ITALIAN WHITE-BEAN-AND-MUSTARD-GREENS SOUP



Italian White-Bean-and-Mustard-Greens Soup image

Mustard greens have a sharp, radishy bite that's delicious in a bean soup, but, if you like, you can substitute kale or collards. Smaller white beans such as cannellini can be used in place of giant white beans.

1 pound dried giant white beans, such as gigante, Corona, or lima
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 onion, finely chopped (1 1/4 cups)
2 medium carrots, cut into 1/4-inch dice (1 cup)
4 cloves garlic, minced
1 1/2 pounds mustard greens, washed well and stems removed, cut crosswise into 1/2-inch-thick strips
5 thyme sprigs
5 flat-leaf parsley sprigs
2 bay leaves
1 Parmesan cheese rind (about 1 by 4 inches; optional), plus freshly grated Parmesan cheese, for sprinkling
2 quarts water
Coarse salt and freshly ground pepper
1 cup farro

Steps:

  • Place beans in a large bowl, cover with 2 inches cold water; let soak overnight at room temperature. Drain and rinse beans. (Or quick-soak them: Boil beans 1 minute, then let them sit off heat, covered, 1 hour.)
  • Preheat oven to 300 degrees. Heat oil in a large, heavy-bottomed ovenproof pot over medium-high heat. Add onion and carrots, and cook, stirring occasionally, until vegetables are golden brown in places, 8 to 10 minutes. Add garlic and greens to pot, and cook, stirring frequently, until greens wilt, about 2 minutes.
  • Tie together thyme, parsley, and bay leaves with kitchen twine, and add to pot along with beans, Parmesan rind, and water. Bring to a boil over high heat. Cover, transfer to oven, and braise 1 hour.
  • Remove from oven, and stir in 1 tablespoon salt and 1/2 teaspoon pepper. Cover, return to oven, and braise until beans are tender, about 30 minutes. Season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to boil. Add farro, and cook until grains are tender and begin to split, about 25 minutes. Drain.
  • Divide farro among 6 bowls, and ladle soup over farro. Sprinkle with Parmesan, and drizzle with oil. Soup and farro can be refrigerated in separate containers 2 days; let cool completely before refrigerating. Gently reheat together in a covered pot over medium heat, stirring occasionally.

4 tablespoons olive oil
2 cups chopped onions
2 pounds Yukon Gold potatoes, peeled, cut into 1-inch pieces
8 cups (or more) water
1/2 teaspoon dried crushed red pepper
4 garlic cloves, minced
1 bunch mustard greens (about 12 ounces), stems trimmed, leaves coarsely chopped
1 10-ounce package fresh spinach, stems trimmed
Sour cream

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium heat. Add onions and sauté until tender and golden, about 8 minutes. Add potatoes; sauté 3 minutes. Add 8 cups water and crushed red pepper. Bring to boil. Reduce heat. Simmer until potatoes are tender, about 20 minutes.
  • Meanwhile, heat remaining 2 tablespoons oil in another heavy large pot over medium heat. Add garlic; sauté until fragrant, about 1 minute. Add mustard greens and all but 1 cup spinach leaves; sauté until wilted, about 3 minutes.
  • Add sautéed greens to potato mixture. Working in batches, purée soup in blender until smooth. (Can be prepared 1 day ahead. Cool. Cover and refrigerate.) Return soup to pot. Bring to simmer, thinning with more water, if desired. Season soup to taste with salt and pepper.
  • Cut remaining 1 cup spinach leaves into 1/3-inch-wide slices. Ladle soup into bowls. Add dollop of sour cream to each bowl. Garnish soup with sliced spinach leaves and serve.

