Mexicali Macaroni and Cheese image

Mac and Cheese is easy to make, but sometimes I like to have the frozen on hand to save some steps, good as a side dish or as a main dish, with the additions of the Salsa, Corn, extra cheese and Tortilla chips, turns plain into a special dish. good as a main dish with salad and rolls, or as a side to take to pot lucks and covered dish dinners . This recipe is from Nestles Family Recipes.

Number Of Ingredients 6

2 package(s) macaroni and cheese ( 12 oz. each ) such as stouffers frozen ( defrosted )
1/2 cup(s) your choice of shredded cheese, pepper jack, or mexian blend, or cheddar
1/2 cup(s) frozen, whole kernal corn ( such as green giant )
1/3 cup(s) salsa , mild or you choose the heat
3/4 cup(s) crushed totiilla chips
- for a quick way to defrost mac and cheese, microwave on medium ( 50 % power ) for 5 or 6 minutes

Steps:

  • Pre-heat Oven to 400 - Combine defrosted, Mac and Cheese ,Corn, Salsa, and shredded cheese in a Bowl, stir and mix - Spoon the Mixture into an 8 Inch square Baking Dish, Top with the crushed Tortilla chips.
  • place in Oven and Bake for 25 to 30 minutes, or untill all Bubbly around the edges.
