6 chicken breasts (boneless and skinless)
1/3 cup lime juice
1/4 cup olive oil (extra virgin)
2 tbsp cilantro (chopped)
1 tbsp garlic (minced)
1 tsp chipotle pepper powder
1 tsp chili powder
1 tsp salt
1/2 tsp ground cumin

Steps:

  • In a gallon Ziploc bag or large covered bowl combine chicken and all marinade ingredients. Let marinade for a minimum of 1 hour or as long as 12 hours. (The longer the better to really bring out the lime flavor.)
  • Preheat the grill to medium high heat.
  • Add chicken to grill. Discard the remaining marinade.
  • Cook the chicken, turning occasionally, until completely cooked through. This can take about 10 minutes but time varies depending on the thickness of your chicken.
  • Serve immediately. Garnish with a little extra fresh cilantro if you're entertaining and want to impress your guests!

1 (1-pound) whole pork tenderloin
1 lime, zested
1/2 cup freshly squeezed lime juice
1/4 cup honey
1 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1 chipotle chile pepper in adobo sauce, chopped
1 teaspoon vegetable oil
1 tablespoon chopped fresh cilantro

Steps:

  • Trim the pork tenderloin of any excess fat and silver skin.
  • Put the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of this marinade into a 1-gallon zip-top bag, add the chipotle pepper, and slosh around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible, and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, flipping the bag halfway through. Cover the jar with the remaining marinade and refrigerate until ready to use.
  • Remove the tenderloin to a plate and discard the bag and marinade. Allow the tenderloin to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
  • Fill a large chimney starter with natural lump charcoal and light it. Once the charcoal is ashy and white, about 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
  • Brush the grill with vegetable oil. Place the tenderloin in the center of grate. Cover and cook until the tenderloin reaches an internal temperature of 140ºF, turning every 1 1/2 to 2 minutes, about 12 to 15 minutes total.
  • Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

1 canned chipotle chile in adobo, ribs and seeds removed, plus 1 tablespoon adobo sauce
1 1/2 teaspoons lime zest (from about 2 limes), divided
1/3 cup fresh lime juice (from about 3 limes)
2 tablespoons vegetable oil
1 1/2 teaspoons kosher salt, plus more
1 teaspoon freshly ground black pepper, plus more
1 1/2 pounds skirt or flank steak
Lime wedges (for serving)

Steps:

  • Blend chile, adobo sauce, 1 tsp. lime zest, lime juice, oil, 1 1/2 tsp. salt, and 1 tsp. pepper in a blender until smooth. Place steak in a large resealable plastic bag, pour marinade over, and toss to coat. Marinate, tossing occasionally, at least 30 minutes at room temperature, or chill overnight.
  • If chilled, let steak sit at room temperature 30 minutes. Prepare a grill or grill pan for medium-high heat. Remove steak from marinade; discard marinade. Grill steak until an instant-read thermometer inserted into the center of steak registers 120-125°F for medium-rare, 2-3 minutes per side for skirt; 3-4 minutes per side for flank. Let rest 10 minutes before thinly slicing against the grain (to make slicing easier for skirt steak, cut into 5-6" segments, then slice against the grain).
  • Transfer to a platter and top with remaining 1/2 tsp. lime zest; season with salt and pepper. Serve with lime wedges alongside.

Recipe from package of pork chops.Prep time does not include marinating time. You can alternately use dried chipotle, just rehydrate in hot water for about 15 mins and then chop. I actually like this better as a marinade for pork tenderloin.

1 canned chipotle chile in adobo, chopped
2 teaspoons oregano
2 garlic cloves, chopped
1/4 cup olive oil

  • Place chops in large self-sealing plastic bag; combine remaining ingredients in a small bowl and pour over chops.

A recipe found on a WW community I used to visit. This is more of a rub than a marinade. I've used this on both chicken and pork. Can be used on fish, but should only be marinated about 20 minutes. Any longer and it will break down because of the lime juice.

1 teaspoon garlic salt
1 teaspoon dried oregano, crushed
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 lime, juiced
1 tablespoon oil

Steps:

  • Combine spices in a large zipper bag.
  • Add lime juice and oil.
  • Seal bag and mix by kneading until all powder and juice are blended together.
  • Place your choice of meat in the bag, seal and toss around until all meat is coated.
  • Marinate about an hour depending on the meat you have chosen.

1/4 cup fresh lime juice
1/4 cup olive oil
2 1/2 tablespoons chipotle Tabasco
3/4 teaspoon salt
6 large skinless boneless chicken thighs (2 1/2 lb total)
2 teaspoons mild honey

Steps:

  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas).
  • While coals are lighting, stir together lime juice, oil, Tabasco, and salt in a liquid-measuring cup. Put chicken in a large sealable bag and add 1/3 cup marinade (reserve remainder in cup). Seal bag, forcing out excess air, and marinate chicken at room temperature, about 15 minutes. Stir honey into remaining marinade until dissolved to make sauce.
  • Grill chicken (discarding marinade in bag) on lightly oiled grill rack, covered only if using a gas grill, turning chicken over occasionally and moving it to avoid flare-ups if necessary, until just cooked through, 8 to 10 minutes total.
  • Brush both sides of chicken with some of reserved sauce, then continue to grill, turning over once, until lightly browned, about 1 minute more. Serve chicken drizzled with remaining sauce.
