Green Enchilada Sauce With Hatch, New Mexico Chili image

A great enchilada sauce made with fresh roasted Hatch green chilis. You can substitute Anaheim chilies if you can't get New Mexico.

1 1/2 cups New Mexico green chilies
4 garlic cloves
1 medium yellow onion
2 cups chicken stock
1/2 cup chopped tomato
1 teaspoon ground cumin
2 teaspoons salt
1 tablespoon canola oil
1 tablespoon flour

Steps:

  • Roast and peel the chilies, reserving the peels, stems and seeds. I like to use a food mill for this. After pealing the chilies, chop them up and add to the food mill with a medium plate. Reserve the seeds.
  • Add the reserved seeds, stems and peels to the chicken stock and bring to a boil. Simmer for ~ 20 minutes to infuse with the chili flavor and heat. Strain out the seeds and stems.
  • Chop the onion and garlic and sweat (add 1 tsp salt here) over medium heat for ~10 minutes, until soft. Pulse the onions in a blender a couple of times (or use the food mill if you have it out already) until slightly smooth but still a little chunky.
  • If you are doing the chopped tomatoes yourself, blanch the tomatoes for a couple of minutes in boiling water, transfer to ice water bath, peel and chop (or use the food mill again).
  • In a saucepan, heat the oil, add the flour and stir for a minute or so to form a roux. The roux should get to a golden brown. Add the stock to the pan and whisk to prevent any clumps of flour. Add all remaining ingredients. Bring to a boil, and simmer over medium heat, stirring frequently, until the liquid has reduced by half, about 30 minutes or so. Taste halfway through and add salt to taste.
  • It's ready to serve, but I like to let it cool and refrigerate for at least 2 hours or overnight. This allows the flavors to come together.

1 (14 ounce) can chicken broth
2 (4 ounce) cans chopped green chilies, drained
1 cup chopped onion
1 cup light sour cream
1/2 teaspoon salt
3/4 teaspoon cumin
1/2 teaspoon fresh ground black pepper
2 (10 1/2 ounce) cans condensed cream of chicken soup
1 garlic clove, minced
20 (6 inch) corn tortillas
4 cups shredded cooked chicken breasts (about 1 pound)
2 cups finely shredded low-fat cheddar cheese

Steps:

  • Heat oven to 350°F.
  • Coat a 9x13 dish with cooking spray.
  • In a large pan, combine broth, chilies, onion, sour cream, salt, cumin, pepper, soup and garlic; mix well.
  • Bring to a boil, stirring constantly.
  • Remove from heat.
  • Spread 1 cup mixture in the dish.
  • Arrange 6 tortillas over soup mixture (breaking to fit dish) and top with 1 cup chicken and 1/2 cup cheese.
  • Repeat layers, ending with cheese.
  • Spread remaining soup mixture over cheese.
  • Bake 30 minutes or until bubbly.
  • Note: If you prepare dish a day ahead, cover with nonstick foil and refrigerate. When ready to serve, bake 1 hour; uncover and bake 30 minutes more or until bubbly.

3 tablespoons ground new mexican chili (chili powder)
1 (7 ounce) can green new mexican chili, diced
2 teaspoons ground cayenne pepper
2 lbs beef, sirloin, ground or 2 lbs beef, cubed
2 tablespoons oil
2 medium onions, chopped
2 stalks celery, chopped
3 garlic cloves, minced
1 (16 ounce) can tomatoes, chopped
1 tablespoon ground cumin
1 teaspoon ground oregano

Steps:

  • Brown the beef in oil. Add the onions, celery, and garlic and sauté until soft. Add the remaining ingredients and enough water to cover and simmer for about 2 to 3 hours or until meat is tender. Add more water if necessary.

2 lb chopped pork meat
3 clove cloves garlic chopped
1 large onion chopped
2 can(s) diced tomatoes
3 c chopped green chili you can use canned green chili but there is nothing like fresh roasted
1/4 c chopped cilantro
10 peppercorns
1 Tbsp ground cumin
3 c chicken stock you can substitute for chicken bullion if you don't have chicken stock
sea salt to taste
4 large russet poatoes
3 Tbsp oil

Steps:

  • 1. roast your green chili over flame until blackened put them in zip lock baggy to sweat peels off and set aside
  • 2. chop your pork meat into chunks flour and fry until golden brown in about three tablespoons oil after frying place in crock pot
  • 3. peel and chop four large russet potatoes about same size as your meat place those in crock pot
  • 4. chop your onion garlic and cilantro also place in crock pot
  • 5. put in your two cans of diced tomatoes add your three cups of chicken stock and your sea salt to taste and your peppercorns
  • 6. now your chilies should be ready to peel the skin should slide right off...chop them and put them in the crock pot

My husband grew up in New Mexico where they have the real, fresh from the farm, green chilies. I learned originally how to make these from my mother-in-law and then just added my own touches to it. My DH is very critical especially when it comes to Mexican food, really likes these. You can adjust the "heat" by adding more or less green chilies, and chili powder.

