1 teaspoon dried oregano

1 teaspoon dried rosemary
1 teaspoon dried lemon peel
1 teaspoon dried thyme
1 teaspoon fennel seed
1/2 teaspoon marjoram leaves
1/2 teaspoon dried spearmint

Steps:

  • Combine all ingredients.
  • Store in an airtight container until needed.
  • Goes well on chicken, lamb, and beef.

I got the original recipe on here (Steak Seasoning for the Steak House#18556 by Darin Craven). The orginal recipe is for restaurant use therefore has large measurements of the ingredients. At the suggestion of one of the reviewers, I scaled it down for home use. This seasoning can be used on any type of meat as well as on fish and poultry.

4 tablespoons kosher salt
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons paprika
2 tablespoons celery seeds

  • Mix all of the ingredients together in a small bowl or measuring cup until well blended.
  • Pour into a spice jar and shake well.

Recipe from one of our favorite places to eat when in the city - Nicky's! Love this recipe shared by Nick and Marina Makris in a local cookbook. An awesome salad that allows the fresh taste of the ingredients to shine and just the way I like it! I do offer a Greek dressing when serving to guests, but find most enjoy the salad unadorned - and always an empty bowl.

4 large tomatoes (not over ripe, cut into small wedges)
1 English cucumber (cut in 1/2 inch cubes or smaller )
1 medium red onion (cut in thin wedges)
1 large green pepper (sliced)
1/2 lb feta cheese (cubed or crumbled)
12 black Greek olives (or green)
4 ounces extra virgin olive oil
salt (to taste)
1/4 cup Italian parsley (optional)

Steps:

  • Cut the tomatoes into small wedges, cube the cucumber, cut red onion into thin wedges, slice green pepper, and place into large bowl.
  • Add the cubed or crumbled feta cheeses, olives and olive oil and salt to taste.
  • At this point I toss and sprinkle with Italian parsley and some of the crumbled cheese.

This is the exact recipe we used at a local steakhouse where I worked for 15 years. It is great on pretty much any meat. You will probably want to use the conversion tool to make smaller batches. However, it will hold for a long time so if you like it make a nice big batch.

3 (1 lb) boxes kosher salt
1 lb onion powder (sifted)
1 lb garlic salt
1 lb celery salt
1 lb paprika (sifted)
1 lb black pepper
1 lb sugar
1/2 lb nutmeg

Steps:

  • Mix well using a commercial mixer with a wire whisk if possible.
  • This makes enough for 1 week in a 200 seat steakhouse.

I use this recipe on ribeyes all of the time. This is truly the best I have ever had. I got the recipe from watching a travel show on TV and decided to try it. My husband wont even order a steak in a restaurant, other than Red Lobster (lol, isn't that funny - I think it's the new wood fire grill they have). Anyhow, he says and I agree that this IS the seasoning to use. This makes a lot, so I leave it in an air tight container and have it ready when I need it. I made smaller portions before but found that I just had to keep mixing it up. It keeps very well. Oh, and the seasoning works great for corn on the cob also!

1 cup salt
1 cup pepper
1/2 cup garlic salt
1/4 cup sugar
1/4 cup chopped parsley
2 rib eye or 2 strips steaks
olive oil

Steps:

  • Mix all dry ingredients.
  • Put steaks out on the counter for atleast 15 minutes to allow the chill to wear off. Get grill nice and hot before putting steaks on.
  • Drizzle each steak with Olive Oil. Top each with seasoning mix and rub into steaks (I would say a teaspoons or so for each).
  • Put steaks on grill, seasoned side down, and season the unseasoned side.
  • Cook to desired temperature and remove to a plate with tongs. TIP: Don't move the steaks more than 4 times to preserve the tenderness and keep them moist.
  • Do not pierce the steaks with a fork or knife or you will lose the juice.
  • Allow steaks to rest for atleast 5 minutes. Serve.

1 tablespoon coffee beans, dark freshly finely ground
1 tablespoon paprika

1 tablespoon brown sugar

1/2 teaspoon fresh ground black pepper

  • In a large fry pan over medium low flame, toss in all the seasonings except the brown sugar.

4 tomatoes, cut in wedges
1 slender green cucumber
1 green pepper
2 red peppers
1 red onion, sliced
1/2 cup kalamata olive
8 ounces feta cheese, sliced
3 tablespoons olive oil
1 tablespoon red wine vinegar
2 tablespoons fresh lemon juice
1/2 teaspoon dried oregano
1 teaspoon parsley, chopped
3 garlic cloves, crushed
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Cut tomatoes into wedges.
  • Slice cucumber in 1/2 lenghtwise then in cut in chunks.
  • Wash, core and seed peppers. Cut in half then cut into thick strips.
  • Separate onion slices into rings.
  • Place prepared ingredients in a bowl; top with the olives.
  • Pour on dressing just before serving.Top with strips of Feta Cheese and sprinkle with oregano.
  • For dressing: Put ingredients a screw top jar, seal and shake well.
  • Shake again just before serving.
  • Serve in individual salad bowls.

1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil

2 beef ribeye steaks (1-1/2 inches thick)
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons crumbled feta cheese
1 tablespoon sliced ripe olives

Steps:

  • In a small bowl, combine the first five ingredients; rub onto both sides of steaks. In a large skillet, cook steaks in oil for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). Sprinkle with lemon juice, cheese and olives. Serve immediately.

It makes any meat or chicken or fish or roast potatoes taste delicious- just like the people in my Dads Greek village in Greece make. Gives a delicious authentic taste to Greek souvlaki skewers- just thread meat onto skewers and sprinkle it with this. Try it, you'll love it! As a bonus: it only takes about sixty seconds to make.

1/2 cup dried oregano
3 -4 tablespoons garlic powder
salt
ground pepper

Steps:

  • Put oregano into a bowl.
  • Tip salt in to the oregano, and mix it till when you dip your finger in and taste it, it is just salty enough for your liking.
  • Add remaining ingredients (you can add as much or as little ground pepper as you like for your taste).
  • Store it in a jar in fridge.
  • Then, when you come home from work exhausted, you just sprinkle it on your meat, chicken, fish or potatoes, and grill it.
