NEELY'S DRY BBQ RIBS
Steps:
- Trim the spare ribs, removing the upper brisket bone and any excess fat; this will produce a St. Louis-style rib. Rinse the ribs and season with Neely's Seasoning, and then cover and refrigerate for 4 to 12 hours.
- Indirect cooking in a barbecue pit is recommended to prevent burning. Cook at 250 degrees F (curled side of ribs facing up) for the first 3 hours, and then increase the temperature to 300 degrees F for the final 3 hours. Sprinkle the ribs with Neely's Seasoning Mix during the last 30 minutes of cooking.
- Mix all ingredients together in a bowl.
THE NEELY'S BARBEQUE SEASONING
This is my take on the Neely's delicious bbq seasoning! From Down Home with the Neely's cookbook. The original recipe calls for white sugar, I added the optional garlic powder and black pepper.

NEELY'S SOUTHWEST STYLE RIBS

- Mix all the dry ingredients together in a small glass bowl to create the spice rub. Reserve 2 tablespoons of the spice mixture for the BBQ Sauce.
- Rinse and the dry ribs, then put on a clean cutting board and pull off the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with the spice rub. Wrap the ribs with plastic wrap or foil and refrigerate for at least 2 hours so flavors can develop and permeate the meat.
- Soak the wood chips in water for 1 hour before grilling.
- Preheat the grill to 250 degrees F. Using the hickory and charcoal, set up the grill for indirect heat.
- Arrange the ribs, meatier side down, on the far side of the grill away from the coals. Close the cover of the grill and cook the ribs for 3 hours. Turn and cook until the ribs bend, about 1 more hour.
- You will need to check on the charcoal and chips during the smoking process and replenish as needed. You will also need to maintain a temperature of 250 degrees F.
- Remove ribs from grill to a cutting board and sprinkle with more spice rub. Cut each slab into individual ribs and transfer to a serving platter. Serve the ribs with Southwest Barbecue Sauce.
- For dry ribs: Sprinkle Neely's BBQ seasoning over the ribs, cut between the bones and serve.
- Heat the canola oil in a medium saucepan over medium heat. Add the onion and garlic and saute until the onions are soft. Stir in the remaining ingredients and simmer until thick and the sauce is flavorful, about 1 to 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary.
THE NEELEY'S KANSAS CITY BABY BACK RIBS DRY RUB AND COOK METHOD
My husband and I saw this on Food Networks Down Home With the Neeley's and had to try it. I am so glad we did! It is awesome!!! The ONLY way we will make ribs anymore!!! These ribs are time consuming; it is an all day job, so make these on a day that you have 5 or 6 hours to spare! You won't be dissapointed!!!

- Mix all the dry rub ingredients together.
- Rub desired amount onto a rack of baby back ribs.
- Cover with plastic wrap and let sit in refrigerator for 24 hours before grilling.
- Heat your charcoal grill and prepare it to use your smoker attachment. If you do not have a smoker (we don't) just situate the charcoals to one side of the grill.
- When grill is heated and the flames go away place rack of ribs, skin side up, on the grill on the opposite side that the charcoals are on. This makes for cooking with indirect heat.
- Cook ribs on grill for 5 or 6 hours, turning and basting with your favorite BBQ sauce (ours is Sweet Baby Rays hickory and brown sugar) every 30 minutes. Temperature of grill should be around 225 degrees.

NEELY'S BBQ PORK SPARE RIBS

- Place pork rib slab flat on a clean chopping board. Pull off membrane. Cut off the excess fat and meat. Season both sides of the slab with Neely's BBQ Seasoning. Refrigerate for at least 24 hours.
- Preheat your grill at 275 degrees F, using hickory wood and charcoal.
- Place the slab on the grill away from the flame, using indirect heat. Cook the slab for approximately 2 1/2 hours with the curl side up. Flip the slab over to finish cooking for approximately 1 hour or until you get full "bend" in the slab.
- For dry ribs: Pull ribs off grill, sprinkle Neely's BBQ Seasoning over entire slab. Cut between the bones and serve.
- For wet ribs: Pull ribs off grill, pour Neely's BBQ Sauce over slab. Cut between the bones and serve.
- Mix all the ingredients and set aside.
- Combine all of the sauce ingredients in a stockpot or large Dutch oven. Bring to a boil over high heat, stirring frequently to prevent sticking. Reduce temperature to low and simmer, uncovered, for at least 2 hours.

NEELYS' IF-YOU'VE-GOT-A-SMOKER BBQ PORK
If you've got a smoker or kettle grill, here's your recipe-you'll make much more pulled pork than you need for the nachos, but are you complaining? Ever heard of that Memphis classic, a pulled-pork sandwich? Make some Neely's coleslaw (see page 150), BBQ sauce (see page 37), and toasted hamburger buns, and go to town with the leftovers.

- Mix together the Neely's barbecue rub, pepper, and salt.
- Rinse the shoulder or butt thoroughly, pat dry with paper towels, and massage the seasoning mixture into the meat. Cover the meat with plastic wrap, and refrigerate for at least 2 hours, or up to 1 day in advance.
- Following the manufacturer's instructions, and, using lump charcoal and 1/2 cup of soaked and drained wood chips for the smoker (or 1 cup for the kettle grill), start a fire, and bring the temperature of the smoker or barbecue grill up to 275 degrees F.
- Place the pork on a rack in the smoker or on the grill. Cover, and cook the meat until a thermometer inserted into the center registers 165 degrees F, turning the pork every hour or so, about 6 hours total. Add more charcoal as needed to maintain the temperature, and more drained wood chips to maintain the smoke level.
- Transfer the pork to a rimmed baking sheet (this is important-you'll want to catch all the flavorful juices), and allow it to stand until cool enough to handle. Shred the pork into bite-sized pieces, and mound on a platter. Pour any juices from the baking sheet over the pork. At this point the pork can be served immediately, or covered with foil and refrigerated for a day.
- If you chill the pork, rewarm it, covered, in a 350-degree oven for about 30 minutes.

Pat Neely: Brother Tony has a terrific palate, and his true genius is in having developed the right "tempo" for the barbecue sauce-and, boy oh boy, he never lets us forget it! This recipe, which includes Neely's Barbecue Seasoning and eleven other ingredients, became one of the keys to our success as restaurateurs. Now it can be the base of your own kitchen success. Memphis barbecue sauce is known for its sweet and tangy tomato base. This sauce keeps true to that tradition, striking a perfect balance between the sweet (they use brown and white sugar), the tangy (cider vinegar), and the tomato base (good ole ketchup!).
