BAKED DIJON SALMON

This is a wonderful way to prepare fresh salmon fillets in the oven. Be sure to make extra, your family will be begging for more!

¼ cup butter, melted
3 tablespoons Dijon mustard
1 ½ tablespoons honey
¼ cup dry bread crumbs
¼ cup finely chopped pecans
4 teaspoons chopped fresh parsley
4 (4 ounce) fillets salmon
salt and pepper to taste
1 lemon, for garnish

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
  • Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
  • Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

Number Of Ingredients 15

1 cup panko breadcrumbs
1 tablespoon crushed mustard seeds
2 teaspoons cracked coriander seeds
1 tablespoon minced fresh parsley
Salt and freshly ground black pepper
1/4 cup Dijon mustard
1/2 cup plain yogurt
1/4 cup sour cream
1/4 cup fresh watercress, minced
2 tablespoons rice wine vinegar
1 tablespoon thinly sliced fresh mint
1 teaspoon minced garlic
Six 6 to 7-ounce salmon fillets, with skin
2 tablespoons grapeseed oil
Fresh herbs, for garnish, optional

Steps:

  • For the crust: In a bowl, blend the panko, mustard seeds, coriander seeds and parsley together. Season with salt and pepper.
  • For the wash: In a second bowl, blend the mustard with 1/2 cup water, whisking well to blend.
  • For the sauce: Whisk the yogurt, sour cream, watercress, vinegar, mint and garlic in a bowl. To ensure the spices are blended, scrape the sides and whisk a second time. Hold at room temperature if using within 30 minutes, or refrigerate for future usage.
  • For the salmon: Coat the salmon with the wash, and then finish the top side (skin side) with the crust. Repeat the process with each fillet.
  • In medium saute pan over medium heat, coat the bottom of the pan with the oil. When warmed, add the crusted side of the salmon to the pan and cook, in batches, until golden brown, 2 to 3 minutes. Flip the fish and finish cooking until desired temperature. Remove from the pan.
  • Finally, sauce the plates with 2 ounces of the watercress/mint sauce. Top with the salmon and fresh herbs if desired.

3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
Salt and pepper
4 pieces salmon fillet (6 ounces each), with skin
Chopped fresh dill (optional)

Steps:

  • Preheat the oven to 425 degrees. In a small bowl, mix together olive oil, mustard, lemon juice, and 1/4 teaspoon each salt and pepper.
  • Put salmon, skin side down, in a baking dish, and spoon mustard glaze over each piece of fish. Bake until salmon is just cooked through and no longer red, 6 to 8 minutes. Sprinkle with chopped dill, if desired, and serve.

3-1/2 teaspoons cider vinegar
1 tablespoon sugar
1 tablespoon Dijon mustard
3/4 teaspoon ground mustard
2 tablespoons canola oil
2 salmon fillets (6 ounces each)
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup soft bread crumbs

Steps:

  • In a blender, combine the vinegar, sugar and mustards; cover and process until smooth. While processing, gradually add oil in a steady stream. , Place salmon, skin side down, in a greased 8-in. square baking dish. Sprinkle with thyme, salt and pepper., Spread mustard mixture over fillets; gently press bread crumbs on top. Bake, uncovered, at 375° for 20-25 minutes or until fish flakes easily with a fork.

1/2 cup dry white wine
1/4 cup (packed) chopped shallots
3 tablespoons yellow mustard seeds
3/4 cup whipping cream
5 tablespoons whole grain Dijon mustard
1 tablespoon chopped fresh tarragon
4 6-ounce skinless salmon fillets
2 tablespoons butter

Steps:

  • Boil wine, shallots and 1 tablespoon mustard seeds in heavy small saucepan until mixture is reduced to 1/2 cup, about 2 minutes. Whisk in cream, 2 1/2 tablespoons Dijon mustard and tarragon. Boil until thickened to sauce consistency, abut 3 minutes. Season with salt and pepper. Remove from heat; cover.
  • Brush salmon on both sides with remaining 2 1/2 tablespoons Dijon mustard. Sprinkle remaining 2 tablespoons mustard seeds, salt and pepper onto both sides of salmon. Melt butter in large nonstick skillet over medium heat. Add salmon and cook just until opaque in center, about 4 minutes per side. Transfer to platter. Spoon mustard sauce over salmon.