3 tablespoons EVOO
1 large celeriac (celery root), 1 1/4 pounds, peeled and chopped
2 parsnips, peeled and chopped
1 Idaho potato, peeled and chopped
1 onion, chopped
Kosher salt and freshly ground pepper
1 bay leaf
2 tablespoons chopped fresh thyme
3 large Gala or other crispy, sweet apples, 2 peeled and chopped, 1 sliced
1/2 lemon, juiced
1/2 cup Calvados apple liquor or 1/2 cup Sauterne (citrusy) wine
4 cups chicken stock, homemade or store-bought
1 cup heavy cream or creme fraiche
1 stick butter, softened
8 slices, 1/2-inch thick, good quality white bread
1/2 cup apple butter
1/3 cup honey
1/4 cup grainy Dijon mustard
3/4 pound super sharp white Cheddar, sliced
12 slices good quality smoky bacon

Steps:

  • For the soup, heat the EVOO, 3 turns of the pan, in a soup pot or large Dutch oven. Add the chopped celeriac, parsnips, potato, onion, bay and thyme. Season with salt and pepper and cook, partially covered, to soften, 10 to 12 minutes, stirring occasionally. Add the apples and lemon juice and cook 5 minutes more. Then deglaze the pan with the Calvados or Sauterne and add the chicken stock. Simmer over medium-low heat, 20 to 25 minutes more. Then remove the bay leaf and puree the soup. If too thick, add 1 cup water to puree. Add the cream or creme fraiche, turn off the heat, cool and store for a make-ahead meal.
  • Butter one side of each slice of bread. Combine the apple butter, honey and mustard and spread over opposite sides of the bread. With the buttered-side facing out, build the cheese sandwiches and individually wrap for make-ahead.
  • To serve, preheat the oven to 375 degrees F. Heat the soup up over medium heat, stirring occasionally. Arrange the bacon on a slotted pan and bake until crisp, about 15 minutes. Place the bacon and sliced apples in the prepared sandwiches. Heat a griddle pan over medium heat and make the grilled cheeses, cooking until deeply golden and crisp on both sides.

1 tablespoon vegetable oil
Kosher salt, freshly ground black pepper
4 cups low-sodium chicken broth
1 bunch mustard greens, torn (about 4 cups)
4 scallions, thinly sliced
2 tablespoons reduced-sodium soy sauce
1 teaspoon fish sauce (such as nam pla or nuoc nam)
8 ounces wide rice noodles

Steps:

  • Mix pork, garlic, ginger, Sichuan peppercorns, red pepper flakes, and cumin in a medium bowl. Heat oil in a large pot over medium heat. Add pork mixture; season with salt and pepper and cook, stirring and breaking up with a spoon, until browned and cooked through, 8-10 minutes.
  • Add broth and bring to a boil; reduce heat and simmer until flavors meld, 8-10 minutes. Add mustard greens, scallions, soy sauce, and fish sauce and cook, stirring occasionally, until greens are tender, 5-8 minutes; season with salt and black pepper.
  • Meanwhile, cook noodles according to package directions; drain.
  • Divide noodles among bowls and ladle soup over.

DUTCH MUSTARD SOUP (ZAANSE MOSTERDSOEP)

Never ate this before I came to The Netherlands. It is mostly served as a starter. Originally it is served with little bits of crispy baked bacon but since I do not eat bacon I can not vouch for how the soup tastes when you use it. It is delicious without bacon too!

1 pound pork spareribs
1 medium onion, halved and thinly sliced, divided
6 cloves garlic, sliced, divided
1 (32 ounce) container chicken broth
2 bunches mustard greens, stemmed and chopped
1 lime, juiced
3 jalapeno peppers, sliced
2 ½ tablespoons fish sauce
1 bunch fresh cilantro, chopped
salt to taste

Steps:

  • Combine water, spareribs, 1/2 of the onion, and 3 cloves garlic in a pot over high heat. Bring to a boil, reduce heat, and simmer until meat easily falls off the bones, about 2 hours.
  • Remove bones from spareribs and return meat to the broth. Add chicken broth and bring to a boil. Stir in mustard greens, lime juice, jalapenos, fish sauce, and remaining onion and garlic. Boil for 5 minutes. Stir in cilantro and season with salt.

