I played around with a few recipes unitl I came up with my own. I am giving some of the jars away as Christmas gifts with 2 different kinds of pretzels. Enjoy!

Yield 1 cup

Number Of Ingredients 10

1/4 cup mustard powder
1/2 cup yellow mustard seeds
1/2 cup water
1 cup apple cider vinegar
2 garlic cloves, minced
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground turmeric
1/4 teaspoon ground cinnamon

Steps:

  • In a bowl, mix mustard powder, mustard seeds and water. Set aside.
  • In a saucepan combine remaining ingredients. Bring to a boil and simmer for 5 minutes.
  • Whisk the mustard mixture inot the saucepan. Bring this combined mixture to a boil and simmer for 10 minutes.
  • Pour mixture into a blender and pulse until you have reached your desired consistency. I like it quite grainy myself!
  • Pour into sterilized jar and seal immediately. Let cool at room temperature until no longer warm.
  • Refrigerate!

Homemade mustard is better than its supermarket counterpart, and it's stupendously easy to make. Here, the combination of yellow and brown seeds makes for a medium-aggressive kick, but you could use all of one variety if you prefer. Use cold water to soak the seeds, and after puréeing, taste your mustard. You can smooth it out with a little honey, or up the zip with horseradish or chiles. Either way, your mustard will mellow out after a few days in the fridge.

1/4 cup brown mustard seeds
1/4 cup yellow mustard seeds
1/2 cup white wine
1 teaspoon kosher salt

Steps:

  • Place mustard seeds in a medium-size bowl. Stir in 1/2 cup cold water and the wine. Cover and let stand overnight.
  • Purée mustard with salt until you reach the desired consistency. Transfer to an airtight container and refrigerate for 24 hours before using.

2 ounces yellow mustard seeds
1/2 cup brown mustard seeds
1/2 cup white wine vinegar
1/2 cup extra virgin olive oil
1/2 cup Chardonnay wine
1 tablespoon ground turmeric
2 the lemons, juice and zest of
sea salt
freshly ground black peppercorns, to taste

Steps:

  • Using a coffee grinder, grind the yellow mustard seeds until they are powdery and resemble coarse meal.
  • Place in a food processor and add the remaining ingredients.
  • Process until very smooth.
  • Store in the fridge in sterilised jar.
  • Note: This mustard improves dramatically over time.
  • Its flavors will mellow, becoming rounder and less sharp.
