1 cup butter
¾ cup brown sugar
1 tablespoon ground cinnamon
1 cup crushed saltine crackers
water, as needed
1 acorn squash, halved and seeded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium-low heat. Stir cinnamon and brown sugar through the melted butter; remove from heat and stir crushed saltine crackers into the butter until moistened.
  • Pour enough water into a baking dish to be about 1 inch deep. Lay the acorn squash into the water with the rounded sides down. Fill the cavity of the squash with the saltine cracker mixture.
  • Bake in the preheated oven until the squash is easy to pierce with a fork, about 45 minutes.

2 small acorn squashes - peeled, seeded, and cut into 1-inch cubes
6 fresh sage leaves, shredded
½ cup butter, cut in small pieces
salt and ground black pepper to taste

Steps:

  • Put squash in a microwave-safe bowl; add sage. Dot squash with butter pieces; season with salt and pepper. Cover bowl tightly with plastic wrap.
  • Cook in microwave oven set on High for 5 minutes. Stir squash to coat in melted butter while checking cubes for softness. Replace plastic and continue to cook until completely tender, 2 to 4 minutes.

An excellent, cheesy dish, especially around the holidays! My grandmother makes this for me every time I come see her because she knows it's my favorite!

2 cups chopped yellow squash
3 cups crumbled prepared cornbread
½ cup chopped onion
½ cup chopped celery
1 tablespoon white sugar
1 egg
½ (26 ounce) can condensed cream of chicken soup
½ cup margarine, softened
1 cup shredded Cheddar cheese, divided
1 teaspoon dried sage
½ teaspoon salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a medium baking dish.
  • Place squash in a pot with enough water to cover. Bring to a boil and cook 5 minutes, or until tender; drain.
  • In a bowl, mix cooked squash, cornbread, onion, celery, sugar, egg, soup, margarine, and 1/2 cup cheese. Season with sage, salt, and pepper. Transfer to the prepared baking dish.
  • Bake 45 minutes in the preheated oven. Top with remaining cheese, and continue cooking 15 minutes, or until cheese is melted and bubbly.
