I've tried several online recipes for vegan stroganoff but haven't been wowed by any of them. I created this version and it is by far the best we've had. My whole family loves it! It takes amazingly like the stroganoff we remember from our omni eating days. :o)

1 (6 cup) package pasta, egg-free ribbon noodles
1/4 cup margarine, vegan (I use Earth Balance, but vegetable oil would work too)
1 onion, minced
16 ounces portabella mushrooms, sliced
2 garlic cloves, minced
2 cups vegetable broth, beef flavored (we use Frontier beef-flavored broth powder)
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce, vegan (you could leave this out, it's not critical, but does add depth)
1/4 cup flour
1 cup vegan sour cream (I use Follow Your Heart)

Steps:

  • Cook and drain pasta according to package directions.
  • Meanwhile, in a large skillet, sauté mushrooms and onions until mushrooms have given up their liquid and onions are translucent.
  • Add garlic and cook for another 1-2 minutes. Remove from heat.
  • In a medium sauce pan, bring broth to a boil. Add salt, pepper and worcestershire sauce.
  • Whisk in flour and continue cooking until sauce begins to thicken.
  • Return skillet to low heat and stir thickened sauce into mushroom mixture.
  • Stir in sour cream (don't allow it to boil) and serve immediately over hot ribbon noodles.

SEITAN AND MUSHROOM STROGANOFF (VEGAN)



Seitan and Mushroom Stroganoff (Vegan) image

This is the best vegetarian or vegan stroganoff I've tried yet. It came from Farm Sanctuary's Guide to Vegan Living and I've only slightly changed it. One way I improved it for our taste is by using Mckay's Chicken Seasoning broth instead of Vegetable Broth or water and adding 3 Tablespoons of Vegan Sour Cream. We will be making this often from now on. Hope you enjoy it!

2 tablespoons cornstarch
3 tablespoons soy sauce
1 1/3 cups vegetable broth or 1 1/3 cups water
1/2 teaspoon garlic granules
2 tablespoons tahini
2 teaspoons canola oil or 2 teaspoons olive oil
1 cup green onion
2 -3 garlic cloves, minced
3 cups sliced mushrooms or 3 cups portabella mushrooms
2 cups seitan (strips thinly sliced)
ground black pepper, to taste
egg-free pasta (one normal sized package)
3 tablespoons vegan sour cream

Steps:

  • Gravy: Stir cornstarch and soy sauce together in a 2-quart saucepan and make a thin, smooth, paste. Whisk in the broth or water and garlic granules. Cook over medium-high heat, stirring constantly until it thickens and comes to a boil. Remove from heat and beat in the tahini and vegan sour cream. Cover the saucepan and set aside.
  • Place oil in a large skillet and heat over medium-high. When the oil is hot, sauté the onion and garlic for 10 minutes.
  • Add the mushrooms and cook, stirring often, for 5 to 7 minutes.
  • Stir the seitan strips and the reserved gravy into the onions and mushrooms. Reduce heat to low and stir often, about 5 to 10 minutes, until the seitan is heated through.
  • Season the stroganoff with ground pepper. Serve at once over egg-free noodles.

1/3 cup water
2 garlic cloves, minced
1 onion, cut in half lengthwise then sliced
5 cups baby bella mushrooms
5 ounces fresh spinach, chopped
1 cup vegetable broth
1 cup almond milk
2 tablespoons white wine
1/2 teaspoon fresh ground pepper
2 tablespoons cornstarch, mixed with 1/4 c cold water
1 lb pasta, of choice

Steps:

  • Cook pasta according to directions while making sauce.
  • In large frying pan, put water, garlic and onion. Add part of vegetable broth if needed, to sauté onion for 3 minutes, stirring occasionally.
  • Add mushrooms and spinach and sauté 3 more minutes. Add remaining ingredients except cornstarch. Cook over medium heat, stirring occasionally about 12 minutes. Add cornstarch mixture and stir until thickened.
  • Serve over pasta.