2 (10 1/2 ounce) cans cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups milk
1/2 cup chopped onion
2 minced garlic cloves
2 (7 ounce) cans chopped green chilies
2 tablespoons butter
1/2 teaspoon oregano
1/4-1/2 teaspoon cumin
1/4 cup salsa (mild, medium or hot, your preference)
1 cup sour cream
shredded cheese (whatever kind you like-I use the package of Kraft shredded medium cheddar cheese)
corn tortilla (allow 3-5 per person)
vegetable oil

Steps:

  • Saute the onions, garlic and green chilies in butter until the onions are translucent.
  • Add the soup, milk, salsa and spices.
  • Simmer over very low heat for 10 minutes, stirring often.
  • While the sauce is simmering, fry the tortillas in hot oil until soft.
  • (If the oil is hot enough, the tortillas only take a few seconds to get soft enough).
  • Place tortillas on paper towels to get rid of excess oil.
  • You can also soften the tortillas in the microwave for a few seconds wrapped in a dishtowel.
  • Add the sour cream to the enchilada sauce and stir well.
  • These enchiladas are served flat, stacked like pancakes on individual plates.
  • Place a tortilla on plate, cover with sauce and cheese. These are not rolled enchiladas but are flat like a stack of pancakes.
  • Repeat layers with as many tortillas as each person wants.
  • I like 3; my husband always has 5.
  • Pop the plate in the oven just long enough to melt the cheese.
  • You can also place cooked diced chicken in the layers.
  • This can also be prepared casserole style in a 9X13 dish.

3 cloves chopped garlic
1 large onion, chopped
1 large potato, peeled & chopped in bite size pieces
1 (15 ounce) can pinto beans, drained and rinsed
1 (15 ounce) can Italian-style stewed tomatoes
3 (4 ounce) cans chopped green chilies
6 -8 cups water (add to your own personal liking for thickness of soups)
salt and pepper (keep tasting to adjust)

Steps:

  • In large pot brown meat with onion, drain.
  • Add all other ingredients and stir well.
  • Bring to a boil then simmer for 45 minutes to 1 hour (or until potato is fork tender).
  • You must keep tasting this to get the salt and pepper right.
  • Fabulous with cornbread!

Steps:

  • Whisk together the cocoa powder, Mexican oregano, basil, marjoram, cumin, hot chili powder, garlic powder, hickory salt, black pepper, and cayenne pepper. Combine the seasoning mix with the buffalo meat, chorizo, and pork; cover and refrigerate overnight.
  • Heat a heavy skillet over medium heat, and fry the bacon until crisp. Remove the bacon with a slotted spoon to a large, heavy pot. In the same skillet, cook and stir the onion, habanero peppers, jalapeno peppers, garlic, and New Mexico chile powder in the bacon grease until onions are translucent; add the onion mixture to the pot.
  • In the same skillet, fry the seasoned meat in small batches until well browned, adding lard as needed; remove the meats to the pot. Stir the diced tomatoes with green chiles, salsa, tomato paste, picante sauce, diced green chiles, and dark beer into the pot. Simmer until the meat is easily pierced with a fork, 2 to 3 hours. If the chili seems too dry, add dark beer as needed.

1 red bell pepper, chopped

1 pork shoulder-usually labeled pork butt or Boston butt
1/4 cup raisins
1/2 cup brewed coffee
1 boneless pork shoulder roast (4- to 5-pounds), trimmed of excess fat and cut into 1 1/2-inch chunks
Salt and pepper
1 tablespoon vegetable oil
2 onions , chopped
1/4 cup all-purpose flour
1/2 cup chili powder
1 teaspoon dried oregano
1 tablespoon minced chipotle chiles in adobo sauce
6 garlic cloves , minced
2 1/2 cups low-sodium chicken broth
1 teaspoon grated zest and 1 tablespoon juice from 1 lime
1/4 cup chopped fresh cilantro leaves

