Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

4 teaspoons vegetable oil, divided, or as needed
12 shallots, peeled and left whole
1 pound cubed beef stew meat
1 tablespoon all-purpose flour
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
2 onion, cut in half and sliced
1 large garlic clove, crushed
4 slices smoked streaky bacon, sliced into strips
1 ½ cups fresh button mushrooms
salt and ground black pepper to taste

Steps:

  • Preheat slow cooker on Low.
  • Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker. Add beef to the same skillet and cook until meat is seared on all sides and browned, about 5 minutes. Add flour and mix well. Pour in beer and bring to a boil. Transfer beef-beer mixture to the slow cooker.
  • Wipe out the skillet with a paper towel and add remaining 2 teaspoons oil. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and bacon and cook for 1 minute more. Transfer to the slow cooker. Add mushrooms and season generously with salt and pepper. Cover.
  • Cook on Low until meat is cooked through, about 5 hours.

2 lbs round steaks, 1-inch thick, can use thinner thickness
1/2 teaspoon salt
1/4 teaspoon ground black pepper
nonstick cooking spray, to coat
1 tablespoon canola oil, divided
1 medium onion, sliced
4 ounces fresh mushrooms, sliced
1 bay leaf
1/4-1/2 teaspoon dried thyme, I used 1/2 t will use less next time
1 cup beer, any type worksI used light
2 tablespoons butter
2 tablespoons all-purpose flour
14 ounces beef broth
4 ounces tomato sauce or 1 tablespoon tomato paste

Steps:

  • Preheat oven to 325°F (160°C).
  • Season steak with salt and pepper.
  • You can cut into large pieces or slice into 1" wide strips.
  • Preheat a Dutch Oven, over medium-high heat. Spray with vegetable cooking spray and add 2 t canola oil.
  • Brown steak on both sides; Set aside.
  • Reduce heat to medium; add more canola oil if necessary . Cook onions until softened, about 5 minutes.
  • Pour beer into Dutch Oven and bring to a boil, scraping up any browned bits from the bottom. Add the steak strips back to the Dutch Oven. Arrange onions on top of steak. Add bay leaf and sprinkle with thyme.
  • Melt butter in a small saucepan over medium heat; whisk in flour and cook for 2 to 3 minutes, stirring constantly. Continue to whisk while pouring broth into pan in a slow, steady stream. Whisk in tomato sauce or paste and bring to a boil.
  • Pour gravy over steak and onions. Top with sliced mushrooms.
  • Cover and bake until tender, about 1 1/2 to 2 hours.
  • Remove bay leaf before serving.
  • Makes 4 servings.

3 tablespoons vegetable oil
3 large onions, sliced
2 garlic cloves, crushed
1 tablespoon light brown sugar
25 g plain flour
200 ml brown ale
500 ml vegetable stock
2 teaspoons marmite

Steps:

  • Heat the vegetable oil in a large, heavey based saucepan.Add the onions, garlic & sugar & fry over a low heat for 25-30 mins, stirring occasionally, until the onionsare caramelised.
  • Sprinkle with the flour & cook for 1 minute Gradually stir in the ale,stock & the marmite & bring to the boil.
  • Reduce the heat & simmer, stirring occasionally, for 10 mins or until thickened.Keep warm until ready to serve.
