Recipe
Chocolate-Marshmallow Frosting
Flower- and ball-shaped cereal pieces

Steps:

  • Coat two 8-by-2-inch round cake pans with cooking spray. Prepare crisp-rice mixture; before pouring into pan, reserve 2 tablespoons for patching cake, and set aside, covered. Divide remaining crisp-rice mixture among prepared cake pans. Press into pans with greased fingers to level. Let cool until set, at least 30 minutes.
  • Run a knife around edges of cakes to loosen; unmold onto parchment paper.
  • While frosting is still warm, pour onto center of 1 cake layer, and spread evenly to edges. Let stand 10 minutes. Place second cake layer on top; press down gently. Using reserved pieces of crisp-rice mixture, patch edges where frosting is visible.
  • Decorate with cereal, arranging pieces around top, middle, and bottom edges. Let cake stand until firm enough to slice, at least 30 minutes or up to 2 hours. After 2 hours, wrap cake in plastic wrap to prevent it from getting too hard to slice.

Looking for a birthday treat to whip up in a snap? These no-bake cereal bars, complete with frosting and sprinkles, are just as sweet as baking up a birthday cake. And even if you're not celebrating a birthday, they're a special anytime treat.

8 cups Rice Chex™ cereal
1 container (1.75 oz) Betty Crocker™ rainbow mix sprinkles (about 1/3 cup)
2 tablespoons butter, cut into pieces
1 bag (10 oz) miniature marshmallows
3/4 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16-oz container)
1/2 cup white vanilla baking chips

Steps:

  • Spray 13x9-inch pan with cooking spray. Spray large bowl with cooking spray. Add cereal and 1/4 cup of the decors to bowl.
  • Spray medium microwavable bowl with cooking spray. Add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring every 30 seconds. Stir in 1/2 cup of the frosting and the white vanilla baking chips. Continue to microwave uncovered on High 30 to 60 seconds; stir until well blended.
  • Pour hot marshmallow mixture over cereal mixture; stir until cereal is well coated. Press firmly in pan.
  • In small microwavable bowl, microwave remaining 1/4 cup frosting uncovered on High 5 to 10 seconds, stirring until melted and smooth. Drizzle over top of bar with fork. Sprinkle remaining sprinkles over top.
  • Cool at least 1 1/2 hours until firm. For bars, cut into 6 rows by 4 rows. Store in airtight container at room temperature.

2-1/4 cups cake flour
1-1/2 cups sugar
3-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cubed
4 large egg whites, room temperature
3/4 cup 2% milk, divided
1 teaspoon clear vanilla extract
1/2 teaspoon almond extract
1/3 cup rainbow jimmies
BUTTERCREAM:
6 ounces white baking chocolate, chopped
1/4 cup heavy whipping cream
6 large egg whites
1-1/2 cups sugar
1/2 teaspoon cream of tartar
1/2 teaspoon salt
2 cups unsalted butter, cubed
1-1/2 teaspoons vanilla extract
Paste food coloring

Steps:

  • Preheat oven to 350°. Line bottoms of three 6-in. round baking pans with parchment; grease and flour pans., In a large bowl, whisk flour, sugar, baking powder and salt. Beat in butter until crumbly. Add egg whites, 1 at a time, beating well after each addition. Gradually beat in 1/4 cup milk and extracts; beat on medium until light and fluffy, about 2 minutes. Gradually beat in remaining milk. Gently fold in jimmies., Transfer batter to prepared pans. Bake until a toothpick inserted in each center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For buttercream, in a microwave, melt chocolate with cream until smooth, stirring every 30 seconds. Set aside to cool slightly. In heatproof bowl of stand mixer, whisk egg whites, sugar, cream of tartar and salt until blended. Place over simmering water in a large saucepan over medium heat. Whisking constantly, heat mixture until a thermometer reads 160°, 8-10 minutes., Remove from heat. With whisk attachment of stand mixer, beat on high speed until cooled to 90°, about 7 minutes. Gradually beat in butter, a few tablespoons at a time, on medium speed until smooth; beat in vanilla and white chocolate mixture., Spread frosting between layers and over top and sides of cake. Divide remaining buttercream into smaller portions; stir in food coloring to achieve desired colors. Decorate as desired. Store in refrigerator.
