My staple go-to recipe for overripe bananas! The key to super moist muffins is to mix the batter until only just combined, and not to over bake.

1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

These banana chocolate chip muffins are one of the first things my husband gets hungry for when he's home from deployment. I make sure to have the overripe bananas ready. They're a family tradition. -Kimberly Duda, Sanford, North Carolina

Number Of Ingredients 10

1-1/2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 large egg, room temperature
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup butter, melted
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375°. In a large bowl, whisk flour, sugar, baking soda, cinnamon and salt. In another bowl, whisk egg, bananas, melted butter and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake 17-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

3 large bananas
3/4 cup sugar
1 egg
1/2 cup butter, melted
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white flour
1/2 cup whole wheat flour

Steps:

  • Preheat oven to 375°F.
  • Mash Bananas.
  • Add sugar and slightly beaten egg.
  • Add melted butter.
  • Add dry ingredients.
  • Optional: Add 1/2 cup chocolate chips.
  • Bake for 15 - 20 minutes.
  • For Banana Bread: Bake at 350° F for 1 hour.
  • Freezes well.

An easy and excellent banana muffin recipe. I can't keep these in the house. I found this in my "Muffin Mania" recipe book. I changed the recipe to include whole wheat flour because I'm a health nut. The original recipe says to bake at 375F but I bake at 325F because my oven is so hot. Adjust if you have to according to your own oven.

3 large very ripe bananas
3/4 cup white sugar
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup whole wheat flour
1/2 cup all-purpose flour
1/3 cup melted butter

Steps:

  • Melt butter and set aside to cool down slightly.
  • Mash bananas. Add sugar and slightly beaten egg.
  • Add the melted butter.
  • Mix the dry ingredients separately and add to the liquid ingredients.
  • Do not overmix.
  • Fill muffin cups.
  • Bake at 375F - 20 minutes.
