MY MOM'S MEATLOAF RECIPE
This is the best meatloaf, we always like to have extra glaze to serve with it at the table as well!

Steps:
- Preheat oven to 350*.
- In large bowl mix beef, chopped onions, bread and half of the milk with hands.
- Slowly add the remainder of the milk if needed - too much will make the mixture to runny and it won't form the loaf.
- Shape into loaf and place in a glass 8x8 or 9x13 baking dish, I add just a little water to the bottom of the pan.
- Bake at 350* for 45 min, cover the top of the loaf with the glaze and finish baking for 15-20 min longer.
- Let the loaf sit 10-15 min before slicing.

MY MOM'S FRIED MEATLOAF
If you enjoy the crispy part of the meatloaf , you will love my Mom's fried meatloaf. You can basically do this frying process with your own favorite meatloaf recipe and it would be just to your liking I'm sure , I hope you will give it a try!

- 1. In a large mixing bowl combine all the ingredients.
- 2. Mix with your hands.
- 3. Mix thoroughly until all the spices are combined together with the hamburger.
- 4. Shape into an oblong shape in your hands.
- 5. Place in heavy skillet and cover with a lid.
- 6. Fry on medium heat until crispy brown and turn onto their sides ; you may need to prop them against each other to hold them on their sides , you can remove the lid at this point if so desired to so you can watch it closer so they don't burn.
- 7. Continue browning until all four sides are fried crispy.
- 8. Serve along side a favorite side dish and enjoy!!

- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

MY MOMS MEATLOAF.
This is a really, really simple meatloaf which uses ingredients I always have on hand. Mom told me the directions over the phone, so amounts are approximate. The relish is really to taste. I have made this way too sweet before, so I recommend starting out with maybe only one tablespoon of the sweet relish.

Steps:
- Mix the ground beef, 2 eggs, sweet relish, crushed crackers, garlic if using, and about 1/4 cup of the ketchup together. The consistency should not be dry. If it is, you can add more ketchup.
- Put into pan and top with remaining ketchup.
- Bake uncovered at 350 degrees for about 30 minutes or until done (160 degrees).

- 1. FOR THE MEATLOAF: In a large bowl, combine the beef, egg, onion, milk, bread crumbs, and garlic powder. Season with salt and pepper to taste and place in a lightly greased 5x9-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- 2. In a separate bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- 3. Bake in a preheated 350-degree oven for 1 hour. Let it cool and then refrigerate for 2 hours or more.
- 4. TO FRY: Set three wide, shallow dishes in a row on the counter. Put the flour in the first dish. Crack the egg into the second dish and beat it lightly with a fork. Put the panko in the third dish and toss with salt and pepper.
- 5. Cut the cold meatloaf into slices and set aside.
- 6. Dredge a slice of meatloaf in the flour and then in the egg. Lay the slice in the crumbs and make sure you cover every part of it. Set aside and repeat step with all of the slices. When all are coated, refrigerate for an additional ten to fifteen minutes to let the bread crumbs set.
- 7. When ready to cook, pour oil into a heavy duty sided pan. Heat the oil over medium-high heat until it immediately and vigorously bubbles.
- 8. With a slotted metal spatula, carefully slip the breaded meatloaf into the oil. Fry until golden brown on both sides, about 1 minute per side, using the spatula to carefully turn the slices. Transfer to a plate with paper towels, sprinkle lightly with salt, and let sit briefly to drain excess oil. Serve hot.

- In a large bowl, combine beef, cracker crumbs, onion, egg, milk, 1/4 cup catsup, Worcestershire sauce, salt and pepper; mix thoroughly.
- In a shallow baking pan, shape into loaf.
- Spread remaining catsup over top.
- Cover and bake at 350º for 30 minutes.
- Drain off fat and continue baking, uncovered, 30 minutes longer.