8 ounces oyster mushrooms
1 tablespoon oil, or to taste
1 small onion, diced
1 tablespoon all-purpose flour
1 cup almond milk
1 tablespoon lemon juice
salt and ground black pepper to taste

Steps:

  • Shred mushrooms with a fork.
  • Heat oil in a skillet over medium-high heat. Add mushrooms and onion and fry until soft, 2 to 3 minutes. Throw in flour, stir well, and fry for another minute.
  • Stir in almond milk and lemon juice until well combined. Simmer for 7 to 8 minutes. Season with salt and pepper.

2 tablespoons grapeseed oil
2 yellow onions, cut into small dice
2 teaspoons salt
3 cloves garlic, peeled and chopped
1 tablespoon dried thyme
1 teaspoon ground black pepper
1/2 teaspoon chile flakes
1/2 cup white wine
2 tablespoons balsamic vinegar
Zest and juice of 1 lemon
2 cups dried wild mushrooms, soaked 30 minutes in 1 quart hot water
One 12-ounce package gluten-free spaghetti, preferable made from yellow lentils, cooked and set aside
1 cup vegan sour cream
2 tablespoons fresh parsley, leaves removed and chopped
2 tablespoons vegan Worcestershire sauce

Steps:

  • Warm a medium saucepan over medium-high heat. Add the grapeseed oil and heat until just wavy, but not quite to the smoking point. Add the onions, salt and 2 tablespoons water and saute until translucent, about 5 minutes.
  • Add the garlic, thyme, black pepper and chile flakes and continue to saute, stirring to thoroughly combine.
  • Add the white wine, balsamic vinegar, lemon zest and juice. Continue to stir thoroughly. Add the rehydrated wild mushrooms and half of the soaking liquid to the pan. Add the cooked pasta and turn the heat up so the sauce and pasta mixture begin to simmer. Once pasta and mushroom ragout have combined with the liquid that is in the pan, add the vegan sour cream, parsley and Worcestershire. Stir to combine and immediately serve in pasta bowls.

1/4 cup whole wheat flour (or sub your favorite GF flour)
2 Tbs nutritional yeast
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
2 cups low sodium veg broth
2 Tbs low sodium soy sauce
1/2 tsp prepared yellow mustard
1/2 tsp kitchen bouquet (optional - adds color)
16 oz EF tofu, drained
1/4 cup lemon juice
2 Tbs red wine vinegar
1 clove garlic, minced
1/4 tsp salt (or to taste)
12 oz box brown rice fusilli (or your favorite pasta)
16 oz portobello mushrooms, sliced
1 Tbs low sodium soy sauce
2 tsp vegan worcestershire sauce
salt and pepper to taste

Steps:

  • Mix all dry gravy ingredients together and pour into a small saucepan
  • Whisk over med-low heat until toasty
  • Whisk all wet gravy ingredients together and pour into pan with the dry ingredients.
  • Whisk until smooth and heat until thickened - set aside.
  • Drain tofu and add to blender along with all remaining sour cream ingredients
  • Blend until smooth - set aside
  • Prepare pasta according to package instructions - drain
  • Clean and slice mushrooms and add to a large frying pan
  • Add soy sauce and Worcestershire and stir over med heat until mushrooms have reduced in size and the liquid has evaporated.
  • Stir gravy into pan with mushrooms and mix well.
  • Add 1/2 cup (or to taste) sour cream to gravy and stir to mix well
  • Season to taste.
  • Pour over drained pasta and enjoy

1 (12 ounce) bag Boca meatless ground burger
1 (16 ounce) container vegan sour cream
1 (16 ounce) can vegetable broth
2 (4 ounce) cans mixed mushrooms (or 1 cup fresh, chopped)
1 lb campanelle pasta, uncooked
1 -2 cup water
2 teaspoons garlic powder
1/2 teaspoon cumin
1 dash paprika
salt & freshly ground black pepper

Steps:

  • In a large pot, bring the can of vegetable broth to a boil. Turn down the heat to let it simmer and add the sour cream. Stir well to combine.
  • Add the crumbles or seitan, mushrooms, seasonings and uncooked noodles. Stir well and add the water until it just covers the noodles.
  • Cover and let simmer for 20-30 minutes, stirring occasionally, until the noodles have absorbed all the liquids and are fully cooked. Season with salt and pepper.
