Steps:
- Add the oil to the bottom of the pot. Swirl around for even distribution. Add potatoes making one layer in the pot. Set heat to medium high. Add enough chicken broth to cover. Simmer until all broth is gone stirring occasionally. Once the broth is down to a minimum, reduce heat to low. Let the potatoes sear a bit to gain a golden brown spot. Cut the heat and set aside until the rest of dinner is ready. Clean up tip - the bottom of the pot will look really bad. No worries, simply soak in water for a few minutes. The mess wipes right out.
