Steps:
- For the sauce: In a saucepan over medium heat, combine the vegetable oil and flour. Cook, whisking, until it begins to bubble; let it bubble for 1 minute. Pour in the enchilada sauce, chicken broth, cumin and some salt and pepper. Raise the heat and bring to a boil. Reduce to a simmer while you prepare the meat.
- For the meat: Brown the ground beef with the garlic and onions in a large skillet over medium-high heat, 5 to 8 minutes. Drain the fat and stir in the cumin and salt to combine. Stir the meat into the simmering sauce and shut off the heat.
- For the casserole: Preheat the oven to 350 degrees F. Lightly grease one 9-by-13-inch aluminum foil baking dish and one 9-by-13-inch glass baking dish with cooking spray.
- Break up the chips by crushing the bag slightly with your hands. Make sure not to over crush the chips; you're looking for pieces, not crumbs. Mix together the cheeses in a medium bowl.
- Divide a third of the broken chips between the prepared baking dishes. Top each with a quarter of the beef mixture and 2/3 cup of the cheese. Repeat, adding another layer of chips, beef mix and cheese to each. Finish by dividing the remaining chips between the baking dishes. Top each with 2/3 cup cheese.
- Cover the glass baking dish with foil and bake for 25 minutes. Remove the foil and continue to bake until bubbly, another 15 to 20 minutes.
- For the toppings: Top the cooked casserole with the shredded romaine, diced Roma tomatoes, sour cream and sliced black olives and green onions before serving.
- Allow the aluminum foil baking dish to cool completely while the other is baking. Once cool, wrap tightly in plastic wrap and foil. Transfer to the freezer.
- To bake from frozen, preheat the oven to 350 degrees F.
- Unwrap the baking dish and re-cover with foil. Bake, covered, for 35 to 40 minutes. Uncover and bake until bubbly, 15 to 20 minutes. Top with another batch of the toppings.
BEEF NACHO CASSEROLE
A simple meal to whip up in less than an hour that even the kids are sure to love. Layers of seasoned ground beef, corn, tortilla chips and cheese are baked under a layer of Colby cheese. Monterey Jack is also good in place of the Colby cheese.

- Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain grease. - In a large skillet, cook beef and 1/2 cup onion over medium heat until meat is no longer pink; drain. Stir in the taco seasoning, tomato sauce and water. - 1. If using raw meat, brown meat in a skillet over medium heat. Drain meat and return to skillet.
- 2. Add taco sauce to meat, and let simmer until meat mixture has thickened; about 10 minutes.
- 3. Pour meat mixture into an 8x8 casserole dish, and spread along bottom of dish.
- 4. Spread refried beans evenly over the top of the meat mixture.
- 5. Sprinkle the shredded cheddar cheese over the refried beans.
- 6. Crush about half the bag of Nacho chips over the cheese, covering the entire top of the casserole.
- 7. Cover the casserole with foil, and place in a 350 degree oven. Bake for 30 minutes.
- 8. Remove the foil from the casserole, and return it to the oven to bake another 10 minutes.
- 9. Serve the casserole with any Nacho toppings of your choice., and enjoy!

- Preheat oven to 350.
- Brown beef and 1/2 cup onion in skillet, drain fat.
- Stir in taco seasoning, water and tomato sauce.

- Cook ground beef on top of stove or microwave; drain off fat.
- In a medium mixing bowl, combine soup, undrained chile peppers and milk; blend well.
- Lightly spray slow cooker with nonstick cooking spray.

- Brown ground beef with taco seasonings, drain.
- Mix all soups, milk, and sour cream with Ro-Tel in a bowl. Crush some of the chips slightly.
- I use the turkey cooker throw away pan from walmart the large one -- makes easy clean up.
- This is a layering effect --.
- First I use a spoon full or so, just to line the bottom of the pan. Next pour in half of the chips,half meat, half soup, and then half cheese. Repeat. Be sure to spread evenly.
- Bake at 350 degrees for 25 minutes. Top with cheese and bake for 5 minutes. I like to use a little extra cheese sometimes. A sure-fire crowd pleaser! Enjoy.

- Grease a 13 x 9-inch casserole dish or a 3-quart oval baking dish.
- In a large skillet cook the ground beef with onions, garlic, green bell pepper and jalapeno pepper until completely cooked; drain fat then add in taco seasoning mix (you may add in more than 2 tablespoons if desired) cook stirring for 2 minutes, then season with salt and pepper to taste, remove from heat then mix in salsa, corn and sour cream.
- Place HALF each of the ground beef mixture, black beans, 2 cups tortilla chips then 1-1/2 cups shredded cheese (or to taste).

"TACO-LASAGNA" OR NACHO CASSEROLE

- -Pour 1 tsp canola or olive oil into a 9x9 baking pan. Spread it around to grease the bottom and sides. -Cover bottom of pan with one layer of tortilla pieces. -Sprinkle salsa on the tortilla pieces In the pan. -Sprinkle a layer of 1/2 of the beans. Layer 1/2 of the meat, then 1/2 of the spinach, 1/2 the tomatoes, 1/3 of the salsa, 1/3 of the cheese, 1/3 of the tortilla pieces. -Layer the rest of the beans, meat, spinach and tomatoes. -Layer 1/2 of the remaining salsa, tortilla pieces, and cheese. -Top with the remaining tortilla pieces, salsa, and cheese. -Bake at 375 degrees for 25-30 minutes. Notes: It's a great way to use leftovers from "taco night" or steak that you brought home from a restaurant. Make it work for you--try shortcuts. For instance, you could substitute chili for all the ingredients except tortillas and cheese. Go ahead and add/remove/substitute ingredients with things you prefer. If you like it spicy, dice 1-3 jalapenos and toss them in. We usually put two jalapenos in our taco meat. This recipe is very flexible. I usually use ground beef (seasoned with chili powder, garlic powder, oregano, cumin, paprika, salt and pepper), chopped fresh spinach (Erik doesn't like cilantro), pinto beans, and the other ingredients I listed. Funny, I made a casserole tonight in order to make tomorrow's supper easier. We had no beef so I simply made it with beans. You could throw in anything you like in your burritos or enchiladas. I think this casserole tastes just like enchiladas.

- 2. Crush Dorito's and place in bottom of 9 x 13 greased pan.
- 3. Heat oil in skillet and add jalapeno, red onion, and garlic. Cook 3 minutes. Add beef and cook until browned. Drain
- 4. In med bowl combine soup, cream cheese, honey mustard, and Velvetta cheese sauce together. Stir in beef mixture and pasta. Add diced American cheese, and hot dogs. Place on top of Dorito's. Bake for 50 minutes. Top with Mexican blend cheese and return to oven for 10 more minutes.
