Step by easy step recipe for a Native American all-purpose flat bread dating back to the nineteenth century. Fry bread is considered a food of inter-tribal unity and is made at all Indian pow wows. It has a crispy outside and a chewy inside. Serve with butter & honey, powdered sugar, or cinnamon & sugar. Or add 'taco' ingredients to the top to make an Indian taco bread salad. You can also fill these with anything then fold them up to eat. Or simply serve plain with soup, stew, etc. *EDITED TO ADD: This is an old recipe and I know many of us no longer use so much salt - if that's the case for you then I suggest REDUCING THE SALT BY HALF.

2 cups oil (for frying)
4 cups all-purpose flour
3 tablespoons baking powder
2 tablespoons salt
2 1/2 cups warm milk (more or less)

Steps:

  • In a heavy large frying pan heat the oil to 365 degrees; Oil is hot enough if a small test piece of dough dropped in the oil begins cooking almost immediately and rises to the top.
  • Mix together dry ingredients in a large bowl; *see note about salt.
  • Gradually add warm milk and mix to make a soft dough.
  • When the dough has pulled together, cover and let sit in a warm place for 10 to 15 minutes.
  • Break off a golf ball sized piece of dough and pat it out flat in your hand, no thicker than 1/4 inch.
  • Place 2 or 3 flats at a time into the hot oil and when they begin to bubble flip them over and fry until they're a nice light golden brown.
  • Remove and drain on paper towels then serve hot (keep them covered in a bowl until you're done frying).
  • You can make larger flats; just make sure they're no thicker than 1/4" and fry one at a time.

The Navajo traded with the Spanish, Mexican, Pueblos, Apache, Comanche ,and even the early American pioneers. Around 1846, large numbers of pioneers moved into the area and the cavalry came with them....

NAVAJO FRY BREAD
1 c unbleached white flour
1/4 tsp salt
1 tsp powdered milk
1 tsp baking powder
1/2 c water
vegetable oil for frying
NAVAJO TACO FILLING
1 lb ground beef (browned)
1 Tbsp red chili powder
1 1/2 tsp garlic
1/2 tsp oregano, dried
salt to taste
1/2 tsp sage, dried
1/2 tsp onion powder
FRESH TOPPING
1 small onion, chopped
1 large tomatoes, choped
1/2 medium lettuce head (chopped)
pico de gallo opt
salsa opt
sour cream opt
black olives opt
PINTO BEANS
3 can(s) pinto beans, cooked
salt and pepper to taste
garlic to taste
1 1/2 c cheese colby jack (shredded) opt

Steps:

  • 1. Fry bread is wonderfully lumpy (puffed here and there). It can be served as a dessert or used as a main dish bread. Our family will often take them and stuff them, much like one might use bread or tortilla to dip into their food.
  • 2. Sift together the flour, salt, powdered milk, and baking powder into a large bowl. Pour the water over the flour mixture all at once and stir the dough with a fork until it starts to form one big clump.
  • 3. Flour your hands. Using your hands, begin to mix the dough, trying to get all the flour into the mixture to form a ball. NOTE: You want to mix this well, but you do NOT want to knead it. Kneading it will make for a heavy Fry Bread when cooked. The inside of the dough ball should still be sticky after it is formed, while the outside will be well floured.
  • 4. Cut the dough into four (4) pieces. Using your floured hands, shape, stretch, pat, and form a disk of about 5 to 7 inches in diameter. NOTE: Don't worry about it being round. As Grandma Felipa would say "it doesn't roll into your mouth."
  • 5. Heat the vegetable oil to about 350 degrees F. NOTE: You can check by either dropping a small piece of dough in the hot oil and seeing if it begins to fry, or by dipping the end of a wooden spoon in and seeing if that bubbles. Your oil should be about 1-inch deep in a large cast-iron skillet or other large fryer.
  • 6. Take the formed dough and gently place it into the oil, being careful not to splatter the hot oil. Press down on the dough as it fries so the top is submersed into the hot oil. Fry until brown, and then flip to fry the other side. Each side will take about 3 to 4 minutes. Indian Fry Bread can be kept warm in a 200 degree F. oven for up to 1 hour. They refrigerate well and can be reheated in a 350 degree F. oven for 10 to 15 minutes before serving.
  • 7. NAVAJO TACO FIXINGS: Brown ground beef, add all spices and continue to brown till all is mixed in let simmer for 5 minutes till all is cooked...Heat Pinto beans and spices in separate sauce pan...

