2 large eggs, lightly beaten
1 cup cornflake crumbs
1/3 cup ketchup
2 tablespoons dried minced onion
2 tablespoons soy sauce
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground pork
SAUCE:
1 can (14 ounces) jellied cranberry sauce
1 cup ketchup
3 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Mix first 8 ingredients. Add pork; mix lightly but thoroughly. Shape into 1-in. meatballs. Place on a greased rack in a 15x10x1-in. pan. Bake until a thermometer reads 160°, 20-25 minutes. Drain meatballs on paper towels. , In a large skillet, cook and stir sauce ingredients over medium heat until blended. Stir in meatballs; heat through.

Whip up these delicious classic Cranberry Meatballs for the upcoming holidays. Completely homemade, super simple and bursting with savory-sweet flavor!

1 small onion (grated or finely chopped)
1 ½ pound ground pork (extra lean)
1 cup breadcrumbs (such as Panko)
2 large eggs
⅓ cup ketchup
2 tablespoon Worcestershire sauce
¼ cup parsley (fresh, chopped)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 cups cranberry sauce (homemade or store bought)
1 cup ketchup
3 tablespoon brown sugar (packed)
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Preheat your oven to 350 F degrees. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl combine all the meatball ingredients together and mix well.
  • Wet your hands and form the mixture into medium size meatballs. You should end up with about 32 meatballs. Watch the video to see how to use a small ice cream scoop to make the meatballs.
  • Transfer the meatballs to the prepared baking sheet and bake for 20 to 25 minutes or until a thermometer reads 160 F degrees.
  • While the meatballs are baking, prepare the sauce. In a large skillet add all the sauce ingredients, stir and cook over medium heat until it comes to a boil. Turn down the heat and stir in the meatballs. Cook until heated through.
  • Garnish with parsley if preferred and serve warm.

1 pound ground beef
1 pound ground pork
2 eggs, lightly beaten
1 cup crushed saltines (about 15 crackers)
1 medium onion, finely chopped
2 teaspoons salt
1/4 teaspoon pepper
2 cans (16 ounces each) whole-berry cranberry sauce
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 teaspoon prepared mustard

Steps:

  • In a bowl, combine the first seven ingredients. Shape into 1-in. meatballs. Place meatballs on a greased rack in a shallow baking pan. Bake at 400° for 15 minutes or until a thermometer reads 160°; drain., Meanwhile, combine the cranberry sauce, soup and mustard in a large saucepan. Bring to a boil. Reduce heat; add the meatballs. Simmer, uncovered, for 10 minutes.

Number Of Ingredients 10

2 teaspoons garlic, minced
1 teaspoon rosemary, dried
2 teaspoons olive oil
1 teaspoon sea salt
1 teaspoon pepper, freshly ground
1 tablespoon whole grain mustard
2 lbs lean pork, ground
1/2 cup breadcrumbs
3 egg whites
2/3 cup dried cranberries, roughly chopped

Steps:

  • Stir together garlic, rosemary, olive oil, salt and pepper. If you can make it into a paste (with a mortar and pestle or mash together with the back of a spoon), that's even better.
  • In a large bowl, combine everything with your hands. Work ingredients until the are completely mixed. Make into approximately 30 meatballs.
  • You can cook these in a nonstick pan or in the oven at 350F until cooked through, internal temperature being 160°F . The time depends on how big you make your meatballs.

NIF'S NO FAIL PORK RIBS



Nif's No Fail Pork Ribs image

This recipe is for my neighbour. She used to spend so much time making the perfect ribs. Not too dry, not burning on the BBQ, cooked just right. I mentioned my rib recipe to her, she tried it and has never gone back! The nutritional value listed here is not right for this recipe because the cooking method removes so much fat. I suggested the BBQ sauce that I like, but I find sauces vary so much, I thought that it was best to pick your favourite. I also included the longest option for the cooking time. Here you go Judy - Enjoy!

4 lbs pork ribs (baby back, loin, or back ribs are best)
4 bay leaves
12 peppercorns
2 tablespoons sea salt
cold water
2 cups barbecue sauce, your favourite kind (I suggest Best Barbecue Sauce)

Steps:

  • Place ribs in a large stock pot. Fill pot with cold water until at least 2 inches above ribs. Add bay leaves, peppercorns and sea salt; bring to a boil. Once boiling, skim scum off the top of the water. Simmer ribs, while skimming occasionally, for 1 to 2 hours.
  • Set oven to 250°F.
  • Remove ribs from water and place in large baking dish. Pour your favourite BBQ sauce over ribs and cover tightlly with foil. Cook for about 4 hours, turning the ribs over every hour or so.
  • Remove foil and let cool for 10 minutes, until you can handle them. Cut into 2 to 4 ribs per section and place on a platter. Enjoy your tender, fall off the bone ribs!

NIF'S LAST MINUTE RIBS OR PORK RIBLETS



Nif's Last Minute Ribs or Pork Riblets image

I went to a surprise party tonight. I decided at the last minute to make ribs and they went over really well with everyone! These were very tender and had lots of flavour. The best part? They are incredibly easy to make and are the quickest ribs I have ever made. You can also use regular sized ribs - these were good for an appetizer at the party. Enjoy!

3 lbs pork riblets, racks (pork ribs cut in half)
water
4 garlic cloves, peeled, whole
1 tablespoon peppercorn
1 tablespoon sea salt
3 bay leaves
favourite dry seasoning (I used Nif's Basic Dry BBQ Rub)
freshly ground salt and pepper

Steps:

  • In a large pot, bring enough water to cover the ribs to a gentle boil. Add salt, pepper, whole garlic cloves and bay leaves to the water. Meanwhile remove the silver skin from the back of the racks and cut rib racks in half. Add ribs to water. Boil for 30 minutes and strain.
  • Preheat oven to 350°F.
  • Cut rib racks into individual ribs and place in a baking pan lined with tin foil, for easier clean up. Sprinkle ribs with seasoning and toss. ***If you are using a salty seasoning, be careful not to use too much and don't use salt at the end. Cover with foil. Bake for 30 minutes.
  • Meanwhile, place a wire rack on a cookie sheet. I lined the sheet with tin foil as well. Place ribs on the rack.
  • Broil ribs until they are medium brown. In my oven, they are done after 4 minutes under a high broil setting. If you have time, you can turn them over and broil the other side. Sprinkle with freshly ground sea salt and pepper to taste. Do not add the salt if your seasoning is salty.
  • Make sure you taste them! I added more of my dry rub seasoning at this point because they needed a bit more flavour.
