A fun and easy party punch for an island themed party or just any occasion. Nonalcoholic so guests of all ages can enjoy it.

1 liter orange juice
1 liter pineapple juice
1/2 cup lime juice
1/2 cup almond syrup
1/2 cup grenadine
1 liter sparkling/seltzer water
ice
oranges, limes, cherries for garnish

Steps:

  • In a pitcher mix together orange juice, pineapple juice, lime juice and almond syrup.
  • You can keep this punch base in the fridge until party time.
  • Once ready to serve you can serve in individual glasses by adding ice to a cup, filling the cup 1/2 full of juice, adding a splash of grenadine and then topping it off with seltzer water and garnishing with fruit.
  • To serve in a big punch bowl, mix grenadine and seltzer water to juice and stir together, then add ice and fruit.

3 ounces orange juice
1 ounce lime juice (or juice of 1/2 lime)
1 teaspoon fine sugar
1 tablespoon orgeat syrup (almond syrup)
1/2 ounce grenadine
crushed ice

Steps:

  • Combine all ingredients except crushed ice in a shaker half filled with ice. Shake well.
  • Strain into an old-fashioned glass half filled with crushed ice.
  • Garnish with a slice of fruit and a drink umbrella.

This iconic rum-based cocktail was invented by Victor Bergeron in the 1940s at his first Trader Vic's restaurant, in Oakland, California. (Bergeron's nickname was Trader Vic.) There are countless interpretations, many of them sugar bombs. We stayed true to the original to create a balanced Mai Tai that includes the key flavors of almond (in the form of orgeat syrup, an essential ingredient in many tiki cocktails), citrus and caramelized sugar.

1 cup demerara sugar
1 ounce fresh lime juice (from about 1 lime, halved crosswise), reserve one half of the spent rind for garnish
1 ounce gold rum
1 ounce light rum
3/4 ounce orange curaçao
1/2 ounce orgeat syrup
Fresh mint sprig, for garnish

Steps:

  • Combine the demerara sugar with 1/2 cup water in a small saucepan and cook over medium-low heat until the sugar is fully dissolved, about 5 minutes. Transfer the demerara syrup to a small bowl and set aside to cool completely, about 15 minutes (see Cook's Note).
  • Combine the lime juice, gold and light rums, orange curaçao, orgeat syrup, 1/4 ounce demerara syrup and 1 cup ice in a cocktail shaker and shake vigorously until chilled, about 10 seconds. Pour the cocktail into an old fashioned or rocks glass. Stick the stem of the mint sprig into the center of the cut side of the spent lime half (it should look like a palm tree on a floating island). Place the garnish in the drink lime-side down.

one lemon, juiced

The Mai Tai Cocktail is a beautiful tribute to rum....fine aged rum. If you like rum, you will like this strong cocktail. Contrary to popular belief, this is not a fruity cocktail and I cringe when I see bartenders add fruit juices to this perfect drink. If you like fruity drinks try a zombie or Maui Mai Tai - but if you like rum, this is a celebration. This is NOT the original Mai Tai recipe, but it is a fabulous version . The original Mai Tai was created in the early 40's by Trader Vic in Oakland. The name of the drink comes from the reaction of its first samplers, who were from Tahiti, when they exclaimed "Mai Tai - Roa Ae", which means "Out of This World - The Best".

2 ounces premium rum (Havana Club - 7 yr is good)
1/2 ounce clear Curacao
1 lime, juice of
1/2 ounce orgeat syrup (if you cannot find orgeat syrup try CharlotteJ's Orgeat Syrup)
1/4 ounce simple syrup
1 dash grenadine, for color (optional)
float dark rum

Steps:

  • Combine the first 7 ingredients in a cocktail shaker filled with ice and strain into a cool old fashion glass filled with crushed ice.
  • Float dark rum.
  • Sink half of the lime shell with a maraschino cherry stuffed inside. Orchids are a nice garnish as well. If orchids are unavailable a fresh mint sprig will always do. Enjoy!

3 quarts dole pineapple juice
1/4 cup lemon juice
1/4 cup lime juice
1/2 cup sugar
1 1/2 cups orange juice
1 1/2 cups sparkling water

Steps:

  • In a large pitcher or bowl, combine the fruit juices and the sugar. Stir until the sugar dissolves.
  • Add the sparkline water and stir gently. Pour into a large punch bowl and add some ice to chill it.