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 350°F. Combine raisins and coffee in small bowl. Wrap tightly with plastic and microwave until liquid begins to boil, 1 to 3 minutes; let stand 5 minutes, until raisins are plump. Pat pork dry with paper towels and season with salt and pepper. Heat oil in Dutch oven over medium-high heat until just smoking. Brown half of pork, about 10 minutes. Transfer to plate and repeat with remaining pork. Pour off all but 1 tablespoon fat from Dutch oven. Add onions and cook until softened, about 5 minutes. Add flour, chili powder, oregano, chipotle, and garlic and cook until fragrant, about 1 minute. Add broth and raisin mixture, scraping up any browned bits, and bring to boil. Working in 2 batches, transfer mixture to blender or food processor and puree until smooth. Return sauce to pot. Add browned pork to sauce in pot and transfer to oven. Cook, covered, until pork is fork-tender, about 2 hours. Skim sauce, then stir in lime zest, lime juice, and cilantro. NEW MEXICO GREEN CHILI SAUCE

This is the green chili sauce that you get when you come to visit New Mexico. In Restaurants, the wait staff will look at you and say, "Red or green" and this is a recipe for the green which is my personal favorite. This sauce is enough to make for a 9x13 pan of enchilada that is stacked casserole style. If you roll your enchiladas you will have excess. The recipe calls for canned green chili, but if you are lucky enough to be able to find the frozen green chili, use the small 8 oz tub to make this recipe. This sauce can be frozen and used later and doubled easily. I got this recipe from my Mother in Law who wrote the food column for New Mexico Magazine. She says if it is too hot, (spice wise) add a can of Cream of Chicken soup undiluted!!

4 - 4 oz can(s) green chiles - you pick the heat
8 tablespoon(s) flour
8 tablespoon(s) butter
2 can(s) chicken broth
1 teaspoon(s) cumin

Steps:

  • In large saucepan over medium high heat, melt butter, add flour and stir until mixture is smooth. Continue cooking and stirring until mixture turns a light golden color. This will take about five minutes. Continue to stir the entire time as you DO NOT WANT THIS TO BURN.
  • Add your canned green chilis. It will bubble and spit, but stir in quickly.
  • Add chicken broth and cumin. Stir until all is smooth.
  • Bring to a boil and let sauce thicken which takes about 10 minutes. Stir a few times during the process to keep it from sticking.
  • Sauce is then ready to use with enchiladas or other New Mexico style food.

