This Mushroom Veggie Burger (with Black Beans) recipe is the best veggie burger you can ever make. Healthy, easy and super delicious. The best part - it's veggie burger that sticks together!

2 Portobello Mushrooms ((or 4 cups), chopped)
1/2 yellow onion (, chopped)
2 garlic cloves (, chopped)
1 can ((15 oz) Black Beans, rinsed and dried)
3/4 cup Grated Parmesan Cheese
2 eggs (, beaten)
1/2 cup Breadcrumbs
2 tablespoon Parsley
Salt and pepper
1 tablespoon Worcestershire sauce ((optional))
1 tablespoon of mixed seasoning ((optional) (I used 21 Seasoning Salute from Trader Joe, but you can use any seasoning you like))
1 tablespoon of olive oil (, and more for brushing)

Steps:

  • In a sauté pan heat up the oil
  • Add chopped onions and cook until soften, about 2 minutes
  • Add garlic and cook for another minute
  • Add mushrooms and cook for about 5 minutes until mushrooms are softened but all the moisture has evaporated
  • Once mushrooms are cooked, remove from the heat and let them cool off
  • In the meantime, rinse the black beans and spread them on the paper towel and pat them dry (you want your beans to be dry)
  • In a large mixing bowl add the beans and using fork mash most of them, leaving some of them whole
  • Add all the remaining ingredients and mix well
  • Form patties and set them aside (make sure your hands are wet as the mixture will be sticky)
  • Heat up flat griddle, brush it with olive oil
  • Place patties on a hot griddle and cook 2-3 minutes on each side
  • Serve with your favorite burger toppings

4 slices (about 1 oz each) reduced-fat Swiss cheese
1/4 cup fat-free mayonnaise
4 whole-grain hamburger buns
4 tomato slices
4 lettuce leaves
Ketchup and mustard, if desired

Steps:

  • Heat gas or charcoal grill. Place vegetable burger on grill over medium heat. Cover grill; cook 6 to 9 minutes, turning once, until thoroughly heated.
  • Divide mushrooms evenly onto patties; top with cheese. Cover grill; cook 1 to 2 minutes longer or until cheese is melted. Spread 1 tablespoon mayonnaise on each bun. Serve patties in buns with tomatoes, lettuce, ketchup and mustard.

1-1/2 pounds ground beef
1 pound sliced fresh mushrooms
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup water
6 slices Swiss cheese
6 hamburger buns, split

Steps:

  • Shape beef into six patties. In a large skillet, cook patties over medium-high heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Remove to paper towels; drain, reserving 2 tablespoons drippings. Saute mushrooms in drippings until tender. , Meanwhile, in a microwave-safe bowl, combine soup and water. Cover and microwave on high for 2-1/2 to 3-1/2 minutes or until heated through. , Return patties to the skillet. Stir in soup mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. , Top each patty with a slice of cheese. Remove from the heat; cover and let stand until cheese is melted. Serve on buns topped with mushrooms.

1 teaspoon Worcestershire sauce
1 pound ground beef
½ teaspoon monosodium glutamate (MSG)

2 tablespoons olive oil
3 (8 ounce) packages sliced fresh mushrooms
½ onion, finely chopped
4 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried oregano
⅔ cup rolled oats
¾ cup dry bread crumbs
2 eggs, beaten
½ cup freshly shredded Parmigiano-Reggiano cheese
2 tablespoons olive oil

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat; add mushrooms, onion, and garlic to the hot oil and season with salt, black pepper, and oregano. Cook and stir mushroom mixture until mushrooms have given up their juice and the juice has almost evaporated, about 10 minutes. Transfer cooked mushrooms to a cutting board and chop into small chunks with a knife.
  • Transfer mushrooms to a large bowl. Mix in rolled oats and bread crumbs; taste for salt and black pepper and add more to taste. Stir Parmigiano-Reggiano cheese into the mixture, followed by eggs. Let mixture stand for the crumbs to soak up excess liquid, about 15 minutes. (At this point you can refrigerate the mixture to cook later if desired.) Moisten hands with a little vegetable oil or water, pick up about 1/4 cup of mixture, and form into burgers.
  • Heat remaining 2 tablespoons olive oil in a skillet over medium heat and pan-fry burgers until browned and cooked through, 5 to 6 minutes.

1 teaspoon extra virgin olive oil
2 ounces mushrooms, finely chopped
1 small garlic clove, sliced
1/8 teaspoon kosher salt
4 ounces 90% lean ground sirloin
1 scallion, finely chopped
1 tablespoon soy sauce
1/4 teaspoon fresh ground black pepper
1 slice swiss cheese (1/2 ounce)
1 seeded hamburger bun, toasted
1 tablespoon Dijon mustard
2 small romaine lettuce leaves
2 slices tomatoes (1/4 inches thick)

Steps:

  • Preheat broiler with oven rack about 6 inches from direct heat source.
  • Preheat oil in a small skillet set over medium heat. Add mushrooms, garlic and salt and cook until mushrooms have released their liquid and turned golden brown, 5 minutes. Set aside to cool.
  • In a medium bowl combine sirloin, scallion, soy sauce, pepper and cooled mushrooms and mix lightly.
  • Form into a patty and place on a broiler pan.
  • Broil until cooked to desired doneness, 3 minutes on each side for medium, and top with Swiss cheese while hot.
  • Spread each side of the bun with mustard, top with lettuce, tomato and the burger.
