MUSTARD BAKED CHICKEN WITH POPPY SEEDS
Chicken pieces are baked in a mild mustard sauce, then coated in poppy seeds. You can serve it on a bed of fresh small pasta shells or with mashed potatoes.

Steps:
- Preheat the oven to 400°F.
- Arrange the chicken pieces in a single layer in a large ovenproof dish.
- Mix together the butter, mustard, lemon juice, brown sugar, and paprika in a bowl and season with salt and pepper to taste. Brush the mixture over the upper surfaces of the chicken pieces and bake in the oven at 400F for 15 minutes.
- Remove the dish from the oven and carefully turn over the chicken pieces. Coat the upper surfaces of the chicken with the remaining mustard mixture. Sprinkle the chicken pieces with poppy seeds and return to the oven for a further 15 minutes.
- Serve with pasta or mashed potatoes.

- Whisk mustard, maple syrup, 1 tablespoon oil, thyme, pepper and salt in a large bowl.
- Add chicken and turn to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes and up to 6 hours.
- Preheat oven to 400°F Set a wire rack on a large baking sheet.
- Combine breadcrumbs and the remaining 1 tablespoon oil on a plate. Dredge the skinned side of each chicken piece in the breadcrumbs (with drumsticks, dredge the meatier side) and arrange breaded-side up on the wire rack. Leave at least 1 inch between pieces.
- Bake until golden brown and an instant-read thermometer inserted into the thickest part of the meat registers 165°F, 35 to 40 minutes.
- Serve hot or let cool, refrigerate and serve chilled.

Steps:
- Arrange chicken pieces in single layer in ovenproof casserole dish.. Mix the mustard, sugar, lemon juice, paprika, garlic and salt and pepper, brush half the mixture over chicken and bake in 375F oven for 30 minutes.
- Remove the dish from oven and turn the chicken pieces over and brush with remaining mustard mix,,return to oven and add the peas and bake for another 15 minutes.
- While the last stage of the chicken is cooking, cook the pasta according to pkg directions.. drain, remove chicken from oven and mix in the poppy seeds..pour over cooked pasta annd serve with a crusty garlic bun.

- Preheat oven to 425°F.
- Rinse chicken; pat dry.
- Skin chicken, if desired.
- Place chicken in a lightly greased shallow baking pan.
- Bake in 425°F oven for 15 minutes.
- Meanwhile, stir together mustard, soy sauce, and honey in a small bowl.
- Turn chicken pieces over and brush mixture generously over chicken pieces.
- Bake 20 to 25 minutes more or till chicken is tender and no longer pink, Turning pieces and brushing frequently with mustard mixture.

- Brush chicken with mustard and dredge in bread crumbs.
- Place in a 13- x 9- x 2-inch baking dish.
- Combine margarine, lemon juice, and wine (or water); drizzle 1 tablespoon over each piece of chicken and pour remainder in dish.
- Cover and bake at 350 degrees for 45 minutes.
- Remove cover, sprinkle with paprika, and bake an additional 15 minutes.
