A lovely, not-too-sweet summer dessert that's equally delicious with peaches. Be sure to use only the ripest in-season fruit, and serve it warm, with a scoop of vanilla ice cream or a dollop of sweetened whipped cream.

- To prepare the topping: In a medium-size bowl, stir together the flour, the sugar, and the baking powder. Add the milk and the butter and beat until smooth.

NECTARINE PLUM COBBLER

- 1. Mix sliced peaches and sliced nectarines with 1 cup of the sugar, cinnamon, and nutmeg, then set this bowl aside.
- 2. Preheat oven to 350. Put the oleo/butter in a 13x9 inch baking dish and melt it in the oven.
- 3. Stir up remaining cup of sugar, flour, baking powder, salt, and milk and pour this batter over the melted oleo/butter, but DO NOT STIR.
- 4. Put the 1st bowl of sugared sliced peaches and nectarines on the top of the batter, but DO NOT STIR!
- 5. Bake for an 1 hour 10 min at 350. The batter will rise to the top and the top will be CRISP and BROWN.
- 6. Serve with vanilla ice cream and enjoy!!!

NECTARINE BLUEBERRY COBBLER

In a saucepan combine the nectarines, the blueberries, the water, the sugar, the cornstarch, and the lemon juice, bring the mixture to a boil, stirring constantly, and simmer it for 5 minutes, or until the fruit is softened. Transfer the fruit mixture to a shallow 1 1/2-quart baking dish.
- Make the biscuits:
- Sift the flour onto a sheet of wax paper, into a bowl sift together the flour, the sugar, the baking powder, and the salt, and make a well in the center. In a bowl beat the cream until it holds soft peaks, spoon it into the well in the flour mixture and combine the mixture with a fork until it just forms a dough. NECTARINE-RASPBERRY COBBLER WITH GINGER BISCUITS
A cobbler is a traditional baked dish of sweetened fruit with a biscuit-dough topping. It's best to bake the fruit untopped for a half-hour or more before adding the raw disks of dough - some say they look like cobblestones - and baking them for another 15 minutes. - Heat oven to 375 degrees. In large mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Stir together, then add butter pieces and work into flour mixture with fingers or fork until mixture looks like moist sand. Stir in pistachios and candied ginger.

Roll out scraps, and continue cutting out rounds until you have 12 biscuits. Place biscuits rounds on a plate, and refrigerate them for a few minutes.
- Remove baked fruit from oven and arrange biscuit rounds evenly over the top. Brush each biscuit with about 1 teaspoon cream and sprinkle with a pinch of sugar.
- Bake, uncovered, for 12 to 15 minutes, until biscuits are well browned. Let cool slightly before serving.

BROWN BUTTER NECTARINE COBBLER/CAKE
This dessert comes from a subset of cobbler recipes with cakelike leanings. It's blissfully easy. VEGAN BOURBON COBBLER (PEACH, NECTARINE, STRAWBERRY, BLACKBERRY)
This is a vegan variation of my recipe: Recipe #295437 Southern Bourbon Peach Cobbler. This tastes slightly different because I use coconut, but very tasty, and you wouldn't think it was vegan if someone hadn't told you. I've found nectarines are very nice (and inexpensive) in my area during the summer, but any fruit or combination could be used. Some possibilities include: peaches, nectarines, strawberries, blackberries, cherries, raspberries, plums, blueberries, mango, apricots, rhubarb, and other berries and stone fruit. The recipe would have to be varied if you wanted to use a less juicy fruit like apples or an acidic fruit like pineapple.

- Combine all ingredients up to lemon juice in a large bowl and let sit.
- Pour apple sauce on bottom of an 8 1/2" by 11" baking pan.
- Combine flour with remaining ingredients except sugar for topping.
- Drop tablespoon fulls of the dough onto the apple sauce on pan to cover. Leave some small gaps as this helps the dough rise through the fruit to get crisp on the top.

NECTARINE & BERRY COBBLER

- Prepare half the Sweet Cream Biscuits recipe on page 34. Cut out 10 biscuits using a 2 1/2 -inch round cutter, or 14 biscuits with a 2-inch cutter. A cutter with scalloped edges makes beautiful cobbler biscuits.
- Preheat the oven to 400°F. Combine the fruit in a large bowl. Mix 1/2 cup sugar, flour, and salt together, and stir into the fruit. Add the lemon zest and juice, and mix well. Put the fruit in a gratin dish approximately 9 inches by 12 inches and 2 to 3 inches deep. Bake the fruit for 8 minutes or until the fruit just softens. Remove the dish from the oven. Brush the biscuit tops with the cream and sprinkle lightly with the remaining sugar. Place the biscuits on the fruit in staggered rows and return the dish to the oven (set the dish on a baking sheet to catch any overflowing juices). Bake the cobbler for 35 to 45 minutes, until the biscuits are golden and the fruit is bubbling. Let the cobbler cool awhile and serve warm with vanilla ice cream or lightly whipped cream, if you like.

- Use other stone fruit in place of the nectarines; plums will need 1 to 2 tablespoons additional sugar, and the slices should be slightly thinner. Use all nectarines, or peaches or other stone fruit, if berries are not available.
- Instead of cobbler biscuits, bake the fruit with a crisp topping: Mix together 1 1/4 cups flour, 6 tablespoons brown sugar, 1 1/2 tablespoons granulated sugar, 1/4 teaspoon ground cinnamon, and 2/3 cup lightly toasted chopped nuts (walnuts, pecans, or almonds). Work in 12 tablespoons butter cut into small pieces until the mixture has a crumbly texture. Cover the fruit in the pan with the crisp topping and bake until the fruit is bubbling thickly and the topping is lightly browned.
FRESH NECTARINE CINNAMON COBBLER

In a large saucepan bring this mixtue to a boil and cook, stirring, until mixture thickens (about 3-5 minutes). Pour into a buttered 9 by 13 inch baking pan.
- 4. Remove dough from refrigerator. With a sharp knife cut biscuit dough into 12 equal slices or biscuits. Place on top of nectarines. Bake uncovered for 20-25 minutes or until biscuits are nicely browned and fruit is bubbly. Great served warm with ice cream.
NECTARINE BREAD PUDDING COBBLER
I bought some nectarines a while back and froze them so we could use them later. This is later. So today when I had enough dry bread to make a bread pudding I decided to combine the two to make a new desert at least for us and it turned out very nice. at least we like it.

- 1. preheat oven 350'
- 2. Whip cream, water, eggs vanilla and until well smooth. Fold in bread and let sit until the bread has soaked up all the liquid. Or cover and put in the frig. overnight.
- 3. Spray the bottom of a 13X13 pan lightly with oil. Layer the nectarines on the bottom of the pan and gently top with the bread mixture. Bake for 30 - 40 minutes or until a toothpick come out clean.
- 4. Remove from oven and let set up for 30 minutes. Top with Butter Pecan Ice Cream or Caramel Sauce or Whipped Cream and enjoy.
