This is the best shepherds pie recipe I've ever had, and it comes from a friend who was a whiz at pinching pennies without sacrificing hearty flavor.-Valerie Merrill, Topeka, Kansas

Number Of Ingredients 12

2-1/2 pounds potatoes, peeled and cooked
1 cup sour cream
Salt and pepper to taste
2 pounds ground beef
1/2 cup chopped onion
1 medium sweet red pepper, chopped
1 teaspoon garlic salt
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (16 ounces) whole kernel corn, drained
1/2 cup milk
2 tablespoons butter, melted
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.

This one dish meal is definately a comfort food. It has everything you need, meat, vegetable and potatoes.

Number Of Ingredients 7

1 lb ground beef
10 3/4 ounces cream of mushroom soup
1 onion (chopped)
10 ounces peas and carrots (frozen)
1 cup mozzarella cheese (optional) or 1 cup cheddar cheese (optional)
2 -3 cups mashed potatoes
1 deep dish pie shell (baked)

Steps:

  • Preheat oven to 350 degrees.
  • Brown ground beef and onion in skillet;drain.
  • Boil, mash and season potatoes.
  • Cook peas and carrots (you could also use canned peas and carrots if you wish).
  • Bake pie crust according to package directions.
  • Blend in soup with meat and onion.
  • Layer ground meat in pie shell, if adding cheese put on top of meat layer then add vegetables and top with mashed potatoes.
  • Place pie in preheated oven and bake until heated through.

I grew up eating this shepherd's pie, and now my family loves it just as much! Its very easy to make and makes a wonderful meal including meat, potatoes and veggies all in one scoop!

1 lb ground beef
4 slices kraft 2% american cheese singles
1 (8 1/4 ounce) can cream-style corn
6 cups mashed potatoes
butter
milk

Steps:

  • To make the mashed potatoes peel and cube the potatoes. Boil until tender. Mash with butter (a couple tbsp) and milk (about 1/4 cup) until desired texture.
  • Preheat the oven to 350°F.
  • Brown the ground beef and drain. In a 8x8 casserole dish add ground beef, then top with American cheese, then top with cream style corn, then top with mashed potatoes and spread evenly. Bake in the oven about 30 minutes or until bubbly hot.
  • (More mashed potatoes can be added to make it thicker if desired!).

I lost my Nana April 2nd 2004; she made this dish for me every time I was sick. In my house we simply call it "Favorite"; that's its name.

Number Of Ingredients 5

2 lbs hamburger, browned and drained
2 (8 ounce) cans tomato soup, no milk or water
4 cups mashed potatoes, left over ok
5 slices cheddar cheese, broken into strips
2 (8 ounce) cans whole kernel corn, drained

Steps:

  • Brown and drain hamburger. Place hamburger in a 9x13 baking dish. Mix tomato soup with hamburger. Pour corn over hamburger mixture. Cover mixture with the mashed potatoes (leftover or freshly made is fine). Cover potato with cheese strips making sure to cover as much of it as you can.
  • Bake at 350 degrees Fahrenheit until cheese starts to bubble, approximately 30 minutes. Be careful not to burn the cheese.
  • We have a large family; this recipe can be cut in half to downsize it for a smaller family.
  • Be warned this recipe is even better as a leftover!