Ok, enough serious stuff-now to the fun reactions to Chili Cook-Off's! This recipe, for fun, has been seen on the internet, author unknown, it's origin is like the original RoadKill recipe. But that's another story! If you can read these directions without laughing, then there's no hope for you. I was crying by the end. This is an actual account as relayed to paramedics at a chili cook-off in New Mexico. Note: Please take time to read this slowly. If you pay attention to the first two judges, the reaction of the third judge is even better. For those of you who have lived in New Mexico , you know how true this is. They actually have a Chili Cook-off about the time Halloween comes around. It takes up a major portion of a parking lot at the Santa Fe Plaza. Judge #3 was an inexperienced Chile taster named Frank, who was visiting from Springfield, IL. Frank: "Recently, I was honored to be selected as a judge at a chili cook-off. The original person called in sick at the last moment and I happened to be standing there at the judge's table, asking for directions to the Coors Light truck, when the call came in. I was assured by the other two judges ( Native New Mexicans ) that the chili wouldn't be all that spicy; and, besides, they told me I could have free beer during the tasting, so I accepted and became Judge #3."   • Judge # 3 (Frank) -- Holy crap, what the hell is this stuff? You could remove dried paint from your driveway. Took me two beers to put the flames out. I hope that's the worst one. These New Mexicans are crazy.
  • CHILI # 2 - EL RANCHO'S AFTERBURNER CHILI.
  • Judge # 1 -- Smoky, with a hint of pork. Slight jalapeno tang.
  • Judge # 2 -- Exciting BBQ flavor, needs more peppers to be taken seriously.
  • Judge # 3 -- Keep this out of the reach of children. I'm not sure what I'm supposed to taste besides pain. I had to wave off two people who wanted to give me the Heimlich maneuver. They had to rush in more beer when they saw the look on my face.
  • CHILI # 3 - ALFREDO'S FAMOUS BURN DOWN THE BARN CHILI.
  • Judge # 1 -- Excellent firehouse chili. Great kick.
  • Judge # 2 -- A bit salty, good use of peppers.
  • Judge # 3 -- Call the EPA. I've located a uranium spill. My nose feels like I have been snorting Drano. Everyone knows the routine by now. Get me more beer before I ignite. Barmaid pounded me on the back, now my backbone is in the front part of my chest. I'm getting sh*t-faced from all of the beer.
  • CHILI # 4=2 0- BUBBA'S BLACK MAGIC.
  • Judge # 1 -- Black bean chili with almost no spice. Disappointing.
  • Judge # 2 -- Hint of lime in the black beans. Good side dish for fish or other mild foods, not much of a chili.
  • Judge # 3 -- I felt something scraping across my tongue, but was unable to taste it. Is it possible to burn out taste buds? Sally, the beer maid, was standing behind me with fresh refills. This 300 lb. Woman is starting to look HOT -- Just like this nuclear waste I'm eating! Is chili an aphrodisiac?.
  • CHILI # 5 - LISA'S LEGAL LIP REMOVER.
  • Judge # 1 -- Meaty, strong chili. Jalapeno peppers freshly ground, adding considerable kick. Very impressive.
  • Judge # 2 -- Chili using shredded beef, could use more tomato. Must admit the jalapeno peppers make a strong statement.
  • Judge # 3 -- My ears are ringing, sweat is pouring off my forehead and I can no longer focus my eyes. I farted, and four people behind me needed paramedics. The contestant seemed offended when I told her that her chili had given me brain damage. Sally saved my tongue from bleeding by pouring beer directly on it from the pitcher. I wonder if I'm burning my lips off. It really ticks me off that the other judges asked me to stop screaming. Screw them.
  • CHILI # 6 - VARGA'S VERY VEGETARIAN VARIETY.
  • Judge # 1 -- Thin yet bold vegetarian variety chili. Good balance of spices and peppers.
  • Judge # 2 -- The best yet. Aggressive use of peppers, onions, garlic. Superb.
  • Judge # 3 -- My intestines are now a straight pipe filled with gaseous, sulfuric flames. I crapped on myself when I farted, and I'm worried it will eat through the chair. No one seems inclined to stand behind me except that Sally. Can't feel my lips anymore. I need to wipe my butt with a snow cone.
  • CHILI # 7 - SUSAN'S SCREAMING SENSATION CHILI.
  • Judge # 1 -- A mediocre chili with too much reliance on canned peppers.
  • Judge # 2 -- Ho hum, tastes as if the chef literally threw in a can of chili peppers at the last moment. **I should take note that I am worried about Judge #3. He appears to be in a bit of distress as he is cursing uncontrollably.
  • Judge # 3 -- You could put a grenade in my mouth, pull the pin, and I wouldn't feel a thing. I've lost sight in one eye, and the world sounds like it is made of rushing water. My shirt is covered with chili, which slid unnoticed out of my mouth. My pants are full of lava to match my shirt. At least during the autopsy, they'll know what killed me. I've decided to stop breathing. It's too painful. Screw it; I'm not getting any oxygen anyway. If I need air, I'll just suck it in through the 4-inch hole in my stomach.
  • CHILI # 8 - BIG TOM'S TOENAIL CURLING CHILI.
  • Judge # 1 -- The perfect ending, this is a nice blend chili. Not too bold but spicy enough to declare its existence.
  • Judge # 2 -- This final entry is a good, balanced chili. Neither mild nor hot. Sorry to see that most of it was lost when Judge #3 farted, passed out, fell over and pulled the chili pot down on top of himself. Not sure if he's going to make it. Poor fella, wonder how he'd have reacted to really hot chili?.

Steps:

  • 1. Whether you get your chiles from the local supermarket or pick them fresh in the fields, select large, firm, meaty chiles with no sign of wilting. Wash the chiles before proceeding. Slit each pepper lengthwise, and scrape out the seeds and membranes with a spoon. Some people don't remove the seeds before roasting, but we think they're easier to remove at this stage if you plan to freeze them for later use. Also, we think freezing peppers with the seeds and membranes inside makes them hotter when thawed and used later. By the way, when handling chiles, either wear gloves or coat your hands with vegetable oil, and don't touch eyes or other sensitive areas. If roasting the chiles indoors, arrange them in a single layer on a baking sheet. A layer of foil makes for easier cleanup later. Place in the oven, 4-5 inches from the the broiler element. The skin will blister and turn black. Turn the peppers as required to blister all sides evenly. At this point, your kitchen should be filled with the mouth-watering aroma of roasting green chile! If it's a nice day outdoors, and if you have a good gas barbecue grill, you can roast your chiles that way. Arrange the peppers over high heat, turning as necessary to blister the skins evenly on all sides. Whichever roasting method is used, the pepper skins should be evenly blistered, mostly black. Cover the hot chiles with a damp kitchen towel for 15 minutes or so. This steams them and loosens the skins. You can also use a plastic or paper bag to steam the peppers.
  • 2. If you're having green chile for dinner tonight, the peppers are ready to use now. Just slip the skins off and stuff, chop, etc. Otherwise, package the cooled chiles in airtight bags for freezing. We think leaving the peppers whole and freezing with the skins on results in a better texture and flavor when thawed. When ready to use, thaw for a few minutes and the skins slip off easily. Drain on paper towels and you're ready to cook.
  • 3. Green, Chile, Stew 1 2 1/2 lb pork roast -- (2 1/2 to 3) 1 c flour 3 c roasted -- peeled, chopped green chile 1 onion 3 cloves garlic -- finely minced salt pepper chicken broth or base 1 tsp cumin 2 cubed potatoes (optional) -- (2 to 4) Cube pork roast, dredge in flour and brown until carmalized. Saute onions until translucent. Put ingredients in large pot, add water to cover Simmer until meat and potatoes are tender, add salt to taste. Onion and garlic may be added just before simmering is finished in order to keep the flavors seperate. Excellent served with flour tortillas, or hard rolls

I was inspired to make my own version of chili pasta bake, that had just a touch of spice and rich flavor. This closely reminds me of enchiladas. This is always a big hit at home or parties. Enjoy!

1 lb penne pasta
4 cups water
1 lb lean ground beef
2 cups cheddar cheese
1/4 cup cream
1/2 cup new mexico chile powder
1 small red onion, diced
1 poblano peppers or 1/2 green bell pepper, diced
2 large beefsteak tomatoes
3 garlic cloves, minced
2 teaspoons garlic powder
2 teaspoons ground cumin, set 1 tsp, for later
1/2 teaspoon Mexican oregano, crushed (please no Italian)
1 teaspoon dried parsley
1 -2 teaspoon kosher salt, more for taste
1 teaspoon ground black pepper
1 tablespoon flour, plus
1/2 teaspoon flour

Steps:

  • Preheat oven 375*.
  • Prepare a 11x7x3 baking dish or any deep dish that will hold the amount of ingredients with a drizzle of olive oil.
  • First, gather tomatoes and blend well, set aside.
  • Now dice up red onion, poblano pepper, place in bowl, set aside.
  • Mince garlic cloves, set aside.
  • Then in a small dish combine garlic powder, 1 teaspoons cumin powder, Mexican oregano, dried parsley, 1/2 teaspoons black pepper, 1 teaspoons salt, set aside.
  • Gather flour in another small dish, set aside.
  • Use a (non-stick) dutch-style pan, heat on med-high, add ground meat, onion, poblano pepper, cook for about 4-5 minute Then add, mixed spices and cook for about another 1-2 minutes Stir in flour and cook for 2 minute (this helps cook the rawness of the flour).
  • Add blended tomatoes and minced garlic, stir & cook for about 2 minutes Add red chili powder stir & cook another 1 minute.
  • Add 4 cups of water, cream. 1 teaspoons cumin, 1/2 teaspoons black pepper & 1 teaspoons salt or more to taste. Bring to a simmer, cook uncovered for 15 minute for the flavors to come together.
  • In prepare dish, add uncooked pasta and pour *chili sauce over pasta until submerged. Toss 1 cup cheddar cheese and mix around dish. Top with the other cup of cheese. Place in middle-rack of oven and cook for about 45 minute or until pasta is tender.
  • Garnish with lettuce, tomatoes & onion or eat just like that.
  • Footnotes:.
  • Preheat oven 375* Prepare a 11x7x3 baking dish or any deep dish that will hold the amount of ingredients with a drizzle of olive oil.
  • *Note your chili will be watery, but will thicken up from the pasta and cheese. **If you decide to use spaghetti make sure to boil in salted water for half the time on box. Drain and rinse in cold water. You will need it to be flexible to mix in chili sauce. Cut baking time to 30 minute.
  • ***If you cannot find NM red chili powder, try to find a plain red chili powder. If not, then you can probably use regular chili powder, but be aware that it is mixed with spices, such as garlic, cumin, etc. So you might have to adjust the spices in this recipe.
