AVOCADO RICE
My brother in New Zealand sent me this, it's incredibly simple and delicious. I have no idea where he got it, I think he made it up.

Steps:
- Rinse rice, add coconut, and cook rice according to package directions.
- Let cool a couple of minutes when done.
- Seed& peel avocado, dice it up, and add to rice.
- Add mustard and chili powder.
- Stir well and serve.

AVOCADO LIME RICE WITH GRILLED SHRIMP
This recipe combines veggies, grains, and protein for a meal that is ready in just over a half hour (including prep), and serves four.

Steps:
- Cook rice according to package directions. Meanwhile mix avocado with lime juice, cumin and half the salt and half the cilantro or parsley. Stir into rice.
- Meanwhile, preheat grill to high, grease grate well. Toss shrimp with oil, garlic, lime zest and remaining salt. Thread evenly onto metal or soaked wooden skewers. Grill skewers, for 2 to 3 minutes per side or until shrimp start to curl and turn pink.
- Serve rice with shrimp skewers. Garnish with remaining cilantro or parsley.

My cousins and I went to The Cheescake Factory and this sandwich was on the menu. It sounded really delicious but unfortunately, it was like $11 or $12 dollars so I settled for something else. But if you also think it sounds awesome, then try it and let me know if it really is. :)

- On fry bread, spread any condiments that you desire such as mayonnaise, yellow mustard, creole mustard, etc. Slice onion, tomato and avocado and layer on top of thinly sliced ham. Swiss cheese should be last ingredient to go on, unless otherwise desired. Serve with french fries or a tossed green salad.