12 ounces Breakfast Potatoes, recipe follows
6 pieces Fry Bread, recipe follows
12 eggs
12 ounces ground beef
Blackening spice, or curry spice and fennel seeds

12 ounces black beans
6 ounces roasted red pepper, sliced
6 ounces red onion, chopped
12 ounces salsa
6 ounces Monterey Jack cheese
1 1/2 pounds medium red potatoes
Olive oil, for drizzling
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon paprika
1 teaspoon chopped fresh chives
6 1/3 cups cake flour
1 1/2 tablespoons baking powder
1 tablespoon salt
6 tablespoons powdered milk
5 tablespoons shortening
2 cups water
Vegetable oil, for frying

Steps:

  • Prepare the Breakfast Potatoes according to the recipe below. While potatoes are cooking, prepare the Fry Bread according to the recipe below. In a medium pan, scramble the eggs and set them aside. Season the beef on each side with blackening spice. In a large skillet over medium heat, saute the beef until it is cooked until a medium doneness. Add the Breakfast Potatoes, black beans, and roasted peppers to the pan with the beef and stir until combined and heated through.
  • Preheat the oven to 350 degrees F. Place the fry bread on a baking sheet, and top each piece with some of the beef mixture. Top each taco with the scrambled eggs, onion, salsa, and cheese. Put the tacos in the oven and bake until the cheese is melted. Serve immediately.
  • Preheat the oven to 425 degrees F. Cut the potatoes into quarters and put them in a large bowl. Drizzle olive oil over the potatoes and mix until lightly covered. In a medium bowl, combine the salt, pepper, onion powder, paprika, and chives and mix well. Pour the spice mix over the potatoes and mix well. Put the potatoes on a large baking sheet and bake until soft and browned, about 40 minutes.
  • In a large bowl, mix the dry ingredients together. Add the shortening little by little until small balls form. Add 1 cup of water and mix it well with your hands; then add the rest of the water and knead the dough well. Cover the dough and let it rest for 30 minutes.
  • Divide the dough into 6 balls and then shape each ball into a flat circle, about 6 inches across. Fill a large heavy saucepan with 2 to 3 inches of cooking oil and heat over medium-high heat; the oil should be at 350 degrees F before you begin frying. Fry the rounds in the oil, in batches, until golden brown. Place the fry bread on paper towels to soak up excess grease.

Fry bread is just that: a bread that is fried. Use it to make Navajo Tacos (with pinto beans, meat, cheese, salsa) or bacon/eggs/cheese/salsa for breakfast.

Steps:

  • 1. Whisk together the flour, baking powder, and salt. Add the water and stir to make a stiff, sticky dough. Let set for about 30 minutes.
  • 2. Use a large knife to cut off pieces that will make about a 6-inch circle. This isn't a "rule," as you can make any size manageable or for your specific use. Heat your oil to frying temp. If needed, you can heat your oven so that the fried pieces can be kept warm while you work on the rest of the dough.
  • 3. To fry the bread, carefully slide the dough into the oil. Watch to ensure they don't get too dark. Use tongs to flip each piece and cook the other side. Drain on paper towels. Seal uneaten bread and store in the fridge. They can be reheated in a microwave.

We like spicy foods, so I use Herdez Brand Salsa (in the 7 oz. can), but feel free to substitute Mild. If you've never tried Herdez, it's available at most Walmarts nation wide.

1 cup salsa (canned, we use Herdez)
16 ounces refried beans
1/2 teaspoon garlic powder
2 cups longhorn cheese (grated)
2 cups iceberg lettuce (shredded)
1 cup salsa (for garnish)
4 (8 inch) flour tortillas
oil
black olives (optional) or green onion (optional)

Steps:

  • Brown ground beef & drain.
  • Heat refried beans, salsa, garlic powder in a large saucepan, add drained ground beef.
  • Fry flour tortillas in oil until light golden brown, drain.
  • Spread fried tortillas with meat mixture, top with lettuce & cheese.
  • Garnish with black olives and or green onions and salsa.
