Here is a rustic, comforting casserole that is very easy to prepare.

Yield Makes 6 servings

Number Of Ingredients 6

3 tablespoons olive oil
6 sweet italian sausages
2 pounds savory cabbage, thinly sliced (about 15 cups)
2 cups beef stock or canned beef broth
2 cups coarsely chopped peeled tomatoes
Basic Polenta

Steps:

  • Heat 3 tablespoons olive oil in heavy large pot over medium heat. Add sweet Italian sausages; saut&é sausages until golden brown on all sides, about 4 minutes. Add thinly sliced cabbage; saut&é until cabbage is wilted, about 10 minutes. Add 2 cups beef stock and chopped tomatoes. Bring to a boil. reduce heat to low. Cover and simmer 40 minutes to blend flavors. Remove sausages.
  • Preheat oven to 350°F. Spoon half of Basic Polenta into 13x9x2-inch glass baking dish. Top with half of cabbage and half of cooking liquid. Spoon remaing polenta atop cabbage. Arrage Italian sausages atop polenta. Spoon remaining cabbage and cooking liquid over sausages. Bake unitl flavors blend, about 30 minutes.

8 ounces whole onion or 7 ounces ready-cut (1 2/3 cups)
1 teaspoon olive oil
1 large clove garlic
6 ounces low-fat chicken or turkey sausage
8 ounces zucchini
14 ounces no-salt-added tomato puree
3 ounces no-salt-added tomato paste
3/4 cup dry white wine
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon sugar
Freshly ground whole black pepper to taste
2 1/4 cups no-salt-added chicken stock
1 ounce Parmigiano Reggiano
8 tablespoons fine-ground cornmeal

Steps:

  • Chop whole onion and saute in hot oil in large nonstick pan.
  • Mince garlic and add, cooking until onion begins to soften.
  • Remove sausage from casing and crumble into pan; brown on all sides.
  • Wash, trim and cube zucchini; add to pan and continue to cook until zucchini begins to take on color, about 2 minutes.
  • Add tomato puree, tomato paste, wine, oregano, thyme, sugar and pepper; stir well, and cook over medium-low heat while preparing the polenta.
  • Bring chicken stock to boil for polenta in covered pot.
  • Grate cheese coarsely.
  • Slowly stir cornmeal into boiling stock, and cook until mixture thickens to a soft mush. Remove from heat.
  • Serve polenta topped with sausage-tomato sauce, sprinkled with cheese.

1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic, drained
1/8 teaspoon pepper
1/4 cup minced fresh basil
1 tube (1 pound) polenta, cut into 1/2-inch slices
1/4 cup olive oil
1/2 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook sausage and garlic over medium heat until no longer pink; drain. Stir in tomatoes and pepper. Cook and stir for 4-5 minutes or until heated through. Remove from the heat; stir in basil., In another skillet, cook polenta slices in oil over medium-high heat for 3-4 minutes on each side or until lightly browned. This is an unusual dinner recipe, but boy did we enjoy it. Frying the polenta in butter makes the edges nice and crispy but keeps the middle creamy. The pork and tomato mixture gives the polenta a punch of rich flavor. This is an easy to throw together meal everyone will enjoy.

1 - roll of polenta
1 pound(s) ground pork or Italian sausage
1 can(s) diced tomatoes (28 oz)
2 teaspoon(s) minced garlic
1 small red oninon, chopped
1 - jalapeno, chopped
- salt and pepper, to taste
1 tablespoon(s) butter
- shredded Parmesan cheese

Steps:

  • Cook sausage and onions together until done.
  • Add tomatoes, garlic, jalapeno, salt, and pepper. Let simmer.
  • Slice polenta in 1" slices. In a skillet, melt butter. Add sliced polenta and cook 3-5 minutes on medium heat on each side.
  • Serve sausage mixture over fried polenta and top with shredded Parmesan cheese.
