ITALIAN STYLE ZUCCHINI AND MUSHROOMS



Italian Style Zucchini and Mushrooms image

A delicious and fresh way to prepare zucchini which happens to be vegan.

Number Of Ingredients 6

Kosher salt (optional)
4 Tbsp extra virgin olive oil
1 lb, about 1 large or 2 medium sized zucchini (green and/or yellow)/courgettes
8 oz of mushrooms, sautéed in olive oil with a clove of garlic
2 medium sized tomatoes (preferably Roma) diced or about 4 oz (1/2 cup) good quality passata like Mutti
salt and black pepper (hot pepper is very good in this dish, too)

Steps:

  • Slice the zucchini in half lengthwise and then cut into slices.
  • Heat 2 Tbsp of the oil in a frying pan over medium high heat, then add the garlic and mushrooms. Sauté for about 6 to 8 minutes, sprinkle with a little salt and remove. Put the mushrooms in a plate or bowl and set aside.
  • Next, add the other 2 Tbsp of the oil and the sliced zucchini. Sauté and stir frequently, for about 10 minutes.
  • When the zucchini are just beginning to show tinges of brown, add the sautéed mushrooms. Keep the pan on the heat.
  • Now add the diced tomatoes or puree (move the zucchini to one side and turn the heat up a little to cook the tomatoes a bit before mixing them through) and continue to sauté, turning occasionally. Add salt and pepper. Taste, and add more salt if it's a bit bland. This dish is very flavorful.
  • Continue to cook for a few more minutes, then remove from heat. This makes a nice, light summer lunch, or a tasty side dish, along with some crusty bread!

3 summer squash, cut into long, thin strips
3 zucchini, cut into long, thin strips
2 onions, cut into strips
salt and ground black pepper to taste
½ cup toasted pine nuts
2 cups fresh basil leaves
½ cup grated Parmesan cheese
3 cloves garlic, chopped
¼ cup extra-virgin olive oil, or as needed
2 heirloom tomatoes, finely chopped

Steps:

  • Heat olive oil in a large skillet over medium-low heat. Add squash, zucchini, and onions; saute until slightly tender, about 10 minutes. Season with salt and pepper.
  • Combine pine nuts, salt, and pepper in a food processor; pulse until coarsely chopped. Add basil, Parmesan cheese, and garlic. Continue to process until finely ground. Slowly add in olive oil until pesto reaches the desired consistency.
  • Serve pesto over the warm vegetables. Top with tomatoes. Taste and adjust seasoning if needed.

2-3 medium zucchini (increase for more servings)
5-6 large cremini mushrooms
1/2 small sweet yellow onion
1-2 tsp olive oil
1-2 oz Monterey Jack cheese (optional, but good!)
salt & pepper to taste

Steps:

  • 1. Heat large skillet over medium to med-high heat. While it's heating, rinse zucchini and slice into quarter inch slices. Do the same with the onion and mushrooms, a little thinner for the onion.
  • 2. When pan is hot, add oil. Starting with onions, saute until they begin to get soft, 2-3 minutes.
  • 3. Next, add sliced zucchini, salt and pepper and stir. Cook for another 3-4 minutes until zucchini is noticeably softer and starting to brown on edges.
  • 4. Lastly, add sliced mushrooms and cook another 2-3 minutes. All veggies should still be slightly firm. Turn off heat, leaving skillet on burner, and top with cheese (optional) until it melts over the veggies. Serve. You can add crushed or minced garlic, garlic powder, fresh herbs...whatever you like and have on hand. Enjoy! It's simple and delish!
