3 DAY SWEET PICKLES
My Grandmother used to make these pickles when I was a little kid in 1/2 gallon paper milk cartons. I am trying to find her original recipe. I found this one and hope it is close. Let me know how they turn out if you make them before I do. Thanks, Brian

Steps:
- Day 1-3 - Soak pickles in water and salt for 3 days.
- Day 3 - Drain and rinse pickles. Mix 2 cups of vinegar to 1 cup water. Pour over pickles. Bring to boil. Put in jars.
- Mix 3 cups of sugar, 2 cups of vinegar and ½ tsp allspice. Heat. Pour over top of pickles and add a pinch of alum to each jar. Seal.

NANA'S THREE DAY CHEERFUL SWEET PICKLES
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This is one that was actually submitted to the cookbook by my Nana - Dorothy Parker. She has added the following note to the recipe: "Especially tasty with pork chops or roast. Chop pickles and mix with cream cheese for dark bread sandwiches".

Steps:
- Peel, seed and cut cucumbers into cubes.
- Sprinkle cucumbers with salt and cover with water.
- Let stand overnight.
- In the morning heat to boiling and then drain.
- Loosely tie spices in cheesecloth and combine with sugar and vinegar. Heat to boiling.
- Pour over drained cucumbers and let stand overnight.
- The next morning heat to boiling and then simmer until cucumbers are tender - being careful not to overcook.
- Add cherries with juice and red food coloring.
- Ladle into hot, sterilized jars and seal at once.
- Process in boiling water bath (212 degrees) for five minutes.

EASY SWEET PICKLES
I make a few jars at a time. This recipe is worth the 7 day wait, so plan ahead if making this recipe. These pickles remind me of my grandmothers 14-day pickles. I have tried this recipe with 6 gloves and the taste just isn't the same. If you don't care for gloves 6 cloves might be the route you take. Also, powdered cinnamon can be used in place of the cinnamon sticks. If you want to add the powder omit the cinnamon sticks and add 1/2 teaspoon of cinnamon. I have only used the cinnamon sticks. These pickles don't last long in this house and I hope they won't in yours either.

Steps:
- Drain pickles and reserve the liquid.
- Cut pickles into 1 inch chunks, return to the jar pickles came inches.
- Add the vinegar, whole cloves, and cinnamon to the jar of pickles.
- Add sugar alternating with a little pickle juice to the pickle jar, but make sure all sugar is added to the jar of pickles.
- Add only enough juice to cover pickles.
- (amount may very depending on how the pickles settle in the jar).
- Put lid on and shake the pickle jar until the sugar is dissolved.
- Place in the refrigerator.
- Shake once daily for 7 days.
- (For those that can't wait 7 days to try these pickles. You can dig in early, but please note the pickles are better the longer they set.).

16 DAY PICKLES
My mother got this from her sister, Martha. It's a tried and true pickle recipe. It's very similar to recipe #17490 on recipezaar. Sometimes I don't always have 2 gallons of cumcumbers but will make if I have gathered enough for 1 gallon but I go ahead and make the syrup and save it and use it on the next batch. Since the syrup has vinegar and sugar in it it will be alright and I don't even refrigerate this syrup.

Steps:
- Wash cucumbers.
- Cover with salt water (1 cup pickling salt to 1 gallon water).
- Let stand for a week.
- Keep scum off daily.
- Make sure pickles stay under water.
- Drain and cover with boiling water.
- Leave 24 hours.
- Drain, cut into slices and cover with boiling water again.
- Add 1 large tablespoon of alum.
- Let stand three days.
- Drain.
- Cover with boiling water again.
- Let stand overnight.
- Drain.
- Cover with syrup for four days.
- Syrup: 10 pounds of sugar, 2 quarts white vinegar, 3 tablespoons of Picking spice, a couple of sticks of cinnamon.
- Tie in a cheesecloth bag.
- Drop in sugar mixture and bring to a boil.
- Drain syrup and heat to boiling.
- Pack in hot jars on 4th day.
- Pour syrup over pickles and seal jars.

NANA'S ENGLISH TRIFLE
This delightful trifle recipe was given to me by my Nana in 1953. Nana served this every time we visited her. She learned this from her Mother in England, so it has been in the family for many years.