4 boneless skinless chicken breast halves
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
1/4 cup mayonnaise
2 tablespoons honey
1 tablespoon spicy brown mustard
toasted walnuts (optional) or pecans (optional)

Steps:

  • Melt butter in large skillet over medium-high heat.
  • Cook chicken for 10 minutes or until browned.
  • Remove chicken and set aside.

2 1/2 tablespoons chili bean paste (Sichuan hot bean paste; dou ban jiang)
3 whole green onions, trimmed, plus 2 cups chopped green onions (for garnish)
1/2 cup (or more) soy sauce (do not use low-sodium)
2 tablespoons (or more) salt
6 whole star anise
2 1 1/2-inch cubes Chinese yellow rock sugar (about 2 1/2 ounces) or 2 1/2 tablespoons sugar
1/2 tablespoon Sichuan peppercorns
2 large plum tomatoes (about 8 ounces), each cut into 4 wedges
Freshly ground white pepper or black pepper
1 pound eggless Chinese wheat noodles (Shandong la mian)

Steps:

  • Bring large pot of water to boil over high heat. Add beef; return water to boil. Reduce heat. Simmer until beef is brown on outside, turning occasionally, about 8 minutes; drain. Rinse beef under cold water until cool; cut into 1 1/2-inch cubes. Wipe out pot.
  • Heat 1/4 cup oil in same pot over medium-high heat. Add ginger and garlic. Sauté 1 minute. Add chopped onions; sauté until translucent, about 3 minutes. Add chili bean paste; stir 30 seconds. Add 16 cups water, whole green onions, 1/2 cup soy sauce, 2 tablespoons salt, star anise, and rock sugar. Mix in beef. Tie peppercorns in cheesecloth; add to pot. Bring soup to boil. Reduce heat to medium-low. Gently simmer uncovered 1 hour, adjusting heat to avoid boiling.
  • Add tomatoes to pot. Continue to simmer soup until beef is very tender, 45 to 60 minutes. Adjust seasoning, adding more soy sauce by tablespoonfuls and more salt, if desired. Season with pepper.
  • Meanwhile, cook noodles according to package directions. Drain well.
  • Divide noodles among large soup bowls. Add some bok choy to each, if desired. Ladle soup and meat over. Garnish with chopped green onions and cilantro. Serve with Pickled Mustard Greens .
  • Ingredient tips:
  • Chili bean paste is a spicy, fermented soybean paste. **Star anise-**a star-shaped seedpod-is available at some supermarkets. Chinese yellow rock sugar is made from raw sugar; it is often used in Chinese sauces and teas. Despite their name, Sichuan peppercorns aren't related to regular peppercorns; the mildly hot dried berries, which resemble split peppercorns, come from the prickly ash tree. Shandong la mian are Chinese wheat noodles. Look for these ingredients at specialty foods stores and Asian markets.

1 tablespoon butter
1 large onion, diced (2 cups)
1 large carrot, diced
2 sticks celery, diced
2 quarts beef stock
1/2 cup orange lentils
1/3 cup barley
1 can kidney beans, drained and rinsed
1 can roman beans, drained and rinsed
1 recipe Turkey Meatballs, recipe follows
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon Dijon mustard
3/4 cup water
1 1/2 tablespoons extra-virgin olive oil
1 small onion, diced (about 3/4 cup)
2 cups dry broken-up white bread
1 cup milk
1 pound ground turkey meat
2 large eggs, well beaten
2 tablespoons freshly chopped parsley leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup golden raisins, hydrated in warm water
1/2 cup pine nuts, slightly toasted
Flour
1 cup vegetable oil

Steps:

