Found this in an old issue of Runner's World Magazine and we can't get enough of it! Super easy to make and use. Use as much or little on your salmon according to your tastes.

Yield 1/4 CUP RUB

Number Of Ingredients 7

2 tablespoons dark brown sugar, packed
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon mustard powder
4 salmon fillets, skin removed (6 ounces each)
1 teaspoon olive oil

Steps:

  • Stir together the sugar, salt, pepper, cumin, and mustard in a small bowl. Press the sugar mixture evenly onto the top surface of the fish.
  • Heat the oil in a large nonstick skillet over medium heat. Cook the fish, rub side down, for 4 minutes or until the rub dissolves and darkens slightly (being careful not to burn). Flip the fish and cook for 3 minutes or until the fish is opaque.
  • This is awesome on the grill. DO NOT OVERCOOK THE FISH!

This recipe is from Prevention Magazine. I wasn't sure about the mustard but we were all pleased by the results. The original recipe called for 1 1/2 tsp of salt but I used less.

2 tablespoons dark brown sugar
1 1/4 teaspoons salt
1 teaspoon ground pepper
1/2 teaspoon ground cumin
1/4 teaspoon ground mustard
4 salmon fillets, 6 oz each
1 teaspoon olive oil

Steps:

  • Mix together sugar, salt, pepper, cumin and mustard.
  • Press mixture onto fish.
  • Heat oil in cast iron skillet over medium heat. Add fish, skin side up and cook about 4 minutes. Make sure the rub does not burn. Flip fish and cook to medium doneness, about 1 more minute.
  • Serve.

¼ cup packed light brown sugar
2 tablespoons Dijon mustard
4 (6 ounce) boneless salmon fillets
salt and ground black pepper to taste

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source; prepare the rack of a broiler pan with cooking spray.
  • Season the salmon with salt and pepper and arrange onto the prepared broiler pan. Whisk together the brown sugar and Dijon mustard in a small bowl; spoon mixture evenly onto top of salmon fillets.

Inspired by the smoke, spice and sweetness that characterize classic dry barbecue rubs, this super easy salmon recipe skips the grill, making for easy cleanup and a dinner that's doable any night of the week. While a fragrant rub like this one might overpower a milder fish, salmon stands up to strong flavors beautifully. This dish works well with summer picnic sides like coleslaw and potato salad, but it is equally good with roasted potatoes and a simple green salad. The rub is only mildly spicy as written, so add a pinch of cayenne if you'd like a little more kick.

4 (6-ounce) skinless salmon fillets
1 1/2 tablespoons dark or light brown sugar
1 teaspoon kosher salt, plus more for serving
1 teaspoon dry mustard powder
