I found this recipe among my grandmother's many, many cookie recipes and with a couple of minor changes, everyone says these are much better than the ones I usually make (those being the chocolate chip cookies straight off the back of the Nestle Tollhouse Chocolate Chip bag!) You'll absolutely love them!

1/2 cup unsalted butter, softened
1 cup brown sugar (I used light brown vs. dark brown)
3 tablespoons sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups flour (I used all-purpose, UNBLEACHED flour)
1 1/2 teaspoons instant coffee, finely ground
12 ounces semi-sweet chocolate chips (or milk chocolate, if preferred)

Steps:

  • With electric mixer, blend the butter with both sugars until fluffy.
  • Mix in the egg and the vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • With your hands, form 1 1/2" to 2" balls and place widely apart on greased cookie sheets (I sprayed my cookie sheets with PAM- the kind with flour in it for baking).
  • Bake at 375 degrees for 8-10 minutes.
  • Makes approximately 20 cookies.

It took me almost two years to clue into the fact that most of my formerly successful baking recipes were failing because I moved to a high altitude location. I've yet to try this high altitude recipe for chocolate chip cookies (from the back of the Toll House bag), but certainly plan on it the next time as the cookies I've baked with the regular Toll House recipe turn out flat as can be. The recipe specifies high altitude as 5,200 feet (or 1,585 meters). Feel free to substitute your favorite baking chip -- I like the chocolate caramel swirled kind.

Steps:

  • Preheat oven to 375 degrees. COMBINE flour, baking soda and salt in small bowl. Beat butter, Crisco,gran. sugar, brown sugar and vanilla extract in large bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto un-greased baking sheets. Bake for 9-11 minutes (or until the edges of the cookies are just starting to brown). Remove from oven to cool.

This recipe is from the 1961 Better Homes & Garden cookbook. Ever since making them I haven't a need for pre-made dough. Makes small amount so you may want to double. MY TIPS: Use a hair less than salt required. Use dark brown sugar. Scoop the flour in the bag (rather than pouring into the cup) with dry ingredients in separate bowl and wisk together. For thinner cookies and if doubling use 1/4 + 1/4 salt.

1/2 cup granulated sugar
1/4 cup dark brown sugar
1 egg

  • *CREAM TOGETHER SHORTENING, ALL SUGAR, EGG & VANILLA.
  • *IN SEPARATE BOWL WISK FLOUR, SALT, & BAKING SODA.
  • *ADD FLOUR LITTLE BY LITTLE UNTIL MIXED.
  • *FINALLY STIR IN CHOCOLATE CHIPS (and nuts if used).
  • *DROP ON LIGHTLY GREASED PAN 2 INCHES APART.
  • *BAKE FOR 10 TO 12 MIN OR UNTIL GOLDEN BROWN.
  • The amount it makes all depends on the size of the dough!

1 cup (2 sticks, 1/2 pound) butter, softened
3/4 cup granulated [white] sugar
3/4 cup packed brown sugar

2 cups (12-ounce package) NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Pinch of Cinnamon (Optional)

Steps:

  • COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely. PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15"x10" jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes.

Number Of Ingredients 9

2 sticks softened butter
3/4 C packed brown sugar
3/4 C white sugar
1 1/2 tsp. vanilla extract
1 tsp. baking soda
a pinch of salt
2 eggs
2 1/4 C flour
1 bag of nestle milk chocolate chips

Steps:

  • cream butter in mixer until pale and fluffy. Add white sugar, and continue to beat on high, making sure to scrape down the sides, every now and then. Add brown sugar, and after thoroughly mixed in, add eggs, one at a time. Then add vanilla, salt, and baking powder. Turn the mixer down to medium speed, and slowly add the flour, taking time to not make it fluff everywhere. After stirred and mixed in well, add the bag of chocolate chips, and hand stir, so the mixer doesn't start spasming. :)
