MY MOM'S GRAHAM CRACKER CHICKEN DRUMSTICKS
This is the only way my mom ever made coated and baked chicken legs. I'm sure you can use other chicken pieces too. They are also good cold.

Steps:
- Line a baking pan with foil.
- Place the graham cracker crumbs in a large zip-loc bag.
- Dip the chicken in the melted butter. Place in the bag with the crumbs and shake to coat.
- Place on the baking pan, with some space between them.
- Bake at 400°F for 40-45 minutes or until tender.

PANKO CRUSTED BAKED CHICKEN DRUMSTICKS
I was searching for a good baked chicken recipe with Panko that didn't have Parmesan cheese as an ingredient. My mouth likes it, my waist doesn't. Anywho this is a hybrid of a recipe I was experimenting with, and I think it's pretty tasty and kinda lean ;-) You be the judge....

Steps:
- Preheat oven to 350.
- In a large bowl, combine all of the ingredients except the cooking spray. Use a whisk to be sure the ingredients are all combined well. Set aside.
- Wash the chicken drumsticks in cold water; don't dry them.
- Roll each drumstick into the crumb mixture, and carefully transfer each piece to the baking sheet. Do no discard the leftover crumbs.
- Lightly spray the drumsticks with the vegetable oil.
- Bake, loosely covered with aluminum foil for 45 minutes.
- Remove from oven. turn chicken over. and top each drumstick with some of the leftover crumb mixture. Spray once again, liberally with the vegetable oil.
- Return the baking sheet to the oven, this time uncovered for another 45 minutes.
BAKED CHICKEN DRUMSTICKS
Change the flavourings as you like for these chicken drumsticks - we've gone for Cajun spice but curry powder, ras el hanout or black pepper would also work

- Heat the oven to 200C/180C fan/gas 6. Tip the chicken drumsticks into a large bowl and pour in the oil. Season with lots of salt, then add all the remaining ingredients and toss well to coat.
- Put the drumsticks into a large roasting tin, along with any oil and spices from the bowl, ensuring there is plenty of space around each drumstick.
- Bake in the oven for 20 mins, then flip each drumstick and bake for a further 20-25 mins until cooked through and caramelised.

- Heat oven to 375.
- Line square pan, 9x9x2 inches, with aluminum foil.
- Place chicken in pan.
- Mix remaining ingredients; brush over chicken.
- Bake uncovered 20 minutes.
- Brush chicken with marmalade mixture. Bake uncovered 10 minutes. Brush chicken with marmalade mixture.
- Cover with aluminum foil and bake about 10 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut. Serve warm.

- Cream shortening and sugars.
- Add egg, milk, and vanilla extract, mixing well.
- Then add flour, graham cracker crumbs, baking soda, salt, and cinnamon.
- Stir in M&M'S Baking Bits.
- Drop onto ungreased cookie sheets about 2 inches apart on.
- Bake at 350 for 8 to 10 minutes.
- DO NOT OVERBAKE.
- Cool 1 minute on cookie sheet then transfer to wire racks and let cool completely.