  • Add the olive oil and butter in a Dutch oven and place over medium heat. Saute the onions, carrots and celery for 5 minutes.
  • In a saucepan add beef stock and bring to the boil on a medium heat, once the vegetables have softened add the simmering stock to the Dutch oven. (We should never add a cold liquid to an already heated pot as it dramatically drops the heat and slows down the cooking process.)
  • As the stock is at temperature, add the lentils, barley and stir the broth. Place the lid back on and let the mixture cook for 5 minutes. Then add the drained and rinsed beans and cook for an additional 5 minutes.
  • Add the browned turkey meatballs to the stock. Meanwhile, begin making your dumplings.
  • In a mixing bowl add the flour, salt, baking powder and Dijon mustard. Sparingly add the water to the mixture and fold mixture until it forms a dough. With 2 tablespoons mold your dumplings 2 inches in diameter then drop them into the already simmering turkey meatballs and bean soup. Cook together for an additional 25 minutes with the lid on. Once the dumplings have risen and expanded, serve!
  • In a heated skillet add olive oil and onions. Slightly cook them for about 5 minutes (we want the onions softened not colored). Place into a bowl and let cool.
  • Take the 2 cups of broken up bread and place into a bowl with the milk. Let the bread soak for 5 minutes. Squeeze and drain the bread then place it into a large mixing bowl. Add the turkey meat, beaten eggs, chopped parsley, salt, black pepper, golden raisins and toasted pine nuts.
  • Fold all ingredients together. Do not over work the turkey meat.
  • Fill a Dutch oven with vegetable oil and place on low heat. Dust a baking sheet with about an inch of flour.
  • In your hands scoop up a two-finger portion of the turkey mixture and with the palm of your hands shape the balls a little larger than a golf ball. As you make the balls add them to the baking tray with the flour and roll them until evenly coated.
  • Carefully add the meatballs to the oil and brown for about 6 minutes. Transfer turkey meatballs to a plate and set aside for bean soup. Pour excess oil into a bowl.

2 tablespoons olive oil
1 ½ pounds broccoli - stems peeled and cut into 1-inch chunks, remaining broccoli cut into medium florets
1 large onion, cut into large dice
1 tablespoon butter
1 pinch sugar
3 large garlic cloves, thickly sliced
1 ½ teaspoons dry mustard
½ teaspoon basil
¼ teaspoon oregano
⅛ teaspoon cayenne pepper
3 cups chicken broth, homemade or from a carton or can
1 ½ cups half-and-half (or whole milk)
Salt and freshly ground pepper, to taste
Garnish: toasted pine nuts*

Steps:

  • Heat oil over medium-high heat in a large, deep saute pan until shimmering.
  • Add broccoli, then onion; saute, stirring very little at first, then more frequently, until vegetables start to turn golden brown, 7 to 8 minutes.
  • Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
  • Add mustard, basil, oregano, and cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.
  • Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until broccoli is tender, about 10 minutes.
  • Using an immersion blender or traditional blender, puree until very smooth, 30 seconds to 1 minute. (If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.)
  • Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.

1 ½ pounds leeks, sliced
1 onion, chopped
1 potato, cubed
1 carrot, chopped
1 tablespoon margarine
1 tablespoon olive oil
1 ¼ teaspoons dry mustard powder
2 teaspoons cornstarch
½ cup water
salt and pepper to taste
1 teaspoon white sugar
5 cups water
1 cube vegetable bouillon
1 cup heavy whipping cream
⅛ cup shredded Gruyere cheese
¼ cup shredded Cheddar cheese

Steps:

  • In a large pot over medium heat, saute the leeks, onion, potato and carrot in the butter or margarine and the olive oil for 10 minutes, or until all vegetables are tender.
  • Mix the mustard powder and cornstarch with the 1/2 cup water to make a thin paste. Set aside.
  • Season the vegetable mixture with salt and pepper and sugar. Stir in the mustard-water mixture and the 5 cups water. Bring mixture to a boil. Stir in the bouillon cube, reduce heat and simmer for about one hour, until reduced by half.
  • Using a hand blender or upright blender, puree mixture until frothy but not completely smooth.
  • Return this to the pot and bring to a boil. Stir in the heavy cream, Gruyere and Cheddar cheeses. Heat until cheeses melt, do not boil. Serve hot.

