Nantucket Bay Scallops in Tequila, Citrus, and Chile Dressing image

1 pound Nantucket bay scallops, roughly diced
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon lemon zest
1/4 cup tequila
1 teaspoon hot pepper sauce
1 tablespoon honey
1/2 red bell pepper, minced
1 serrano chile, minced
1/8 cup fresh lime juice
1/8 cup extra-virgin olive oil
3 tablespoons roughly chopped mint
4 tablespoons roughly chopped cilantro
Salt and pepper
Scallop shells
Seaweed
Lime wedges
Sea salt

Steps:

  • Clean the mussels off the scallops and reserve in the refrigerator on ice until needed.
  • Combine all of the ingredients to make the marinade and add the scallops 15 minutes before serving. Keep the scallops in the marinade in the refrigerator until ready to serve.
  • To serve, fill a glass bowl with crushed ice. Place the shells on top of the ice and fill with the scallops and dressing. Garnish with seaweed and lime wedges. Just before serving, sprinkle some sea salt over the scallops.

3/4 cup sweet red pepper, diced
3/4 cup onion, diced
2 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon jalapeno pepper, diced
1 1/4 teaspoons garlic powder or 3 cloves fresh, diced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 pound linguine
3/4 pound shrimp
3 tablespoons Italian parsley, chopped
3 tablespoons cilantro, chopped
1/2 pound chunk of Parmesan cheese

Steps:

  • Saute red peppers and onions in oil till tender, 5 to 10 minutes, then stir in lime juice, jalapeno peppers, garlic powder, salt and pepper.
  • Meanwhile, boil pasta in salted water till al dente, 10 to 12 minutes for dry, 1 to 2 for fresh. Drain, reserving 1 1/4 cups of liquid.
  • Pour pasta cooking liquid over peppers and onions, bring to a boil and add shrimp. Boil till shrimp turn just pink. Add pasta to pan. Quickly mix in parsley and cilantro and season with salt and pepper.
  • Divide among four plates and grate an ounce of cheese over each.

When you've got a perfectly fresh piece of fish to work with, there's little needed to complement its briny flavors. A little lime, some chile, fresh cilantro, and a good-quality olive oil turn simple seafood into a sophisticated starter.

1 (6-ounce) boneless sea bass fillet
1 small Thai chile, thinly sliced
Zest of 1/2 a lime
Fresh cilantro leaves, for garnish
Sea salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lime juice

Steps:

  • 1. Slice the sea bass as thinly as possible with a sharp knife, discarding the skin. Lay the slices on a cold serving plate, overlapping slightly.
  • 2. Sprinkle the fish with the sliced chile, lime zest, cilantro leaves, and a generous pinch each of salt and pepper. Drizzle with the oil and lime juice just before serving.

1/2 pound black sea bass fillet (or other suitable raw fish -- wild salmon, fluke, bream, tuna, bluefish, Spanish mackerel, cod, striped bass or any other fish in season), skinned
Juice of 1/2 lime or lemon
Sprinkles of Hawaiian black lava or French
coarse sea salt
2 turns fresh black pepper
2 ounces toasted pine nuts, minced scallion, snipped chives, sliced asparagus, arugula or sorrel or any herb in season
4 teaspoons extra-virgin cold-pressed olive oil

Steps:

  • Slice the fillet into 1/4-inch slices, against the grain, and arrange in a loose fan shape on 4 chilled plates.
  • Spoon the citrus juice over the fish, then sprinkle with a small amount of sea salt and the pepper.
  • Top each serving with 1/4 of the pine nuts and a teaspoon of the olive oil and serve immediately.

FRIED SHRIMP

Peanut oil for deep-frying
2 pounds small, large or jumbo shrimp, peeled, deveined, tails intact
1 cup milk
2 large eggs
1 cup cracker meal

Steps:

  • Heat 3 inches of oil to 365 degrees in a Dutch oven.
  • Place the shrimp in a medium bowl. Mix the milk and eggs in a glass measure with a fork until blended and pour over the shrimp. Toss the shrimp until coated and drain in a colander.
  • Roll the shrimp in the cracker meal and shake off excess.
  • Fry the shrimp till golden, turning as necessary, 1 to 2 minutes. Remove with a strainer or Chinese spider (also called a skimmer) and shake off the excess oil. Serve with tartar sauce, if desired.
