Seriously Good Vegetable Soup image

This vegetable soup recipe is seriously so good! It's easy to make, and full of veggies and fresh flavor. If you're feeing under the weather or just wanting to lighten up your meals, this soup is the answer. Recipe yields 6 bowls of soup.

Number Of Ingredients 17

4 tablespoons extra-virgin olive oil, divided
1 medium yellow or white onion, chopped
3 carrots, peeled and chopped
2 celery stalks, chopped
2 cups chopped seasonal vegetables, such as sweet potatoes, green beans, butternut squash, potatoes, bell pepper, zucchini or yellow squash
1 teaspoon fine sea salt, divided, to taste
6 cloves garlic, pressed or minced
1/2 teaspoon curry powder
1/2 teaspoon dried thyme
1 large can (28 ounces) diced tomatoes
4 cups (32 ounces) vegetable broth
2 cups water
2 bay leaves
1/2 teaspoon red pepper flakes, reduce or omit if sensitive to spice
Freshly ground black pepper, to taste
2 cups chopped kale or collard greens or chard (thick ribs removed), or spinach
1 tablespoon lemon juice

Steps:

  • Warm 3 tablespoons of the olive oil in a large Dutch oven or soup pot over medium heat. Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and 1/2 teaspoon of the salt. Cook, stirring often, until the onion has softened and is turning translucent, about 6 to 8 minutes.
  • Add the garlic, curry powder and thyme. Cook until fragrant while stirring frequently, about 1 minute. Pour in the diced tomatoes with their juices and cook for a few more minutes, stirring often.
  • Pour in the broth and water. Add 1/2 teaspoon more salt, 2 bay leaves and the red pepper flakes. Season generously with freshly ground black pepper. Raise the heat and bring the mixture to a boil, then partially cover the pot and reduce heat to maintain a gentle simmer.
  • Cook for 25 minutes, then remove the lid and add the chopped greens. Continue simmering for 5 minutes or more, until the greens have softened to your liking.
  • Remove the pot from heat and remove the bay leaves. Stir in the lemon juice and remaining 1 tablespoon of olive oil. Taste and season with more salt, pepper and/or red pepper flakes. (You might need up to ½ teaspoon more salt, depending on your vegetable broth and your personal preferences.) Divide into bowls and enjoy.

1 tablespoon olive oil
Two 6-ounce boneless, skinless chicken breasts, cubed
1 cup quinoa, rinsed
2 stalks celery, chopped
2 carrots, diced
1 sweet potato, cubed
1 small yellow onion, diced
1 Yukon gold potato, cubed
Kosher salt and ground black pepper
6 cups Beef Bone Broth, recipe follows
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh sage
3 leaves kale, cut into ribbons
4 pounds beef bones, including marrow, knuckles and feet
1 tablespoon tomato paste
2 carrots, roughly chopped
2 stalks celery, roughly chopped
1 head garlic, sliced in half
1 yellow onion, cubed
1 tablespoon peppercorns
2 sprigs fresh thyme
2 bay leaves

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the chicken, quinoa, celery, carrots, sweet potato, onion, Yukon gold potato and some salt and pepper to the pot. Top with the Beef Bone Broth and bring to a simmer. Cover and cook until the vegetables are tender and the chicken and quinoa are cooked through, 12 to 15 minutes. Stir in the oregano, thyme, sage and kale and cook until the kale is tender, another 3 minutes.
  • Preheat the oven to 450 degrees F.
  • Rinse the beef bones thoroughly with cold water, then pat dry and put on a baking sheet. Add the tomato paste, carrots, celery, garlic and onion and mix with the bones. Roast until the bones char, about 20 minutes.
  • Transfer the bones and veggies to a slow cooker. Add the peppercorns, thyme and bay leaves. Cover with water and cook on high for 6 hours.
  • Strain the broth through a colander into a bowl (discard the bones and vegetables).