1 lb bacon, diced
3 tablespoons salted butter
1/3 cup all-purpose flour
1 quart chicken stock
2 egg yolks
1 cup creme fraiche
1/2 cup country Dijon mustard
1 Granny Smith apples, diced

Steps:

  • Cook the bacon in a large, deep skillet over medium heat, stirring occasionally, until crisp and evenly browned, about 10 minutes. Pour off the fat and drain the bacon on a paper towel-lined plate.
  • Melt the butter in a saucepan over medium-low heat. Add the flour and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk the chicken stock into the flour mixture and bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth, 10 to 15 minutes. Reduce heat to low.
  • Beat the egg yolks and heavy cream together until blended. Slowly whisk 1/4 of the hot soup into the cream mixture and return the cream mixture to the soup pot. Whisk in the mustard; stir in the apple and bacon. Cook and stir until the soup is hot but not simmering.

1 (1-pound) bag frozen baby lima beans, thawed (3 cups)
2 1/2 cups water
1 medium onion, finely chopped
1 large garlic clove, minced
3 tablespoons unsalted butter
3/4 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen baby peas
2 cups coarsely chopped trimmed mustard greens
2 tablespoons chopped fresh chives

Steps:

  • Purée 1 cup lima beans with water in a blender until smooth, about 1 minute.
  • Cook onion and garlic in butter in a 3-quart heavy saucepan over moderately low heat, stirring, until softened, about 6 minutes. Add purée, remaining lima beans, salt, and pepper and simmer, covered, stirring occasionally, 3 minutes. Stir in peas and mustard greens and simmer, covered, 3 minutes.
  • Stir in chives and season with salt and pepper.

50g butter
8 rashers streaky bacon , chopped
5 large leeks , sliced
2 large potatoes , cubed
1.2l vegetable stock
2 bay leaves
300ml milk
handful chopped parsley
1 long thin baguette
4 tbsp olive oil
1 tbsp wholegrain mustard

Steps:

  • Melt the butter in a large pan, add the bacon and fry it until it is just starting to colour. Add the leeks and potatoes, then stir well until they are glistening.
  • Add the stock and bay leaves, season and bring to the boil. Partly cover and simmer for 15 mins, until everything is cooked. Fish out the bay leaves, then purée the soup in batches in a food processor or blender. Return to the pan and stir in the milk. Reheat gently and season to taste. Add more stock or water if the soup seems too thick (this will depend on the size of your potatoes). Sprinkle with parsley to serve.
  • Make the toasts: heat oven to 200C/fan 180C/gas 6. Cut the baguette into thin diagonal slices. Mix the oil and mustard together, then brush over both sides of the bread. Spread them on a large baking sheet and bake for 10 mins. Serve with the soup for dipping. They can be baked earlier in the day and served cold or warmed through in the oven.

I got this recipe about 2 years ago in a magazine which I promptly misplaced. About a month ago I got it again in an email from Cuisine at Home. This time I promptly made it with mustard greens from my garden and took it to a potluck. All I brought home was an empty pot it was so good. I've adjusted the cayenne because some people found it to be a bit warm at 1/2 tsp although my dh and I enjoyed it as is.

2 tablespoons olive oil
1 cup yellow onion, diced
1/2 cup carrot, diced
1/2 cup celery, diced
1/4 cup red bell pepper, diced
1 tablespoon garlic, minced
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon cayenne
4 cups low sodium chicken broth
2 cups cooked chicken breasts, shredded
1 (14 1/2 ounce) can diced tomatoes
1/2 cup creamy peanut butter
1/4 cup dry instant couscous
4 cups mustard greens, stemmed, chopped
salt

Steps:

  • Heat oil in a stock pot.
  • Add onion sautéing until transparent.
  • Add carrot, celery, bell pepper, garlic, and seasonings.
  • Cook about 4 minutes, stirring often.
  • Add broth, chicken, tomatoes and greens.
  • Bring to a boil, reduce heat to low, and simmer 10 minutes.
  • Stir in peanut butter and couscous.
  • Cover, remove from heat, and allow to sit 5 minutes.
  • Garnish each serving with peanuts and scallions.

