1 pound lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (12 inch) parbaked thin pizza crust
5 tablespoons queso dip
1 cup shredded aged Cheddar cheese
1 jalapeno pepper, seeded and minced
4 green onions, diced
4 tablespoons salsa
½ cup crushed tortilla chips
2 tablespoons sour cream, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Cook beef in a large skillet under no longer pink, about 5 minutes. Drain. Stir in seasoning mix until evenly combined.
  • Place pizza crust on a work surface. Spread queso dip evenly over the crust. Top with Cheddar cheese, cooked beef mixture, jalapeno, and green onions. Spoon salsa onto the pizza in random spots, making sure it's not mixed in with the other toppings. Sprinkle crushed tortilla chips on top.
  • Bake in the preheated oven directly on the middle oven rack until cheese is hot and melted, about 8 minutes. Serve with sour cream.

15 ounces refried beans
1 ounce taco seasoning (1 regular packet)
1 prepared pizza crust
1 cup salsa
10 canned jalapeno slices (pickled or regular)
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 450 degrees.
  • In a small bowl, combine beans and taco seasoning. Spread bean mixture onto crust leaving 1 inch border around the edge.
  • Top with salsa, jalapenos, and cheese.
  • Bake for 10-12 minutes until crust is light brown and cheese is melted.
  • After baking top with addition toppings such as diced roma tomato, sour cream, sliced black olives, and sliced green onions if desired.

Top with 2 cups pizza sauce, 3 cups shredded mozzarella and 1/2 cup shredded parmesan. Bake at 475 degrees F for 7 minutes, then sprinkle with chopped basil.

1 package (6-1/2 ounces) pizza crust mix
1 teaspoon cornmeal
3/4 pound ground beef
1/3 cup chopped onion
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup salsa
1/2 cup sour cream
1 medium tomato, chopped
2 tablespoons chopped ripe olives
2 cups shredded cheddar cheese
1/2 cup crushed tortilla chips

Steps:

  • Prepare pizza dough according to package directions. Coat a 12-in. pizza pan with cooking spray; sprinkle with cornmeal. With floured hands, press dough onto pan. Bake at 425° for 6-8 minutes or until lightly browned., Meanwhile, in a small skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the chili powder, salt and pepper., Combine salsa and sour cream; spread over crust to within 1 in. of edges. Top with beef mixture, tomatoes, olives and cheese. Bake for 10 minutes., Sprinkle with crushed chips; bake 5-6 minutes longer or until cheese is melted and crust is golden brown.

1 baguette or semolina bread (day-old is fine)
1 tablespoon vegetable oil (once around the pan)
2 garlic cloves, chopped
1 jalapeño, seeded and chopped, or 1 pickled hot pepper of any kind, chopped
1 15-ounce can refried beans, black beans, or red beans
2 teaspoons hot sauce
1 teaspoon chili powder or ground cumin (1/3 palmful)
Salt and freshly ground black pepper
1 cup prepared salsa, any variety
2 cups shredded Cheddar, smoked Cheddar, Monterey Jack, or Pepper Jack cheese
1 romaine lettuce heart or 1/2 head of iceberg lettuce, shredded
1/2 cup green olives with or without pimiento, chopped
1/4 red onion or 2 to 3 scallions, chopped
2 plum or vine-ripe tomatoes, seeded and diced

Steps:

  • Preheat the oven to 200°F.
  • Crisp the bread in the low oven and split lengthwise. Hollow the bread out and cut each half in half across, making 4 boats. Switch the broiler on.
  • Heat a small nonstick skillet over medium heat. Add the oil, garlic, and jalapeños. Add the refried beans or, if you are using whole beans, drain, add half of the beans, then mash the remainder of the beans in the can using a fork. Add the mashed beans to the pan and combine with the whole beans. Season the beans with hot sauce, chili powder or cumin, salt, and pepper. When the spicy beans are hot through, spread them evenly across all of the bread. Top the beans liberally with the salsa, then the cheese, covering the bread to all edges. The boats will only be half full. Melt the cheese under the broiler until it bubbles and begins to brown.
  • Fill the nacho bread pizzas with the lettuce, olives, onions, and tomatoes and serve. You can pick them up with your hands, but eat over the plate-or over the kitchen sink, like me.
