This is an excellent treat that is great to have on hand around Christmas.

1 (12 ounce) package crispy corn and rice cereal (such as Crispix®)
3 cups pecan halves
3 cups whole almonds
2 cups brown sugar
1 cup corn syrup
½ cup butter
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly butter a large roasting pan.
  • Mix corn and rice cereal, pecans, and almonds together in the prepared roasting pan.
  • Combine brown sugar, corn syrup, and butter in a saucepan; bring to a boil. Heat to 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove saucepan from heat and stir vanilla extract into syrup.
  • Drizzle syrup over cereal mixture and toss to coat.
  • Bake cereal mixture in the preheated oven for 30 minutes; stir and continue baking for 30 minutes more. Spread cereal mixture in 1 layer onto 2 lightly buttered baking sheets, separating any large chunks with 2 forks; allow to cool.

4 tablespoons salted butter, plus more for greasing
One 10-ounce bag marshmallows
1/4 teaspoon salt
6 cups rice cereal
One 10-ounce bag mini white marshmallows
Rainbow sprinkles, to decorate

Steps:

  • Thoroughly grease a 9- by 13-inch pan with softened butter.
  • In a large pot, melt the butter. Stir in the regular marshmallows until they're totally melted. Stir in the salt. Remove from the heat and set aside.
  • Pour in the cereal, folding gently the whole time until all combined. Then pour in the mini marshmallows and gently fold in. Turn into the buttered pan and press flat. Immediately top with rainbow sprinkles.
  • Let cool completely, and then cut into squares.

1 (6 ounce) package semisweet chocolate morsels (1 cup)
1/4 cup peanut butter
1/2 cup dry roasted peanuts (optional)
6 cups other Rice Chex or 6 cups Corn Chex
1 cup powdered sugar

Steps:

  • In a large microwave-safe bowl, melt chocolate on HIGH for 1 minute.
  • Stir and heat an additional 30 seconds at HIGH or until melted.
  • Stir in peanut butter and peanuts.
  • Gently stir in cereal, until well coated.
  • Place powdered sugar in 2-gallon storage bag.
  • Add cereal and close bag.
  • Gently toss cereal mixture until well-coated.
  • Store in airtight container in refrigerator.
  • Note: You can make this on the stove-top.
  • Use a double boiler to melt chocolate, stirring constantly.
  • Remove from heat.
  • Stir in peanut butter and peanuts.
  • Pour mixture over cereal and proceed with recipe.

4 cups miniature marshmallows
5 cups crisp rice cereal

Steps:

  • Melt butter in large sauce pan over low heat. Add marshmallows and stir until melted and well-blended. Cook 2 minutes longer, stirring constantly. Remove from heat.
  • Add cereal. Stir until well coated.
  • Using buttered spatula or waxed paper, press mixture evenly and firmly in buttered 13 x 9 inch pan. Cut into 2 x 2 inch squares when cool.
