GRANNY'S NANA PUDDING

2 cups heavy whipping cream
1/2 cup confectioners' sugar
One 14-ounce can sweetened condensed milk
One 5.1-ounce box instant vanilla pudding
2 cups very cold half-and-half
1 cup sour cream
Pinch sea salt
One 12-ounce tin or 16-ounce box butter cookies
1 cup prepared caramel sauce
6 large bananas, sliced

Steps:

  • In a chilled bowl, with chilled beaters, beat the cream and confectioners' sugar together until soft peaks.
  • Whisk together the sweetened condensed milk, pudding mix, half-and-half, sour cream and the salt in a large bowl.
  • Reserve 4 to 6 cookies for garnish and layer half of the remaining cookies among the bottom of 4 to 6 16-ounce serving dishes (or mason jars), or in a trifle bowl (or other large glass serving dish). Next, drizzle half of the caramel over the cookies, then a layer of half the bananas, then half the pudding mixture. Repeat the layers with the remaining ingredients. Top with the whipped cream and a butter cookie or cookies. Serve or chill up to overnight.

1 cup sugar
1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon salt
4 cups whole milk
2 tablespoons butter
2 teaspoons vanilla extract
OPTIONAL: Sweetened whipped cream and M&M's

Steps:

  • In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

3 cups whole milk, divided
¼ cup cornstarch
⅓ cup white sugar, or more to taste
1 cup semisweet chocolate chips
1 pinch salt

Steps:

  • Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
  • Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.
  • Pour pudding into 1 large bowl or 6 individual bowls. Place plastic wrap directly on top of the pudding to prevent a skin from forming; smooth it gently against the surface. Refrigerate for at least 3 to 4 hours before serving.

My family, from East Texas, only made banana pudding with chocolate pudding. I did not taste it made with vanilla pudding until after I got married. I converted my wife!

4 cups whole milk
4 (1 ounce) squares bittersweet chocolate
1 ½ cups white sugar
6 tablespoons all-purpose flour
¼ teaspoon salt
4 large egg yolks, beaten
2 tablespoons unsalted butter
2 teaspoons vanilla extract
1 (11 ounce) box vanilla wafer cookies
3 medium bananas, sliced, or to taste

Steps:

  • Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.
  • Mix sugar, flour, and salt together in a bowl. Add some of the hot liquid to the dry ingredients; mix well. Pour dry ingredients into the double boiler and stir well. Cover and cook over a rolling boil, stirring often, until thickened, about 15 minutes.
  • Pour some of the hot mixture into the beaten egg yolks, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the double boiler and whisk to combine. Whisk in butter and vanilla.
  • Line the bottom of a serving bowl with wafer cookies. Pour in some of the pudding to cover and top with sliced bananas. Repeat layers until all of the pudding is gone, ending with bananas on top.
