Steps:
- Saute the livers in half the fat until they are no longer pink inside, about 5 minutes.
- Remove from the pan and add the onion and the remaining fat.
- Saute the onion until golden.
- Grind the liver-onion mixture and the eggs using a coarse blade on your grinder.
- Add the crispy fried skin and tiny pieces of crunchy friend chicken fat if you wish.
- Add salt and pepper.
- Serve with toast points or crackers.

This recipe was given to me by my mother. The kids enjoy it, and it is perfect for serving on crusty bread.The cook time is including the chill time.

Steps:
- Bring chicken broth and lentils to a boil in large pan.
- Cover and reduce heat to simmer.
- Stir occasionally for 30 minutes or until tender.
- Drain if necessary.
- Saute chopped onions in hot vegetable oil over heat for 5 minutes or until tender.
- Process 1/3 of lentils, 1/3 of onions and 1/3 of walnuts in food processor in 3 batches until mixed smooth.
- Stir mix with salt and pepper.
- Line a 3 cup mold with plastic wrap.
- Put mixture in mold.
- Chill for 8 hours, unmold onto baby leaf lettuce.
- Garnish with green onions and serve on crackers and celery sticks.
MIRJ'S HEART-ATTACK-ON-A-PLATE CHOPPED CHICKEN LIVER
This is my locally famous chopped liver. It's definitely not healthy, but it is really good. I have been promised kingdoms and children have been named after me because of my chopped liver. ;-)

Steps:
- Cook the livers until done in any way you prefer.
- I grill them under the broiler.
- Chop the onions medium-coarsely and fry in the oil until browned, but not burnt.
- You have to babysit the onions, constantly stirring, so they don't burn.
- This can take some time, pull up and chair with a good book, or do other things but keep an eye (and nose) out for the onions.
- With the steel knife, grind the livers in a food processor.
- Add the hard-boiled eggs and give it another whirl until they are incorporated with the liver.
- Add the onions and any extra oil from the bottom of the pot.
- Scrape every last bit of onion into the food processor bowl, this is where the major flavor comes from.
- Add salt and pepper to taste.
- You can also add any other spices that you like, but this detracts from the traditional flavor of Jewish chopped liver.
- Whirl everything around in the food processor until it reaches the consistency you want.
- Some people prefer it coarse, some like it very fine, almost pate-like.
- Scrape the chopped liver into a serving bowl and chill in the fridge for at least 2 hours.
- Serve with crackers or challah.
- Try to avoid the temptation to just shovel it into your mouth with a spoon directly from the bowl.
CHICKEN LIVERS WITH CARAMELIZED ONIONS AND MUSHROOMS

- Put onions in a large skillet over medium heat. Cover and cook, stirring infrequently, until onions are dry and almost sticking to pan, about 20 minutes.
- Stir in a tablespoon of oil or butter and a large pinch of salt and a few grindings of black pepper, add rosemary and turn heat down to medium-low. Add mushrooms and cook, stirring occasionally, until mushrooms release their liquid and it evaporates, about 15 minutes more. Remove vegetables from pan; set aside.
- Wipe pan with a paper towel, put it over medium-high heat and add remaining oil or butter. When oil is hot or foam from butter has subsided, add chicken livers. Keep heat high and cook livers quickly, turning them until brown and crisp on both sides but still pink on inside, about 3 or 4 minutes total. Remove from pan.
- Return vegetables to pan along with vinegar and 2 or 3 tablespoons water, just enough to deglaze; stir well to combine and serve with livers and crusty bread, or on toast.

- Place water, lentils, and bouillon cubes in a pot. Cover pot and cook about 30 minutes or until tender. Drain well.

Steps:
- Bring water to a boil over high heat.
- Add 2 tablespoons salt and all the beans.
- Return to a boil and cook until tender, 8-10 minutes.
- Drain and let cool.
- Heat oil in a skillet over medium-high heat.
- Add onions and toss to coat with oil.
- Cover and reduce heat to medium.
- Cook 10 minutes, tossing once after 5-6 minutes.
- Uncover and stir.
- Cook, stirring and scraping occasionally, for 20-30 minutes, depending on how brown you want them.
- Place half the onions, half the walnuts, half the beans, and half the eggs in a food processor.
- Pulse until mixture is fine but not pasty, scraping bowl as needed.
- Repeat with remaining onions, walnuts, beans and eggs.
- Place both batches in a bowl and add the pepper and remaining salt.
- Tightly cover and refrigerate for several hours before serving.