1 lb beef stew meat
3 c red cabbage, shredded
1 carrot, chopped
1/4 c celery, chopped
1/2 c onion diced
9 oz can of baby corn
1 qt tomatoes {home canned} or 28 oz. can
1 qt home canned green beans or 1/2 bag frozen
2 c diced potatoes
1 Tbsp salt {or to taste}
pepper to taste

Steps:

  • 1. Spray pan with Pam. Brown stew meat and onions. Drain if needed. Add meat and rest of ingredients to crock pot and cook on high for 3 hours and then turn to low and simmer until ready to serve.

1 medium yellow onion (chopped)
2 large carrots (chopped)

28 oz canned diced tomatoes
60 oz vegetable broth ( low-sodium)
3 medium potatoes (diced)
1 cup green beans (chopped)
3 bay leaves
2 tsp salt (or to taste*)
1 tsp ground black pepper
1 cup frozen sweet corn
1 cup frozen sweet peas
1/2 cup green onions (chopped)
1/4 cup fresh parsley (chopped)

Steps:

  • Preheat a heavy soup pot or dutch oven over medium heat and add 2 Tbsp olive oil. Add chopped onions and carrots and saute for 6-8 minutes, stirring occasionally until golden.
  • Add celery, canned tomatoes (with juice), broth, potatoes, green beans, bay leaves, salt, and pepper. Bring it to a boil then reduce heat to a simmer and cook for 25 minutes.
  • Once the vegetables are tender, add corn, sweet peas, green onion, and parsley. Season with salt to taste and simmer for another 5-8 minutes. Remove from heat and serve warm.

1 tablespoon extra virgin olive oil
1 diced onion
3 large diced carrots
Seasonings to taste, like cumin, coriander, curry, black pepper, dash of nutmeg
2 cans low-sodium chicken broth
1 can condensed tomato soup, undiluted
1 large can diced tomatoes
1 package frozen mixed vegetables, or more if desired
1 tablespoon balsamic or red wine vinegar
1 bunch kale
Extra-virgin olive oil to coat
Sea salt to taste

Steps:

  • Heat the oil in a large saucepan and saute the onions and carrots 5 minutes.
  • Add seasonings, followed by chicken broth, tomato soup, diced tomatoes, frozen vegetables and vinegar.
  • Bring to a low boil, reduce heat and simmer 30 minutes or more.
  • Preheat the oven to 400 degrees.
  • Wash and dry a bunch of kale. Cut out the tough veins and slice the kale into chip-size pieces. Place the pieces in a sealable plastic bag and sprinkle with olive oil.
  • Transfer the kale to a baking tray and bake for 15 minutes. Sprinkle with a little sea salt.

6 slices bacon, chopped
2 medium yellow onions, chopped
2 cloves garlic, minced
3 tablespoons flour
Kosher salt and freshly ground black pepper
4 cups chicken broth
1 cup heavy cream
3 pounds russet potatoes, chopped
1 cup sour cream
3 cups shredded cheddar
4 scallions, sliced, for garnish

Steps:

  • Set a large Dutch oven over medium-high heat. Add the bacon and cook until crispy, 6 to 8 minutes; remove to a plate. When cool, crumble and set aside for garnish.
  • Add the onions and garlic to the pot, and cook in the rendered bacon grease until softened, 4 to 5 minutes. Add the flour and some salt and pepper, and stir until combined. Cook for 3 minutes, so the raw flour taste cooks out. Add the chicken broth and heavy cream, whisking to remove any flour lumps. Add the potatoes and cook over medium heat until tender, about 10 minutes.
  • With a potato masher, break up the cooked potatoes¿this will yield a thick and chunky consistency. Whisk in sour cream and then the shredded cheddar; let it melt through.
  • Serve garnished with crispy crumbled bacon and sliced scallions.

  • Combine all ingredients in slow cooker. Do not drain vegetables.
  • Add water to fill slow cooker to within 3 inches of top.

  • Variation: Add 1 large onion, sliced, 2 cups sliced carrots, and 3/4 cup pearl varley to mixture before cooking.
