- In a large bowl, combine first five ingredients. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Place a third of the meatballs on a microwave-safe plate. Cover with waxed paper; microwave on high until cooked through, 2-3 minutes. Drain on paper towels. Repeat twice with remaining meatballs., In a 2-qt. microwave-safe dish, mix sauce ingredients. Microwave, covered, on high until heated through, 3-4 minutes, stirring halfway. Gently stir in meatballs. Microwave, covered, on high until heated through, 1-2 minutes.

Steps:
- 1. Combine all meatball ingredients and mix well.
- 2. Form into walnut-size balls. Place a single layer in a 9"x13" pan or baking dish. It will be full.
- 3. Place all sauce ingredients in a saucepan over medium heat until melted, stirring to combine.
- 4. Pour sauce over meatballs.
- 5. Place in a preheated 350* oven UNCOVERED for 45 min.
- 6. NOTE: These are wonderful to make ahead and reheat or freeze after they are cooked. You can make small meatballs and serve with toothpicks at a party or just make the meatballs and use them with your own spaghetti sauce or gravy. I'd give them 10 stars.

- In a large saucepan over medium heat, combine the first six ingredients; stir until sugar is dissolved. SLOW-BRAISED MEATBALLS WITH CRANBERRY SAUCE

- Preheat oven to 325 degrees F.
- Begin by preparing the meatballs. Remove crusts from bread and soak in milk.
- In a large mixing bowl combine veal, beef and pork. Squeeze out excess milk and add bread, onion, garlic, thyme and egg. Season with salt and pepper and mix well to combine. Make small golf ball sized balls. Set a heavy-based roasting dish over medium-high heat. Add a 3-count of olive oil and brown meatballs. Cook for 3 to 5 minutes ensuring to brown meatballs evenly all over. Turn the heat up to high and add red wine and beef stock. Bring to a boil then cover pan with aluminum foil and bake in oven for 45 minutes basting the meatballs every 20 minutes. If all the liquid evaporates add some more beef stock as you go. When done, remove the meatballs and set aside. Set the pan with the braising liquid on the stove top over medium heat, add honey, mustard, caraway seeds and reduce until thick and syrupy. Finish with creme fraiche and season with salt and plenty of freshly ground black pepper.
- Place cranberries with orange juice in a small saucepan and simmer until sauce is pulpy and thick - about 10 minutes. For an appetizer, serve meatballs skewered on toothpicks with cranberry sauce on the side.

- Mix together the hamburger, bread crumbs, eggs, soy sauce, pepper, garlic powder and ketchup. Form into small balls and bake for 30 minutes.

- Stir together garlic, rosemary, olive oil, salt and pepper. If you can make it into a paste (with a mortar and pestle or mash together with the back of a spoon), that's even better.
- In a large bowl, combine everything with your hands. Work ingredients until the are completely mixed. Make into approximately 30 meatballs.
- You can cook these in a nonstick pan or in the oven at 350F until cooked through, internal temperature being 160°F . The time depends on how big you make your meatballs.
