Steps:
- Brown Pork Chops in Olive Oil and Garlic.
- Remove Chops and saute mushrooms and peppers in the same pan (more oil may be necessary).
- Add remaining ingredients along with Chops and simmer covered for 1 hour.
- Serve over fettucine.

RED PEPPER PORK CHOPS WITH SUCCOTASH

- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Season the pork chops on both sides with salt and pepper. Add to the skillet and cook, turning once, until lightly browned, about 6 minutes. Add the jelly and mustard and increase the heat to high. Cook, flipping the pork a few times, until well glazed and cooked through, 3 to 6 more minutes, depending on the thickness. Remove from the heat.
- Put the lima beans in a small microwave-safe bowl with 2 tablespoons water; cover with plastic wrap and microwave until tender, about 5 minutes, then drain. Cut the kernels off the corn cobs and run the back of the knife down the cob to get all the corn milk.
- Heat the remaining 1 tablespoon olive oil in another large nonstick skillet over medium-high heat. Add the lima beans, corn and corn milk, bell pepper and thyme; season with salt and pepper. Cook, stirring occasionally, until the vegetables are tender, 6 to 8 minutes. Stir in the butter and 2 tablespoons water until the butter is melted. Remove from the heat and stir in 2 tablespoons chives.
- Divide the pork among plates and drizzle with the pan juices. Serve with the succotash; top with the remaining 1 tablespoon chives.

If you like the robust flavor of olives, tomatoes, and rosemary, this is the dish for you. I find it works best using a cast iron skillet.

- Preheat oven to 400 degrees F (200 degrees C). Heat the oil in a cast iron skillet over medium-high heat. Brown pork on all sides in the skillet.
- Mix the tomatoes, olives, wine, rosemary and garlic in a bowl. Pour over the pork. Season with salt and pepper.
- Place skillet with pork in the preheated oven, and bake 30 minutes, to a minimum internal temperature of 145 degrees F (63 degrees C).
- Remove pork from skillet, leaving remaining tomato mixture and juices. Place skillet over medium heat, and gradually mix in the cream. Stirring constantly, bring to a boil. Reduce heat to low, and continue cooking 5 minutes, until thickened. Slice pork, and drizzle with the cream sauce to serve.

This recipe does not take much time, it's an old stand by. Everybody in my family loves it. Try it I'm sure you will like it.

Steps:
- 1. Put first 10 ingredients into a large saucepan.
- 2. Bring to a boil and simmer, uncovered, for 1 hour stirring occasionally.
- 3. Trim meat from chops, leaving it in large pieces. Brown on all sides in a skillet.
- 4. Add meat and drippings to sauce and simmer for 1 hour longer.
- 5. Cook and drain spaghetti. Put on hot platter and cover with pork and sauce.
- 6. Makes 4 Servings
- 7. TIP: remove bay leaf before serving
