This is one of the many recipes from my grandmothers cookbook. She passed away in May of 2005 and I am recording her wonderful recipes for my family and the many generations that will follow. Number Of Ingredients 7

3 1/2 cups flour
1 cup Crisco
1 teaspoon salt
1/2 cup margarine
1 large egg
1 tablespoon vinegar
6 tablespoons cold water

Steps:

  • Cut crisco and butter into the flour and salt. Beat egg, vinegar and water.
  • Mix the egg mixture into the flour mixture.
  • Knead together then roll out into 3 pie crusts.
  • Nanny would put them into a pie dish and cover and freeze for up to a few weeks.
  • For a baked crust bake the crust for about 15 minutes at 375° till golden.

Number Of Ingredients 13

1 1/2 cups crabmeat
2 tablespoons bacon fat, melted
1 medium onion
1 green onion
2 garlic cloves
2 tablespoons celery
2 tablespoons bell peppers
1 tablespoon parsley
3/4 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme

Steps:

  • Chop all the veggies.
  • Saute veggies in the bacon fat drippings unti soft, but not brown.
  • Mix the sauted veggies with the crab meat, bread crumbs and spices.
  • With a sharp knife make a slit just under the skin of the flounder. Fill the pocket you create with the mixture.
  • Brush the flouder with melted butter.
  • Bake 30 minutes covered with foil at 375*.
  • Uncover and brown for 10 minutes.
  • This will stuff 1 big or a couple small flounder.

This is my grandmother's (Nanny) chocolate pie recipe. Everyone that eats it loves it and can't eat enough. Super simple and delicious.

Number Of Ingredients 7

1/2 lb butter
8 eggs
2 cups evaporated milk
2 cups sugar
5 tablespoons cocoa
5 tablespoons flour
2 tablespoons vanilla

Steps:

  • This recipe makes two 9 inch pies. Cook pie shells first. Melt butter, add dry ingredients, add 2 whole eggs and six egg yolks. Save other egg whites for meringue. Add milk & vanilla last. Mix all well with a whisk. Cover with paper towel, cook in microwave for three minutes and stir. Cook for a total of 12 minutes, stirring after each 3 minute interval. Depending upon your microwave, twelve minutes should yield a stiff (grainy) pudding like texture.
  • Pour into pie shells.
  • Allow egg whites to sit at room temperature until you need to prepare the meringue. Beat 6 egg whites until stiff. Add one tablespoons of sugar for each egg white. Add 2-3 drops of vanilla. If not stiff add a pinch of salt or cream of tartar. "Ice" pies with meringue and brown in oven.

Number Of Ingredients 15

2 lbs fresh peeled shrimp
1 lb crabmeat
2 (15 ounce) cans chopped tomatoes
3 stalks celery, chopped
1 bell pepper, chopped
4 garlic cloves, minced
4 teaspoons butter
3 quarts water
2 cups okra, cut up and cooked
1 teaspoon Worcestershire sauce
salt
pepper
4 teaspoons cajun seasoning
1/2 cup parsley, finely chopped
basic roux

Steps:

  • To make the Basic Roux: Heat 3/4 cup oil in a iron skillet. When oil is hot, gradually add 1 cup flour, stirring continuously until well mixed. Lower heat and continue to stir until chocolate brown. When roux is chocolate brown remove from skillet and set aside. If it remains in skillet it will continue to cook and get to dark.
  • In a large pot-not a black iron pot-saute onion,celery,bell pepper, garlic and okra in butter for about 10 minutes. Add roux, water and worcestershire.
  • Cook for 1 hour.
  • Add all other ingredients, except for parsley. Cook for 1 more hour.Adjust seasoning if needed- salt and pepper are to taste. Add parsley.
  • Serve over rice.
  • This is better the next day- if there is any left. This says serves 6 - Nanny usually made a double batch.

1 lb ground beef
2 teaspoons salt
2 teaspoons black pepper
1 cup tomato sauce
2 (14 ounce) cans chopped stewed tomatoes
1 yellow onion, chopped
1 green bell pepper, chopped
1 garlic, pods chopped
2 tablespoons sugar
2 tablespoons Worcestershire sauce
2 tablespoons italian seasoning
3 bay leaves

Steps:

  • Brown the beef.
  • Add the chopped veggies.
  • Add tomato sauces & spices.
  • Simmer 4 hours--the longer the better.
  • Nanny always put it in her crock pot to simmer all day.
  • Sometimes she added 1 T grape jam.
