1 (20-ounce) can crushed pineapple in syrup, undrained
1 (6-serving-size) package instant vanilla pudding and pie filling
1 (8-ounce) container sour cream
1 (9-inch) prepared shortbread pie crust
1 (8-ounce) can sliced pineapple, drained and halved
8 maraschino cherries, drained
2 tablespoons sweetened flaked coconut

Steps:

  • In a large bowl, combine crushed pineapple with its syrup, dry pudding mix, and sour cream; mix until well combined. Spoon into pie crust and decorate top with pineapple slices and cherries; sprinkle with coconut.
  • Cover and chill at least 2 hours, or until set, before serving.

13-15 frozen mini pie shells
14 oz. condensed milk
1 can pineapple
½ cup sour cream
1 can whipped cream
3 tbsp shredded coconut

Steps:

  • Preheat oven to 375 degrees F.
  • Line up mini tart shells on a cookie sheet and bake for 10 minutes.
  • Allow the shells to cool.
  • In a large bowl, mix together condensed milk and sour cream.
  • Add 7 tbsp pineapple juice (from the can) and mix until thoroughly combined.
  • Dice 8-10 pieces of pineapple and add into the condensed milk mixture.
  • Fill up each tart shell with the mixture.
  • Bake for an additional 7 minutes. Allow to cool then chill in the refrigerator for 1 hour.
  • Toast the shredded coconut on a small non-stick skillet, over medium heat. Cook for about 2-3 minutes, or until the majority of the shredded coconut shreds turn golden brown.
  • Top off each tart with whipped cream, toasted coconut and one small piece of pineapple.

2 cups graham cracker crumbs
1/2 cup butter (melted)
1/2 cup butter (softened)
2 large eggs
1 teaspoon vanilla extract
2 cups powdered sugar (measured after sifting)
20 -ounce crushed pineapple (drained WELL)
8 -ounce whipped topping (or 2-3 cups homemade whipped topping)

Steps:

  • Grease an 8x8-inch or 9x9 inch baking pan. Preheat oven to 325 degrees.
  • Stir together graham cracker crumbs and melted butter in a medium bowl. Press into your prepared pan. Bake for 10 minutes. Let cool completely.
  • Use an electric mixer to mix softened butter, eggs, vanilla extract until smooth. Gradually beat in powdered sugar. Spread mixture on top of graham cracker crust and bake for 15 minutes. Cool completely.
  • Gently fold together whipped topping and drained crushed pineapple. Spread on top of filling. Cover and refrigerate until ready to serve.

1 cup crushed pineapple (with juice)
1 cup flaked coconut
3/4 cup sugar
2 teaspoons flour
1/4 cup melted butter
1 unbaked pie shell (10-inch)

  • Beat eggs in a large bowl. Combine with corn syrup and beat until well blended. Stir in pineapple, coconut, sugar, flour, and butter and mix well.

2 Tbsp flour or cornstarch
1 c pecans, in pieces
2 c coconut, flaked
2-3 bananas
12 oz whipped topping, thawed
2 pie shell, baked & cooled

  • 1. Cook sugar, pineapple and flour until thickened in a 2 quart saucepan, stirring to prevent sticking. Cool mixture to touch.
