MY OWN BEST BBQ'ED MEATLOAF!
I haaaaaaated meatloaf til only just a couple of years ago, came up with this...now I actually CRAVE it!

Steps:
- Preheat oven to 350º.
- Mix beef, stuffing mix, broth, eggs, pineapple and ½ cup bbq sauce.
- Shape into loaf, place on greased or foil-lined baking sheet.
- or shallow baking dish.
- Sprinkle top with coarse ground pepper.
- Bake for about 1 1/2 hours or til no longer pink in center.
- Coat loaf with ½ cup bbq sauce and ½ cup ketchup mixed well, during last 5 minutes of baking time.
- Let rest 5-10 minutes before slicing.

BBQ MEATLOAF
Boldy seasoned and outrageously flavorful, this mouthwateringly tender BBQ Meatloaf won't last long on your dinner table.

Steps:
- Preheat oven to 350 degrees.
- In large bowl, gently crumble ground beef then add all remaining meatloaf ingredients.
- Using your fingers gently combine all ingredients and meat being careful not to overly squish or press the meat (this makes the meatloaf dense)
- Mix BBQ sauce ingredients together in a bowl.
- Pour 1/4 cup of sauce in the bottom of a bread pan, or enough to evenly coat the bottom.
- Add meatloaf to the bread pan and gently press into a solid loaf shape, pressing only hard enough for the meat to hold together.
- Pour remaining BBQ sauce evenly over the top of the meatloaf.
- Place in the oven for 70 minutes, or until the internal temperature reaches 165 degrees.
- Remove from oven, let cool for 5 minutes and serve.

This is a really great dish. It is looked forward too every time I make it and leftovers are just as great on a toasted sandwich or reheated.

Steps:
- Combine sausage mince, minced steak, breadcrumbs, peeled and finely-chopped onions, curry powder, salt, pepper, parsley and lightly-beaten egg in bowl.
- Beat until mixture is well combined.
- Gradually add milk and water, continue beating until mixture is very smooth.
- Shape meat mixture into loaf, place in greased baking dish.
- Bake in moderate (180 C)oven 30 minutes.
- Combine all ingredients for sauce in saucepan, bring slowly to boil, reduce heat, simmer 5 minutes.
- Remove meatloaf from oven, carefully pour off any surplus fat.
- Pour sauce over meatloaf, return to oven, bake for further 45 minutes, basting frequently with sauce.
- Serve hot with vegetables or cold with salad.

BBQ MEATLOAF

- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
- Serve with additional warm BBQ sauce alongside.
