Best ever curried sausages recipe. Just like grandma made!

Number Of Ingredients 12

600 grams thin beef sausages ((6 or 7 sausages))
1 medium onion (sliced)
1 tablespoon olive oil
1 carrot (peeled and slice diagonally)
1/2 cup peas
1 apple (grated)
1 banana (chopped into cubes)
1 tablespoon Keen's Curry Powder
3 tablespoon plain flour
1/4 cup desiccated coconut
2 1/2 cups chicken stock ((625 ml))
salt and pepper (to taste)

Steps:

  • Heat half of the oil in a large frying pan over med-high heat.
  • Add the sausages and cook for 5 minutes or until browned. Remove sausages from the pan and slice into pieces diagonally. Set aside.
  • Add the remaining oil to the frying pan and cook onion over medium heat until translucent.
  • Add curry powder and stir over heat until onion is well coated. Add flour and stir over heat for a couple of minutes. Add coconut and stir to combine.
  • Pour stock into frying pan and stir over heat for 30 seconds.
  • Add carrot, peas, apple and banana and simmer for 2-3 minutes.
  • Add sausages and simmer for 10 minutes, or until sauce thickens and sausages are cooked through. Add salt and pepper to taste.

Delicious Curried Sausages image

This is a fantastic recipe I got from a cookbook that my brother gave me. When I was growing up my father used to make these delicious curried sausages that the whole family loved. Now that he's advanced in years he can't remember how to make it. Fortunately I found a great recipe that tastes just like it! Now that I am grown and have a family of my own I make the curried sausages for them and they love it too! You can serve them on their own or sometimes I serve them with a side of mashed potatoes and they taste great. Hope you enjoy :-)

1 onion, Chopped
2 garlic cloves
1 teaspoon ginger
2 teaspoons curry powder
1 teaspoon chili powder
1 1/2 teaspoons paprika
3 teaspoons poppy seeds
2 tablespoons oil
1 1/4 kg medium sized beef sausages
6 peeled tomatoes, Quartered
2 tablespoons mango chutney
420 ml coconut milk

Steps:

  • Place onion, garlic, ginger, curry powder, chili powder, paprika and poppy seeds in a food processor, and process until smooth.
  • Heat 1 tbsp oil in a saucepan and cook sausages over a medium heat until browned.
  • Remove sausages and wipe out pan.
  • Leave sausages to cool for 15 minutes then slice into 2cm thick pieces.
  • Heat remaining oil in the pan.
  • Add spice paste and cook, stirring for 2 minutes.
  • Mix in tomato, mango chutney and coconut milk.
  • Add sausages and simmer covered for 20 minutes, stirring occasionally.

CONTINENTAL CURRIED SAUSAGES



Continental Curried Sausages image

A family favourite in winter, this recipe came from a Continental cookbook I have. I have adjusted it slightly to suit our family. This is a great make ahead meal and can be frozen. As an alternative to boiling the sausages you could fry them but I personally prefer to boil them, it gives a different flavour to the end product.

500 g thin sausages
1 tablespoon oil
1 onion, sliced
1 1/2 cups frozen mixed vegetables
1 (70 g) packet dutch curry and rice soup mix
2 cups water
salt & pepper
extra curry powder (optional)

Steps:

  • Bring sausages to the boil in some cold water. Let cool and peel skins off and slice diagonally.
  • Fry onion and frozen vegies in the oil until onion is tender.
  • Blend soup mix with water and pour over vegetables.
  • Return sausages to pan and simmer for approx 10 minutes.
  • Add salt & pepper, extra curry powder if required and extra water if required.
  • Serve over rice.

Quick and easy this is a great winter warmer meal. Also if you are wanting to have a young child help, this recipe is ideal, and they feel like they have made it themselves because it's so easy!

1 cup mixed vegetables
1 chopped onion
1 tablespoon flour
1 teaspoon curry powder

Steps:

  • First boil the sausages and remove the skins.
  • Slice them up into chunks.
  • Place them in a saucepan with sufficient water to cover,.
  • Add onion, vegies and bring to the boil.
  • In a small cup put flour, curry powder and enough cold water to make a paste.
  • Remove saucepan from the heat and stir in thickening and replace on element.
  • Bring saucepan back to a simmer and cook until vegies are done.
