This lentil soup with ham is a combination of two soup recipes I came across and adapted. I often serve it for Sunday dinner, making enough so there are leftovers for my husband's lunch thermos. A bricklayer, he regularly works outside during winter. -Andi Haug, Hendrum, Minnesota

1 meaty ham bone
6 cups water
1-1/4 cups dried lentils, rinsed
1 can (28 ounces) diced tomatoes, undrained
2 to 3 carrots, sliced
2 celery ribs, sliced
1/4 cup chopped green onions
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/8 teaspoon pepper
12 ounces bulk pork sausage, cooked and drained
2 tablespoons chopped fresh parsley

Steps:

  • In a Dutch oven, bring ham bone and water to a boil. Reduce heat; cover and simmer for 1-1/2 hours. , Remove ham bone. To broth, add the lentils, tomatoes, carrots, celery, onions and seasonings; bring to a boil. Reduce heat; cover and simmer until lentils and vegetables are tender, 30-40 minutes., Meanwhile, remove ham from bone; coarsely chop. Add the ham, sausage and parsley to soup; heat through.

When I make my baked ham it is the leftover meaty bone that is my best soup flavoring! In fact we like the soup after the dinner best!!! It is just wonderful.( posted my baked ham recipe)

2 bag(s) red lentils
1 meaty ham bone leftover
2 medium carrots, chopped
2 stalk(s) celery chopped
1 medium chopped onion
1 Tbsp garlic powder
2 bay leaves
1 Tbsp tomato paste
1 c canned chopped tomatoes
1 Tbsp olive oil, extra virgin
kosher salt and fresh pepper to taste at end

Steps:

  • 1. In a large soup pot cover ham bone with water ( ham hocks may be used if no meaty ham bone leftover)
  • 2. Add chopped celery Onions Carrots Tomatoes
  • 3. Add garlic powder, bay leafs , tomato paste
  • 4. Add lentils
  • 5. Simmer about two hours after bringing to a boil first
  • 6. Stir in olive oil at the end REMOVE ALL BAY LEAVES!!!!
  • 7. Cut meat off ham bone add to soup Toss bone away
  • 8. Season with salt and pepper to taste
  • 9. Serve with warm rolls or bread and butter or good crackers

I originally called this my 'experimental lentil' soup, patching together various other lentil soup recipes. I've been making it every fall for a decade now. What's listed here is a single recipe, though I can't remember the last time I've made such a small batch. It's great for freezing in individual servings for lunches.

8 cups water
2 ⅔ tablespoons chicken bouillon granules
1 ham bone with some meat
2 cups lentils
2 stalks celery, chopped
1 cup chopped carrots
1 green bell pepper, chopped
½ onion, chopped
1 teaspoon dried marjoram
¼ teaspoon crushed bay leaf

Steps:

  • Bring water and chicken bouillon granules to a boil in a stock pot, stirring to dissolve bouillon. Place ham bone in boiling broth, reduce heat to medium-low, and stir in lentils. Simmer until lentils begin to soften, about 10 minutes.
  • Stir celery, carrots, green bell pepper, onion, marjoram, and bay leaf into broth and simmer until lentils and vegetables are tender, 10 to 20 minutes. Turn off heat and remove ham bone from soup. Cut ham from the bone, cube the meat, and return meat to soup, discarding the bone.

1 (32 ounce) carton low-sodium chicken broth
2 cups water
2 carrots, chopped
2 stalks celery, chopped
1 large onion, chopped
1 cup dried lentils
2 cloves garlic, minced
2 tablespoons red wine vinegar
1 ½ cups cubed fully cooked ham
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Stir chicken broth, water, carrots, celery, onion, lentils, garlic, and red wine vinegar together in a large stockpot; bring to a boil, reduce heat to low, and cook at a simmer until the carrots are tender, about 10 minutes.
  • Stir ham, mustard, salt, and pepper into the soup; continue cooking until the lentils are tender, 20 to 30 minutes more.

1 package (16 ounces) dried green split peas
1 meaty ham bone
1 large onion, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1 bay leaf
1 cup chopped carrot
1 cup chopped celery

Steps:

  • Sort peas and rinse with cold water. Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until peas are softened. Drain and rinse peas, discarding liquid., Return peas to Dutch oven. Add 2-1/2 qts. water, ham bone, onion, salt, pepper, thyme and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours, stirring occasionally., Remove the ham bone; when cool enough to handle, remove meat from bone. Discard bone; dice meat and return to soup. Add carrot and celery. Simmer, uncovered, for 45-60 minutes or until soup reaches desired thickness and vegetables are tender. Discard bay leaf.

Number Of Ingredients 10

1 leftover smoked ham bone or 2 smoked ham hocks
1 pound lentils (about 2 1/2 cups), picked over and rinsed
1/2 pound mushrooms, chopped (about 3 1/2 cups)
3 onions, chopped coarse
1 cup chopped carrot
1 cup chopped celery
1 cinnamon stick
1 bay leaf
3 1/2 cups beef broth
8 cups water

Steps:

  • In a 6- to 8-quart kettle combine all ingredients and simmer soup, covered partially, stirring occasionally, 1 1/2 hours. Discard bay leaf and cinnamon stick and remove meat from bone or hocks. Chop meat and stir into soup.
