French Toast Casserole is perfect for prepping the night before and popping in the oven for a weekend or holiday brunch! An overnight French toast bake with cinnamon, vanilla and maple syrup and crispy cinnamon sugar topping.

1 loaf French bread ((450g))
8 large eggs
1 cup milk
1/2 cup maple syrup ((or granulated sugar))
2 teaspoons cinnamon
2 teaspoons vanilla extract
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/4 cup powdered sugar
1 tablespoon milk

Steps:

  • Lightly grease a 9x9" pan.
  • Cut or tear bread into 1" cubes and place in pan -- it will be full and that's okay!
  • In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon and vanilla. Pour over bread in pan, doing your best to evenly distribute the mixture over the bread.
  • Using a spatula, press the bread down into the liquid the best you can.
  • Cinnamon Sugar: In a small bowl, combine sugar and cinnamon. Sprinkle over bread.
  • Cover and refrigerate at least 2 hours or overnight.
  • Cover (with foil or a lid) and bake at 350 degrees F for 40 minutes. Remove cover and bake another 15-20 minutes until set in the middle and top is slightly crispy.
  • Glaze: stir together powdered sugar and milk and drizzle over French toast, or serve with syrup, fruit, whipped cream or yogurt as desired.

2 sticks butter, melted
2 cups light brown sugar
2 teaspoons cinnamon
1 loaf French bread, cut into 2-inch slices
2 cups milk
8 eggs, beaten
1 teaspoon vanilla extract

Steps:

  • Pour melted butter into an 11x15-inch baking dish. Sprinkle brown sugar and cinnamon over the butter and top with bread slices, making sure slices are placed close together.
  • Mix milk, eggs, and vanilla extract in a bowl until thoroughly combined; pour over bread in the baking dish. Cover with aluminum foil and refrigerate, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the covered casserole in the preheated oven and bake for 30 minutes. Uncover, and bake until puffed and lightly golden, about 15 minutes more.

If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

2 tablespoons unsalted butter, softened, plus more for baking dish
1 pound enriched bread, such as brioche, challah or panettone sliced 3/4-inch thick
1/4 cup golden raisins (optional)
6 large eggs
2 1/2 cups whole milk
1/2 cup heavy cream
1/3 cup light brown sugar
1/2 teaspoon ground cinnamon
Pinch of freshly ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup pecans, chopped (optional)
Confectioners' sugar for dusting (optional)
Maple syrup, for serving

Steps:

  • Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
  • In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.

We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk.

1 cup chopped pecans

1 (10 ounce) French bread (18-inch long)
8 eggs
3 cups milk
1/4 cup granulated sugar
3/4 teaspoon salt
1 tablespoon vanilla
2 tablespoons butter, cut into pieces
1/2 teaspoon ground cinnamon

Steps:

  • Grease a 13 x 9 x 2 inch pan.
  • Cut bread into 1 inch slices and arrange in one layer in bottom of pan.
  • Beat eggs with remaining ingredients, except butter, and pour over bread in pan.
  • Cover with foil and refrigerate 4-36 hours. To bake, uncover pan, dot with butter, sprinkle with cinnamon and sugar.
  • Bake at 350 degrees in center of oven for 45-50 minutes.
  • Remove and let stand for 5 minutes.

1 1/2 cups packed brown sugar
1/2 cup butter
4 eggs
2 cups milk
1/2 teaspoon cinnamon
1 dash nutmeg

Steps:

  • Melt butter in a pan and add brown sugar, stirring frequently.
  • Spray a 9x13 inch baking dish (important!) with cooking spray. Pour mixture on the bottom so it's about 1/8-inch thick. Lay the bread slices on top of it.
  • Mix together eggs, milk, cinnamon, and nutmeg. Pour egg mix over the bread. Cover tightly with plastic wrap and refrigerate overnight.
  • In the morning, preheat the oven to 350°F and uncover the baking dish. Bake for 30 minutes. You can serve with topping of your choice. It's already very sweet, so we eat it as is, but it's also good with fruit.
  • If you do 'breakfast for dinner', this can be made during the day anytime up to about 2 hours before the cooking time. This will give it time to soak up the egg mixture.

1/2 cup brown sugar
4 slices Texas toast thick bread or 4 slices thickly sliced bread
3 eggs, beaten
1 1/2 cups skim milk

My family and friends just love this recipe! It's easy, delicious, and you make it the night before so there is no work in the morning. Just pop it in the oven and by the time the table is set and coffee is on, it's ready! I believe this recipe came from the Best of Bridge cookbook. Great served with fresh fruit or yogurt. Can also be cooked in casserole dish on the barbeque so you don't heat up your house on a hot day!

6 cups white bread, crusts removed, cut into 1 inch cubes
6 ounces cream cheese, cut into small cubes
6 eggs, well beaten
1 cup milk
3/4 teaspoon cinnamon
1/3 cup maple syrup

Steps:

  • Put half the bread into the bottom of a greased 9 x 11 pan.
  • Dot cubed cheese on top.
  • Cover with the rest of the bread.
  • Combine remaining ingredients and pour over bread mixture.
  • Cover and refrigerate overnight.
  • Bake at 375 degrees for 45 minutes in the morning.
  • Drizzle with more syrup over top when finished baking.
  • Serve while hot.
