4 boneless skinless chicken breasts, pounded to even thickness and brined in saltwater (*see easy instructions below)
1 Tablespoon melted butter or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (I prefer smoked paprika)
optional: fresh lemon wedges

Steps:

  • To brine the chicken breasts, fill a large bowl with 1 quart of warm water and 1/4 cup kosher salt. Stir to combine until most of the salt is absorbed. Add the whole chicken breasts and let them sit in the mixture to brine for 15 minutes. Or you can also also cover the bowl and refrigerate for up to 6 hours. Remove the chicken breasts from the brine, rinse them with cold water, then pat them dry with some paper towels. (If the chicken breasts you purchased have already been pre-brined in a sodium solution, skip this brining step completely.)
  • Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes before using.
  • Cut the chicken breasts into 1-inch pieces. Add them to a large mixing bowl and drizzle evenly with the olive oil. Toss to combine.
  • In a separate small bowl, whisk together the salt, pepper, garlic powder and paprika until combined. Sprinkle the seasoning mixture evenly over the chicken. Then toss for 1 minute, or until the chicken is evenly coated with the seasoning. Thread the chicken evenly onto the skewers.
  • Once the grill is hot, place the chicken kabobs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through (no longer pink on the inside).
  • Transfer the kabobs to a clean plate, and loosely tent with aluminum foil. Let the chicken rest for at least 5-10 minutes.
  • Then serve warm while the chicken is hot and juicy, drizzled with freshly-squeezed lemon juice if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

4 scallions
1/4 cup packed fresh dill
1/4 cup packed fresh parsley
1/4 cup extra-virgin olive oil, plus more for the grill
Kosher salt
Pinch of red pepper flakes
8 skinless, boneless chicken thighs (about 5 ounces each)
1 lemon, cut into 8 wedges
Freshly ground pepper
1/2 cup plain whole-milk yogurt

Steps:

  • Cut the white and light green parts of the scallions into 1 1/2-inch pieces; set aside. Chop the dark green parts and transfer to a blender. Add the dill, parsley, olive oil, 3 tablespoons water and 1/2 teaspoon salt and puree until smooth. Stir in the red pepper flakes. Remove 2 tablespoons of the puree to a small bowl for the sauce; refrigerate until ready to use. Transfer the remaining puree to a large bowl. Add the chicken and toss to coat. Let marinate in the refrigerator at least 4 hours or overnight.
  • Soak 8 wooden skewers in water for 30 minutes to prevent scorching. Preheat a grill to medium. Thread 2 chicken thighs onto double skewers, placing lemon wedges and scallion pieces between the thighs; season the kebabs generously with salt and pepper. Oil the grill grates. Grill the kebabs until the chicken is lightly charred and cooked through, 8 to 10 minutes per side. Transfer to a cutting board and let rest 5 minutes.
  • Mix the yogurt with the reserved scallion puree and season with salt. Cut the chicken in half to separate each pair of skewers. Squeeze the grilled lemon over the chicken; serve with the yogurt sauce.

MEDITERRANEAN CHICKEN KEBABS

3 chicken fillets (cut in 1-inch cubes)
2 red bell peppers
2 green bell peppers
1 red onion
2/3 cup extra virgin olive oil (divided)
juice of 1 lemon (divided)
6 clove of garlic, chopped (divided)
2 teaspoon paprika (divided)
2 teaspoon thyme (divided)
4 teaspoon oregano (divided)
4 teaspoon salt (divided)
2 teaspoon freshly ground black pepper (divided)

Steps:

  • Mix 1/2 of all ingredients for the marinade in small bowl. Place chicken in a ziplock bag and pour marinade over it. Marinade in the fridge for at least 30 minutes.
  • Mix the other HALF of the ingredients in the same bowl pour into a ziplock bag with the vegetables. Marinade for at least 30 minutes.
  • If you are using wood skewers, while the chicken and veggies are marinating, soak the skewers in water for about 15 minutes. You need to soak wooden skewers in water for about 20- 30 minutes to keep them from igniting right there on the grill. I have also noticed that it's much easier to slide out the meat and veggies on your plate if the skewers have been soaked before grilling.
  • Thread the chicken and peppers and onions on the skewers. I usually place about 5-6 chicken pieces and a combo of peppers and onion in between.
  • Heat an outdoor grill or indoor grill pan over medium-high heat. Spray the grates lightly with oil and grill for about 5 minutes on each side, or until the center is no longer pink.
  • You can also bake this Mediterranean chicken skewers in the oven if you want to. Preheat the oven to 425 F. Place chicken skewers on roasting racks over two foil-lined baking sheets and bake for about 10-15 minutes, turn over once and bake for another 10 - 15 minutes on the other side, or until they are baked through.

4 6-8 ounce fresh chicken breasts
4 12-inch metal skewers
16 large marinated artichoke quarters
16 cherry tomatoes
8 large mushrooms cut in half
1 stick softened salted butter
2 tablespoons white wine
1 finely-minced garlic clove
1 tablespoon freshly-chopped parsley
Salt and Pepper to taste

Steps:

  • Start by cleaning and oiling your grill. Then, heat it to 500-550 degrees F.
  • Mix the butter, wine, garlic, and parsley in a small bowl. Then, set aside at room temperature.
  • Cut each chicken breast into 4 equal strips lengthwise. Assemble the skewers with a mushroom half, and then a strip of chicken folded in half, then an artichoke piece, then a cherry tomato. Repeat. Each skewer should hold 4 of each ingredient on them.
  • Season each skewer with salt and black pepper and place them on the hot grill. Turn the skewers every 2-3 minutes until the chicken reaches an internal temperature of 165 degrees F. Pull the skewers to the front of the grill and baste them with the softened herb butter on all sides. Then, remove from the grill and dig in.