1 pound ground pork tenderloin
2 cloves garlic, finely chopped
1 T finely grated fresh ginger
1 t Sichuan peppercorns, crushed
1 t crushed red pepper flakes
1 t crushed cumin seeds
1 T canola oil
s & p
4 C chicken broth
4 C packed torn mustard greens
4 green onions, thinly sliced
2 T soy sauce
1 t fish sauce
8 oz. wide rice noodles

Steps:

  • Mix pork, garlic, ginger, peppercorns, red pepper flakes and cumin in a medium bowl. Heat oil in a large pot over medium heat. Add pork mixture. Season with s & p. Cook, breaking up, until browned and cooked through, 8 - 10 minutes. Add broth and bring to a boil. Reduce heat and simmer until flavors meld, 8 to 10 minutes. Add all but noodles until greens are tender, 5 to 8 minutes. Season with s & p. Cook noodles according to package directions; drain. Divide noodles among bowls and ladle soup over.

I included this recipe into my England/Scotland/Ireland cookbook (for the Zaar World Tour) because it comes from an English source and makes use of English ingredients or ingredients that are easily available in England.

2 tablespoons vegetable oil
1 large onion, chopped
8 slices streaky bacon
2 potatoes, chopped
1 small cauliflower, cut into florets, leaves sliced
600 ml vegetable stock (1 pint)
300 ml milk (1/2 pint)
8 slices French bread
4 teaspoons prepared mustard
100 g gruyere or 100 g cheddar cheese, grated

Steps:

  • START THE SOUP:.
  • Heat oil in a large pan, add onion and fry for 5 minutes until softened. Chop two bacon rashers, add to the pan and fry for a further 2 minutes.
  • FINISH THE SOUP:.
  • Stir in the potatoes and cauliflower and mix well. Add the stock and bring to the boil. Cover and simmer for 15 minutes until the vegetables are tender. Preheat the grill to medium. Purée the soup in a blender or soup processor, then return to the pan and stir in the milk. Reheat gently. Check the consistency and add more water, stock or milk if desired. Reheat gently, taste and add salt and pepper.
  • TOASTIES:.
  • Meanwhile, grill the remaining bacon until crisp, then drain on kitchen paper and cut into pieces. Toast the bread on one side; spread mustard over the untoasted sides and sprinkle with the grated cheese. Grill until the cheese is melted and golden.
  • SERVE:.
  • Serve big bowls of soup sprinkled with the grilled bacon pieces and cheese toasties on the side.

2 cups cubed cooked chicken (parts on hand)
1 pint defatted chicken broth
1 -2 tablespoon honey mustard
1/4 cup frozen baby peas
1 pint heavy cream
1 tablespoon cornstarch

Steps:

  • Either use left over chicken and canned broth or poach chicken in 1 pint of water and use cooking liquid as the broth-- If using the cooking water as broth, flavour by adding chopped celery and carrots for a better tasting broth.
  • Put the broth and mustard in a sauce pan and simmer until the honey is blended with the broth.
  • Add some freshly cracked white pepper and a bit of nutmeg or cinnamon. Add the frozen peas to the pan and then remove from heat. Mix the cream and cornstarch well and add to the pan.
  • Add in the cooked cubed chicken and then put the pan back on low heat; stir until thickened slightly.
  • Try with cinnamon raisin bagel bites or croutons.
  • Keep the heat gentle as you do not want to curdle the cream. Everything is cooked already, so nothing needs to be boiled.
