SHREDDED BBQ BEEF

This Shredded BBQ Beef is fall-apart tender and flavorful! Beef chuck roast is seasoned & braised in the oven (or crock pot). It is finished with a homemade BBQ seasoning giving it tons of flavor.

3 lb beef chuck roast (trimmed and cut into 3 inch chunks)
2 cups beef broth
1 tbsp tomato paste
1 1/2 tbsp Worcestershire sauce
2 onions (white or yellow) (quartered )
3 garlic cloves (crushed)
1/2 cup store bought BBQ Sauce (your family's favorite brand)
1 1/2 tbsp brown sugar (lightly packed)
1 tbsp chili powder
2 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp ground/dry mustard
Buns & BBQ Sauce

Steps:

  • Preheat the oven to 325°.
  • In a small bowl mix together all the BBQ Seasoning ingredients. Expert Tip - make sure all the brown sugar clumps are separated before moving on.
  • Reserve 2 tbsp of the BBQ Seasoning and set aside.
  • Pat the beef dry with paper towels. Then cut it into 3 inch chunks. Discard any large pieces of white fat.
  • Season all sides of the beef with the BBQ Seasoning.
  • In a large pot (that has a lid, like a Dutch oven) whisk together the beef broth, Worcestershire and tomato paste. Add the onions and garlic to the pot.
  • Place the seasoned beef pieces on top of the onions in the pot.Expert Tip- mop up any excess seasoning with the beef pieces before placing in the pot.
  • Pop the lid on and place in the preheated oven for 3 hours, until the beef shreds easily.Expert Tip- if at the end of 3 hours your beef is not tender, add 20 minute increments until it is ready.
  • Remove the beef pieces from the pot, place on a rimmed baking sheet and shred with 2 forks.Remove any large pieces of fat you may come across.
  • Optionally you can add the garlic and cooked onions from the braising liquid to your shredded beef. The actual braising liquid is discarded in this recipe. It can tend to be quite greasy and would also make your bbq beef greasy.
  • Sprinkle 1/2 of the reserved BBQ Seasoning over the shredded beef and toss to coat. Give it a taste and add more seasoning to your liking.
  • Mix the beef with 1/2 cup of your favorite BBQ Sauce.
  • Serve the Shredded BBQ Beef on buns or rolls with additional BBQ sauce, coleslaw, pickles and/or cheese.... whatever toppings you like!

MY MOTHER'S CHICKEN WITH BARBEQUE SAUCE

My mother would combine everything into a pot and the sauce would just sit and simmer on the stove forever. I remember the smell would be somewhat acrid at first, like vinegar. Then the ginger, spices and lemon would take over and create this wonderful aroma. Doused on chicken and cooked in the oven, this sauce was amazing hot and cold leftover!

3 cups ketchup
2 cups cider vinegar
1/2 cup Worcestershire sauce
1/2 cup light soy sauce
1 cup light brown sugar
1 cup dark brown sugar
2 tablespoons dry mustard (preferably Colman's)
2 tablespoons Dijon mustard
1 cup chili powder
1 "knob" fresh ginger (about 4 inches), peeled and cut in 3 pieces
5 large cloves garlic, roughly chopped
2 lemons, cut into 1/2-inch thick slices
4 to 5 pounds chicken parts, a mixture of light and dark meat, all relatively the same size

Steps:

  • Prepare the barbeque sauce:
  • In a medium saucepan or a large high-sided saute pan, combine the ketchup, cider vinegar, Worcestershire sauce, soy sauce, light brown sugar, dark brown sugar, dry mustard, Dijon mustard and chili powder. Whisk to blend. Bring to a simmer over medium heat. Add the ginger, garlic and lemon slices and stir to combine. Simmer until the vinegar mellows slightly and the flavors start to meld together, about 20 to 25 minutes. Remove from the heat and allow to cool. Discard the ginger pieces.
  • Preheat the oven to 350 degrees F. Position the rack in the lower third of the oven. Line a baking sheet (or, if needed, 2 baking sheets) with foil. Season the chicken parts on both sides with salt, to taste. Pour about 1 1/2 cups of the barbeque sauce into a large bowl. Reserve the remaining sauce on the side. Submerge the chicken pieces in the sauce and arrange them on the prepared baking sheet with some of the lemon slices. The chicken should all be in a single layer with a little space between them. If additional space is needed, use the second baking sheet. Brush with barbeque sauce.
  • Put the baking sheet(s) in the oven and bake, undisturbed, for 20 minutes. Remove the chicken from the oven and use a pair of metal tings to turn the pieces to the other side. Use a pastry brush to coat the second side of the chicken with the barbeque sauce from the bowl. Do not reuse that bowl or brush again. Return the sheet(s) to the oven and cook for an additional 15 to 20 minutes. Poke a thigh with the tip of a small knife and verify the chicken juices run "clear" and not pink. Turn the broiler on and broil for a minute until the chicken is charred on top.
  • Warm the reserved barbeque sauce in a small saucepan over low heat. Pour into a serving bowl.
  • Transfer the chicken to a serving platter and serve immediately with the warm sauce on the side.

1-1/2 cups water
1 cup ketchup
1/3 cup Worcestershire sauce
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon onion powder
1/8 teaspoon hot pepper sauce

Steps:

  • Place ribs in a greased roasting pan. Bake, uncovered, at 350° for 45 minutes. Meanwhile, in a saucepan, combine the remaining ingredients. Bring to a boil; cook for 1 minute. Drain ribs. Spoon sauce over ribs. Cover and bake for 1-1/2 hours. Uncover; bake 30 minutes longer, basting once.

This is how my mom always made BBQ ribs, and it can't get any easier. This method keeps the sauce nice & thick. I'm posting it here mainly to see what the nutritional information is.

2 lbs boneless pork ribs
1 (18 ounce) bottle favorite barbecue sauce (we like thick & spicy KC Masterpiece)
salt & pepper, to taste

Steps:

  • Place ribs in crock pot and season with salt and pepper to taste. Cook on low all day-- 6-8 hours.
  • About an hour before supper time, drain all the liquid from the pot. Return ribs to pot and pour in the BBQ sauce. Simmer on low another hour.
  • Serve and enjoy!
