- Beat eggs in a large bowl. Combine with corn syrup and beat until well blended. Stir in pineapple, coconut, sugar, flour, and butter and mix well.
- Spoon filling into unbaked pie shell. Bake at 350 for 45-60 minutes, until crust is browned and filling is firm.
LUBY'S CAFETERIA HAWAIIAN DELIGHT PIE
This is one of their "most requested recipes". Be sure to thoroughly drain pineapple in a wire strainer BEFORE measuring.

- Preheat oven to 350ºF.
- In medium bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended.
- Add drained pineapple, coconut, and vanilla, mixing well. Pour into pie shell.
- Bake 45 minutes, or until wooden pick inserted in center comes out "almost" clean (filling will be very moist).

Joelle had us at pina colada - we love any kind of dessert with those flavors. This yummy no-bake pie does not disappoint. It's super easy to prepare and will be great for summer cookouts. Serve it cold for a great dessert after eating BBQ.

- 1. In a bowl mix pineapple and sour cream with dry pudding mix; mixing well. Add coconut (save a couple of tablespoonfuls for garnish), vanilla, and Cool Whip (save a couple of tablespoonfuls for garnish).
- 2. Pour mixture into pie crust. Spread remaining Cool Whip in a small design (I make a little circle on top for garnish). Sprinkle remaining coconut on top. Place in the fridge for a couple of hours to set up.
- 3. In the hot summer months sometimes I freeze this pie and eat frozen... just a delicious. Enjoy!
TWO MINUTE HAWAIIAN PIE
No-bake Two minute Pie, ok then, the kids can do this ! No oven with this hot summer sun is coming up ! I may be in my 80's but not old that old, the great-great-grand kids can show me a thing or two.

- 1. In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
- 2. Cover and chill at least 2 hours before serving.
- Note: Do not make the vanilla pudding according to package directions. Just add the dry pudding mix right in with the other ingredients.

MY HAWAIIAN PINEAPPLE PIE..A NO-COOK,TWIN DELIGHT
I had tasted this desert while on vacation in Hawaii.. Then back in the states,and after a couple tries. I finally made what I feel is a close duplicate of that tropical delight.. To my surprise my ingredients made two pies. So a twin version was formed. This is a lucious no-cook,quick and easy two pie delight. MMmmmmmm ! Now close youre eyes and smell the pineapple and coconuts! You will think you are in Hawaii, all you need are the tropical ocean breezes!! This recipe makes two twin pies. Yes...you will need both, they just seem to dissappear!

- In a large bowl blend the sweetened condenced milk, thawed whipped topping, drained pineapple and lemon jice with an electric mixer for 2 minutes until thickened.
- Pour the mixture evenly into the two pie crusts.
- Sprinkle each with pie with 1/4 cup of flaked coconut. Refrigerate until chilled....for serving.