- Spread raspberry jam over sponge cakes.
- Cut cakes into 1 inch square chunks and place in base of a 2 quart round glass bowl.
- Sprinkle with Sherry.
- Spread drained fruit over sponge cake.
- CUSTARD---------------.
- Using a double-boiler, stir together milk and cornstarch in top portion of broiler.
- Heat water in lower broiler, then gently heat milk mixture.
- Add cream and sugar and continue to heat until hot, stirring frequently.
- In a small bowl, add egg yolks and 1/2 cup of hot milk and stir to blend.
- Whisk in egg mixture into remaining sauce, continue to heat and stir constantly until thickened.
- Remove from heat, stir in vanilla.
- Cool for 10 minutes.
- Spoon custard over fruit.
- Refrigerate until ready to serve.
- TOPPING---------------.
- In a chilled mixing bowl, add 1 1/2 cups whipping cream and using an electric mixer, beat until slightly thickened.
- Add vanilla extract and beat for a few seconds.
- Now add sugar gradually, beating all the while until thickened.
- Smooth half of the whipped cream over the surface of the trifle.
- Pipe remaining whipped cream decoratively around the edge of the trifle.
- Garnish with red maraschino cherries and almonds.

AWESOME & EASY SWEET PICKLES
This recipe was given to me by my Aunt Sally. It is a very simple way to make great sweet pickles. These have a bite and everyone loves them.

- Completely drain the jar of dill pickles leaving pickles in the jar. Set aside.
- Bring all other ingredients to a hard boil.
- Immediately pour over the pickles in the jar.
- Recap tightly and turn jar upside down and allow to cool. (This should reseal jar so that they can be stored indefinitely).
- (I put all the spices, except for the garlic and the cinnamon stick, in a cheesecloth type bag. I press on the bag with a wooden spoon in vinegar/sugar mixture to get more flavor. It isn't necessary, but boiling the spices in a bag keeps them from floating around in the pickles).

SWEET PICKLES FROM RIPE CUCUMBERS
Large, over-ripe cucumbers plus a family favorite recipe equals sweet, spicy pickles.

Steps:
- Cut cucumbers into large strips or pieces.
- Combine salt and 8 cups of water in a large stock pot. Stir until salt dissolves.
- Add the cucumbers. Let stand at least 12 hours.
- Drain and rinse cucumbers.
- In a large pot, combine sugar, vinegar, 1½ cups water, cinnamon and cloves. Bring to a boil.
- Add drained cucumbers.Gently boil until cucumbers begin to look transparent. You may have to do this in two separate batches if your pot is too small.
- Pack into clean pint jars.Cover with the vinegar syrup.
- Top with 2 piece canning covers. Process in a water bath canner for 10 minutes.
- Remove from canner and let sit on counter overnight.
- Pickles will improve with age, so let sit at least 3 weeks before serving.
OLD FASHIONED SWEET NINE DAY PICKLES
Love these Sweet Pickles, one of the best sweet pickle recipes in my collection and one of the best I have ever tasted. This is one of those old old recipes shared by a lady that made really great pickles. Very easily made and not as time consuming as it sounds. While modern safety method requirements may call for processing I don't process my pickles as I find it changes the taste and texture, you may do so if you wish. As with many of the old recipes some things just do not enter well ... with this one it's you have to be making up enough of each of the brine solutions to completely cover! NOTE be sure to use non - reactive containers ( stainless steel - unchipped enamel/porcelain, assure all your plastic bowls and containers are food grade)

- STEP ONE: Cut cucumbers in 1/2 inch pieces or a little larger and place in a crock or large glass container. Bring the soaking brine to a boil, pour over cut cucumbers, cover with a clean cloth and weigh down with a plate. Cover crock with a clean tea towel.
- Let stand three days.
- STEP TWO: Drain, put back in crock and cover with fresh water. There is no salt added to this.
- Let stand two days.
- STEP THREE: Drain and place back in crock.
- Bring the pickle solution with the alum to a boil and simmer two minutes pour over.
- Stand overnight.
- STEP FOUR: Drain and place back in crock. Make Sweet Pickle brine, bring to a boil and pour over. For three days drain this syrup into a large pot and bring to a boil. Pour back over the cucumber slices. The third day once again bring the syrup to a boil. Put pickles into sterilized jars, pour hot brine over and seal.
- I often replace some of the cucumber pieces with cauliflower chunks, making for a mixed sweet pickle.
- Makes about eight pints.
